Chardonnay Barrique WINE ID: Wine Brand: Chardonnay Variety: Chardonnay Vintage: 2012 Alcohol: 13% Colour: clear, gold-yellow Aromas: Complex with shades of grapefruit notes and vanilla aroma Taste: Full body, pleasant freshness, elegant aftertaste and expressed vanilla aroma VINEYARD SPECIFICS: Locality: Markova Reka Altitude: 450 m Yield: 8 t/ha Annual Production: 5,000 bottles The grapes of Chardonnay Barrique are handpicked during early September. On arriving at the winery, the grapes are destemmed and settle over a two day period to yield a brilliantly clear juice. The juice is fermented at 12-14ºC, with a combination of different yeast to produce a complex wine. The malolactic fermentation is completed. After fermentation the wine is placed in wooden barrels where it matures for 12 months. SERVING: It is served at temperature from 8 12ºC, as an aperitif, with meals of fish and white meat, as well as with desserts. STORAGE: Store in a cold place, horizontally positioned.
Syrah-Cabernet Barrique WINE ID: Wine Brand: Syrah-Cabernet Variety: Syrah 50%, Cabernet Sauvignon 50% Vintage: 2011 Alcohol: 13% Colour: Intense ruby red Aromas: Ripe fruits and spices with aroma of vanilla and dark chocolate Taste: Structural body with soft tannins and pronounced woody aromas VINEYARDS SPECIFICS: Locality: Markova Reka Altitude: 550 m Annual Production: 5,000 bottles These two noble grape varietals grown on the southern slopes of Vodno, give a wine of unique style. The structure of Cabernet and the abundance of the fruity and spicy aromas of Syrah, make a wine exquisitely rich, full, tender, attractive, a real temptation for the lips. The grapes for this wine come from our own vineyards where the actual blending takes place. After removing stems, whole grape berries are subjected to cool maceration of 24 to 48 hours, to enrich the juice with aromatic compounds. The fermentation takes place in stainless steel vinificators, by using selected yeasts at temperature of 26-28ºC. As the fermentation reaches its end, each tank is tested twice a day to monitor the balance of tannins and depending on the tank, this is achievable between 8 to 10 days while on skins. Malolactic fermentation follows the decanting stage. The wine is becoming softer and more harmonious, richer in taste, aroma and even in colour. The wine matures in oak barrels for 12 months. SERVING: It is served at temperature from 16-18 C, with beef, lamb and duck. STORAGE: Store in a cold place, horizontally positioned.

The juice settles for 2 days before racking to stainless steel tanks where it undergoes a cold fermentation for 4 weeks. The wine then is transferred to wooden barrels where it matures for 12 months. SERVING: It is served at temperature from 8 12ºC, pair with fish and seafood and as an aperitif. STORAGE: Store in a cold place, horizontally positioned.

Extraction of colour and flavour is automated by pumping over up to four to six times a day. Temperature is controlled and can not exceed 28⁰C. As the fermentation reaches its end, each tank is tasted twice in a day to monitor the balance of tannins. Depending on the tank, this is achievable between 13 to 18 days while still on skins. Malolactic fermentation follows the decanting stage. The wine is becoming softer and more harmonious, and richer in taste. This wine is aged for two year in new Slovenian Oak, one year in stainless still tank, and one year in bottle. Cuvee Barrique 2010 is wine with fruity aromas reminiscent of plum jam, overripe fruit and dark cherry. It s characteristic bouquet of ripe fruits is complemented by the aroma of vanilla and dark chocolate. It is characterized with full body and long finish. The wine has a very good acidity balance which gives to it necessery freshness so it can be consumed with enjoyment. The rich extract and soft tannins make the wine powerful and harmonious. SERVING: It is served at temperature from 16-18 C, with beef, lamb and duck. STORAGE: Horizontally positioned, in a cold place.

Extraction of colour and flavour is automated by pumping over up to four to six times a day. Temperature is controlled and must not exceed 29⁰C. The possibility of adding oxygen has a stabilizing effect on the colouring substances and furthermore assures a smooth and stable polyphenol content. As the fermentation reaches its end, each tank is tasted twice in a day to monitor the balance of tannins. Depending on the tank, this is achievable between 13 to 18 days while still on skins. Such new wines are settling, gross lees racked off and then undergo malolactic fermentation in stainless steel tanks. SERVING Best served at temperature from 18-20 C with strong and spiced food, roast pork, lamb, duck and traditional Macedonian dish called sarma. Decanting 20 minutes. Before blending, each varietal is vinified separately. They are then macerated for 8 to 10 days in stainless steel tanks with pumping over, four to six times a day to increase the surface contact between the juice and the skins at a temperature of 26-28 C. After separation from the must, refining, and alcoholic fermentation, the wine remains on the lees until the end of malolactic fermentation. Philosophy of fresh, fruit-forward wines, the Vranec, Cabernet Sauvignon and Merlot is not to be in touch with any oak. This allows the wine to retain its pure fruit feature. Final mixing comes after alcoholic and malolactic fermentation. The blend is made from grapes that are left on the vine longer than usual, allowing the juice to develop greater concentration and complexity from the extended hang time. The grapes are hand picked and placed in crates in the early morning hours of early October, while they are still fresh in order to preserve their fruity aroma. After removing stems, fermentation takes place at up to 30ºC during which time the skins are pumped over 2-3 times till the end of fermentation. The wine remains on skins for 7-14 days to extract fine grape tannins. After this process of maceration, the wine is drained off skins and gently pressed. Malolactic fermentation comes after the decanting stage. The wine is becoming softer and more harmonious, richer in taste, aroma and even in colour. The wine matures in stainless steel tanks. SERVING: It is served at temperature from 16-18ºC, paired with fermented cheese, light meals of red meat and desserts. STORAGE: Store in a cold place, horizontally positioned.

Red wine with intense ruby red colour and fruity aromas reminiscent of plum and sour cherry. It is characterized with soft tannins, full body and long finish. The tannins give that extended effect recognized as aromas of dark chocolate and tobacco. This wine has a very good acidity balance which gives the necessary freshness. SERVING: Best when served at temperature of 18-20ºC, with traditional Macedonian dishes, red meat dishes and roast meat. STORAGE: Horizontally positioned, in a cold place.
Rose WINE ID: Wine Brand: Rose Variety: Syrah Vintage: 2012 Alcohol: 14% Colour: Pink colour Aromas: Rich fruitiness with typical aroma of raspberry and cherry Taste: Extremely dry, refreshing, with good structure and long aftertaste VINEYARDS SPECIFICS: Altitude: 450 m Yield: 8 t/ha Annual Production: 30,000 bottles The fully ripened Syrah is harvested during chilly mornings and tank pressed as soon as the grapes arrive at the winery to minimize skin contact and ensure vibrant and soft fruit flavours. The natural pink colour is a result of the rapid tank press process. After clarification, the grape juice is cool fermented in stainless steel tanks with a selected yeast strain at 12-15 C to enhance varietals fruit characters. Final wine is clarified, stabilized and filtered before bottling. SERVING: It can be served with summer salads, seafood, meat or different types of cheese and pastas. Best when chilled at temperature from 10 C to 12 C. STORAGE: Store in a cold place, horizontally positioned.

The distillation runs slowly in order to achieve better quality. Only the middle fraction (the heart ) is separated and matured for four years in wooden barrels. This maturation ensures retention of the natural smell of fruit and adds discrete scent of oak. This product is very potable, smooth, and gives a feeling of warmness and harmony.

Chardonnay gives the needed body and complex aromas while the acidity of Riesling adds to its freshness and good balance. It is served at temperature of 8-10ºC. Excellent when combined with fish, pasta or white meat.

The complexity is best expressed when these two varieties are blended. Vranec gives that intensive ruby red colour and fullness, while the elegance, fruity aromas and its smoothness come from Merlot. This red cuvée is produced by standard red wine technology. It is served at temperature from 18-20ºC with diverse types of red meat, traditional Macedonian cuisine and chocolate desserts.
Macedonian White WINE ID: Wine Brand: Macedonian White Variety: Semillon, Zupljanka and Smederevka Alcohol: 11.5% Colour: Light yellowish Aromas: Fruity-flowery Taste: Smooth and refreshing VINEYARDS SPECIFICS: Yield: 10 t/ha Annual Production: 500,000 litres Packaging: Bag-in-Box (3 litres), Magnum bottle (1.5 litres) and 1 litre bottle Macedonian White is a quality dry white wine produced by blending different white varieties of grapes. Grapes are crushed and pressed with care to avoid excessive skin contact. The grape juice is clarified and fermented with selected yeast strains at cool temperature. Pleasant when consumed alone or with poultry, salads and sea food. Best when served at temperature of 10-12ºC.
