There should be no evidence of damage or mishandling. Physical Standards The product in each carton should consist only of the single specified species and not mixed. The fillets shall have a uniform colour and be free from bruising (-20mm max 1 allowable in 20 fillets) or blood discolouration. Fillets should exclude fins and abdominal cavity lining. Fillets should be single glazed for protection but the glaze level should not exceed 10% by weight and be uniform throughout the batch. The flesh should be firm and not watery. The shape of the fillets should be as uniform as possible. Product to be free from foreign bodies and extraneous matter. Odour/Flavour There should be no off odours, taints or flavours and no smell of ammonia. The flavour should be characteristic of the product when cooked.
