Pork and Broccoli Stir Fry in the Slow Cooker Yield: 3-4 Servings Time: 10 minutes hands on, 4-7 hours cook time 1-1 ½ lbs. boneless pork chops ½ cup bottled stir fry sauce ½ bunch of broccoli, chopped ½ red bell pepper, sliced Place pork in the slow cooker. Pour sauce over pork. Cook on high for 4-5 hours or low for 6-7 hours. About an hour before serving, place broccoli and red pepper on top of pork in the slow cooker. Cover and let finish cooking. Pressure Cooker Version Add ½ cup chicken broth. Place pork in the pressure cooker pot and pour sauce over. Set cook time for 12 minutes. Do a quick pressure release. Add broccoli and red pepper. Set cook time for 2 minutes. Do a quick pressure release. Serving Suggestion: Rice, Dumplings Notes: Remaining broccoli can be steamed and served as a side.

Crockpot Chicken ala King Yield: 3-4 Servings Time: 5 minutes hands on, 4-8 hours cook time 2 chicken breasts 1 14 oz. can cream of chicken soup Black pepper, to taste Dash of cayenne ½ celery rib, chopped ¼ cup green pepper, chopped ¼ cup onion, chopped 5 oz. frozen peas ½ small jar pimentos Put all the ingredients in the slow cooker. Cook on high for 4-5 hours or on low for 6-8 hours. After cooking, shred chicken with a fork. Serving Suggestion: Quinoa, Roasted Green Beans Notes: Don t want to use cream of mushroom soup? Melt 4 tablespoons of butter in a pan. Whisk in 4 tablespoons of flour and cook, whisking constantly, for a minute or two until golden. Slowly whisk in ¾ cup milk and ¾ cup broth and bring to a boil, stirring frequently. Use this in place of the cream of mushroom soup in the recipe. Use remaining onion for Salsa Verde Steak. Remaining green pepper can be used as a salad topper. Roasted Green Beans Yield: 3-4 Servings Time: 5 minutes hands on, 15-20 minutes cook time 2/3 lb. green beans Olive oil Seasoned salt Toss green beans with olive oil and sprinkle with seasoned salt. Roast at 425F degrees for 15-20 minutes.

Salsa Verde Steak in the Slow Cooker Yield: 3-4 Servings Time: 10 minutes hands on, 5-8 hours cook time 1-1 ½ lbs. boneless round steak or another cut of beef ½ small can of salsa verde ¼ cup chicken broth, beef broth or water ½ tsp. chili powder ½ tsp. cumin 1 clove garlic, minced ½ onion, sliced Tortillas Cheddar cheese, shredded Lettuce, tomato, sour cream, etc., for toppings Put the steak and onions in the crockpot. Combine the salsa, broth and seasonings. Pour over the steak. Cook on high for 5-6 hours or low for 7-8 hours. Shred the meat and serve in the tortillas with the fixings. Pressure Cooker Version Put the steak and onions in the pressure cooker pot. Combine salsa, chicken broth and spices and pour over steak. Set cook time for 25 minutes. Do a quick pressure release. Serving Suggestion: Slaw with Tomato, Red Onion, and Jalapeno Notes: Remaining salsa can be frozen for future use. Use remaining onion for Chicken ala King. Slaw with Tomato, Red Onion and Jalapeno Yield: 4 Servings Time: 10 minutes hands on + chilling time ½ small head of cabbage, shredded ½ tomato, diced ¼ red onion, sliced 1 jalapeno, seeded and sliced 1/3 ½ cup mayonnaise Salt and pepper, to taste In a large bowl, combine cabbage, tomato, onion and jalapeno. Toss to combine then add mayonnaise, salt and pepper. Mix well, cover and chill for several hours in the refrigerator. Stir before serving.

Maple Apple Chicken in the Slow Cooker Yield: 2-3 Servings Time: 10 minutes hand son, 5-8 hours cook time ¾ - 1 lb. boneless chicken 2 apples, sliced ½ onion, thinly sliced ¼ cup Italian dressing ¼ cup maple syrup Put the chicken, apples and onion in the slow cooker. Stir the dressing and syrup together and pour over the other ingredients. Cook on high for 5-6 hours or low for 7-8 hours. Pressure Cooker Version Increase dressing and syrup to 1 cup each. Add all ingredients to the pressure cooker pot. Set cook time for 18 minutes. Do a quick pressure release. Serving Suggestion: Roasted Zucchini, Butternut Squash Skillet Notes: Use remaining onion for Pulled Pork Sandwiches. Roasted Zucchini Yield: 3 Servings Time: 10 minutes hands on, 15-20 minutes cook time 2 zucchini Olive oil Seasoned salt Slice the zucchini and lay it on a baking sheet. Brush with olive oil and sprinkle with seasoned salt. Roast at 425F degrees for 15-20 minutes.

Butternut Squash Skillet Yield: 4 Servings Time: 15 minutes hands on, 30 minutes cook time ½ onion, diced 2 cloves garlic, crushed 2 Tbsp. olive oil 1 butternut squash, cut into bite sized pieces ¼ tsp. cinnamon ½ tsp. ginger 1 tsp. thyme Salt and pepper, to taste In an oven proof skillet, cook the garlic and onion in olive oil. Stir in the squash and other ingredients. Spread the squash out in an even layer in the skillet. Bake in the oven at 425 degrees for about 30 minutes or until the squash is fork tender.

Ham Steak with Loaded Cheesy Potato Casserole Yield: 3 Servings Time: 10 minutes hands on, 5-6 hours cook time 14 oz. O'Brien Potatoes, thawed ½ can cream of chicken or cheddar soup ¾ cup sour cream 1 cup shredded cheddar 1 ½ oz. Real Bacon Bits ¼ - 1/3 cup French fried onions 1 lb. ham steak Stir all ingredients together, except French fried onions and ham steak. Put into greased slow cooker. Top with onions. Wrap ham steak in foil and place on top of potatoes. Cook on low in slow cooker 5-6 hours. Serving Suggestion: Salad Notes: Don t want to use cream of mushroom soup? Melt 2 tablespoons of butter in a pan. Whisk in 2 tablespoons of flour and cook, whisking constantly, for a minute or two until golden. Slowly whisk in 6 Tbsp. milk and 6 Tbsp. broth and bring to a boil, stirring frequently. Use this in place of the cream soup in the recipe. Remaining soup can be frozen for future use.

Slow Cooker Pulled Pork Sandwiches Yield: 3-4 Servings Time: 10 minutes hands on, 10-16 hours cook time 2 lbs. pork shoulder or beef or pork roast 1 tsp. salt ½ onion, chopped fine 1 cup ketchup or BBQ sauce 4 oz. taco sauce (not salsa) 1 Tbsp. brown sugar 1 Tbsp. vinegar 1 Tbsp. Worcestershire sauce ½ tsp. liquid smoke ½ tsp. oregano ½ tsp. black pepper 1 ½ tsp. dry mustard ½ tsp. garlic powder 3-4 sandwich rolls The night before, put the meat and salt in the crockpot. Cook on low 8-10 hours. The next morning, drain and shred the meat. It will be very tender. Put the shredded meat back in the crockpot and mix in all the other ingredients. Cook another 2-6 hours on low, watching so it doesn t burn. Serve in sandwich rolls. Pressure Cooker Version Add pork, salt, and 1 can chicken broth to the pressure cooker. Set cook time for 90 minutes. Do a quick pressure release. Drain and shred meat. Return pork to the pressure cooker pot and add remaining ingredients. Set cook time for 15 minutes and do a quick pressure release. Serving Suggestion: Ranch Veggie Salad Notes: Use remaining onion for Maple Apple Chicken.

Ranch Veggie Salad Yield: 4-5 Servings Time: 10 minutes hands on 1 bunch broccoli, chopped 1 stalk celery, chopped 1-2 carrots, chopped 1 cup Marzetti Ranch Dip Stir the veggies together with the ranch dip. Chill until serving.

S mores Pie Yield: 8 Servings Time: 30 minutes hands on 1 graham cracker crust 1 box chocolate cook and serve pudding ¼ cup Nutella ½ cup marshmallow cream ¾ cup mini marshmallows Prepare the pudding according to package directions. While it cools, spread the marshmallow cream in the bottom of the pie crust. Spread the Nutella over the top of the marshmallow cream. Pour the chocolate pudding into the pie crust. Allow to cool for about 10 minutes. Sprinkle the mini marshmallows over the top so the pudding is covered. Put the pie under the broiler just until the marshmallows toast. Cool the pie and then cover and refrigerate.
