Fermentation with indigenous yeasts and maceration with the skins for approx. 5-10 days (30% in large oak casks, the rest in steel). The wines from the 5 different vineyards are then blended. Many vines are ungrafted as they resisted to phylloxera. Vinification and ageing: Brief maceration on the skins in steel vats, maturation in oak barriques for 18 months

During finishing in the bottle more complex and warm aromatics develop, such as slight notes of sweet spices and fruit in syrup Flavour: Rich in aromatics, fresh, mineral in the aftertaste Serving temperature ( C): 10-12 Match with: n/a Average no. bottles/year: 5,000 Grape yield per hectare tons: 6.5 Notes: Vine training system: guyot. Vinification and ageing: Fermentation in steel tanks on the lees for five months. Approximately 20% of the wine ferments and is matured in barriques with bâtonnage for eight months.
