The chimney is available in two sizes: with a 125 mm inner pipe diameter and with a 150 mm inner pipe diameter. The chimney kit includes everything you need for installation. SMOKING TIPS Different ingredients require different temperatures and cooking times. Thermometer on the smoker lid helps you to keep track of the temperature. The lid also has a discharge valve with which the intensity of the smoke can easily be adjusted. Through experience you will find the smokiness of your liking, remember to adjust the valve subtly. When preparing fish, the temperature is between 70-90 C depending on the fish. To do justice to the subtlety and freshness of the fish, seasoning should be done only just before smoking. When cooking meat, the temperature is between 80-110 C. Season on pan after sautéing by rubbing spices on cooled meat and let rest for a moment. Season marinated ingredients with salt after smoking. Suitable temperature is 65-100 C. Smoked whitefish with rosemary 4 portions leek-potato mash 4 portions 800 g whitefish fillet (á 200 g) 2 tbsp butter salt black pepper from mill Choose boneless whitefish fillets that are as equal in size as possible to ensure that the end result is even and succulent. Season fillets with salt and black pepper on both sides. Sprinkle ground almonds on the belly side. Brush the belly side with melted butter and place rosemary sprigs on top. 400 g boiled potatoes 1 leek 2 tbsp butter 2 tbsp wheat flour Peel and slice leek. Melt butter in kettle, add leek slices, stir but let not brown. Add wheat flour, stir and add hot cooking cream little at a time while continuously stirring. Season with salt and nutmeg. Let simmer under lid for 15 minutes, stir once in a while. 2 tbsp ground almonds 4 fresh rosemary sprigs alder chips Place whitefish fillet skin side down in Kota Smoker and smoke with a good smoke for 15 minutes. With large spatula, place smoked fillets carefully on aluminium foil. Wrap fillets in foil. Let cook in smoker another 10 minutes and serve in foil wrapping. Serve with leek-potato mash, rye bread and butter. 3 dl cooking cream salt 1/2 dl finely chopped dill 1/2 tsp finely chopped nutmeg Add diced potatoes. Season with finely chopped dill and let simmer for 5 minutes. Check taste and add salt if needed. 14 15
