ALPE PRAGAS ALPE PRAGAS FRUIT DELIGHTS Origin. Where experience meets innovation and goodness meets refinement, Stefan Gruber and his wooden spoon certainly have something to do with it. I have always been a son of nature. While growing in my parents farm in Braies di Fuori, I was always running through meadows. I didn t have a great feeling with cows. As a teenager, I much more enjoyed to handle fruit than milk and hay. My passion was all for strawberries, raspberries and currants, and how to preserve them. I dreamed of making the most exclusive and refined products from the highest quality fruit. This was the start of a long-lasting love, and a clear vision. 1978: Stefan Gruber in his parents farm in Braies. This is how it all started. For fruit lover Stefan Gruber, the most important thing has always been to only produce excellent quality. And therefore, he soon started to grow the best fruit himself. In 1995, the first strawberries, raspberries and currants were grown in the family fields of Braies di Fuori. As soon as they reached the right ripeness, they were harvested by hand with the utmost care and attention. As soon as harvested, they were immediately taken to his mother s kitchen, where they were cooked. Stefan Gruber spent days racking his brains for the best ingredients, the best fruit content, and the most delicate results. All this was decided by trial and error, by continuously tasting and rejecting, times and times again. Finally, the perfect recipe was found, and the product was ready for the market. The only thing missing was the best packaging: with the help of the professionals of the sector, Stefan Gruber came up with a captivating look that has since successfully represented the handmade fresh fruit preserves of South Tyrol: Alpe Pragas. 4
The spirit of time. Today, after 20 years of production and sales, Stefan Gruber can smile about some failed attempts, but as the saying goes: Nothing ventured nothing gained. His state of the art production plant in the beautiful Braies Valley, near Lake Braies, is the proud result of his capable entrepreneurship, of personal dedication and team work. 5

Foto: Ralph Mittermaier The Dolomites, Lake Braies, a territory that farmers have moulded with their own hands: at Alpe Pragas we recognise the value of nature and we are grateful for what it gives us. In the surrounding fields grow plants treated with care and love, and which reward us with top quality berries. The fresh mountain air ensures slow ripening, and protects the plants from diseases, for at this altitude there are not many parasites. Therefore, the use of pesticides can be reduced. The result is integrated farming that protects the environments. 6
ALPE PRAGAS FRUIT DELIGHTS... it gives us back fruit, and flavour. Thanks to their position 1,200 m above sea level, our fruits have all the time they need to develop their full flavour under the sun. And with a minimum fruit content of 70 %, Alpe Pragas jars contain the highest possible amount of fruit. Lightly heating the preserves during production, a process followed by extremely quick cooling, also helps to keep natural flavours and precious vitamins intact. We only add a few ingredients: a little beet sugar or agave syrup, the juice of lemons ripened under the Sicilian sun, and a little apple pectin. That s all! The ingredients of our new organic range all come from strictly controlled organic farms. Our extremely high quality requirements are also met by Alpe Pragas partners, who supply fruit that in order to ripen require warmer temperatures. 7

When the fruits reach the right size, they are delicately harvested by hand. From harvesting to the glass jar, each and every stage undergoes a strictly controlled production process. This is guaranteed by a staff of experienced and skilled individuals, for whom quality has absolute priority on everything else. 8
ALPE PRAGAS FRUIT DELIGHTS As delicately as possible : this is our motto when producing our fruit preserves. Only in this way, can natural flavours and vitamins be preserved. This is why our fruit is vacuum cooked in boilers at a temperature of approximately 65 C, after which the preserve is transferred to glass jars and pasteurised, so that it will keep for 2 years. The production process is followed by cooling, which itself contributes to naturally preserve the precious ingredients. straight to the glass jar. Delightful, natural, genuine. These are the words that thanks to the five simple principles below can describe Alpe Pragas preserves: We only use top quality fruit and ingredients, from our own farm or trusted partners. Each jar contains at least 70% fruit. Our products do not contain artificial additives, such as artificial flavours, colour additives and preservatives, flavour enhancers, or similar. Thanks to the delicate production process, all the precious properties remain unaltered. The respectful and sustainable use of resources, such as water, air, energy and soil, is an essential component. In this way, the unmistakeable taste of strawberries, raspberries, currants, cherries, gooseberries, blackberries, cranberries, plums, apricots, apples, pears, plum quinces and much more, reaches the glass jar intact, to spoil the palates of many satisfied customers. 9
