Steak Burgers 2½ lbs. ground beef 3 eggs 1 cup Italian bread crumbs 2 tsp. lemon pepper seasoning 1 tsp. Lawry s seasoned salt ¼ tsp. liquid smoke Steak Burgers with Red Wine Onions, Potato Wedges, Tossed Salad Yield: 10 Servings Time: 5 Minutes Hands On, 25 Minutes Cook Time Combine all the ingredients until well blended. Pat out burgers. Cook on the grill, an indoor grill or in a skillet. Red Wine Onions 1 onion, chopped or sliced 3 garlic cloves, crushed about 1 cup red wine Cook the onion and garlic till soft, using the same skillet you used to cook the burgers, if cooked in a skillet. Pour in about a cup or so of red wine and cook over medium heat, till the wine reduces. Serve the onions over the burgers. Potato Wedges 1½ tsp kosher or sea salt ½ tsp. black pepper ½ tsp. garlic powder ½ tsp. onion powder ½ tsp. Smoked paprika 3-4 potatoes, scrubbed and cut into wedges Olive oil Generously drizzle the potato wedges with olive oil. Sprinkle all the seasoning on the potatoes and toss to coat them in spices and oil. Pour onto a large baking sheet that has been brushed with olive oil and bake at 425 degrees for 35-40 minutes or until the potatoes are tender. Serving Suggestion: Potato Wedges and Tossed Salad

Complete BBQ Dinner with Watermelon Slices Yield: 6-8 Servings Time: 15 Minutes Hands On, 5-8 Hours Cook Time 2 lbs. boneless chicken breasts barbecue sauce 2 potatoes, chopped cheddar cheese, shredded onion, diced salt and pepper a bit of olive oil frozen corn on the cob plenty of foil Place the chicken in the bottom of the crockpot. Pour on some barbecue sauce. You don t want to add too much, because the goal is to have as little liquid as possible in the bottom of the pot. Stir the potatoes, a bit of olive oil, onion, cheese and salt and pepper together in a bowl. Make a large packet out of foil and wrap the potatoes in it, loosely. Wrap each corn in foil. Place the potato packet on top of the chicken. Add the corn. Cook on high for 5-6 hours or low for 7-8. Serving Suggestion: Watermelon Slices

Garlic Lime Shrimp, Steamed Broccoli, Angel Hair Pasta Yield: 6-8 Servings Total Time Needed: 15 Minutes 3 Tbs. butter 2-3 cloves garlic, crushed 2-3 lbs shrimp, peeled and deveined Old Bay Seasoning ¼ cup lime juice Melt the butter in a large skillet. Add the garlic and cook for a minute or two. Season the shrimp with Old Bay Seasoning on both sides. Add to the skillet. Cook for several minutes. Flip and cook the other side for a couple minutes. Pour the lime juice into the skillet. Cover and cook the last few minutes until the shrimp are cooked through and pink. Serving Suggestion: Steamed Broccoli and Angel Hair Pasta

Hawaiian Grilled Chicken, Summer Corn Salad, Cantaloupe Slices Yield: 6-8 Servings Time: 15 Minutes Hands On, 15 Minutes Cook Time (allow 30 minutes to overnight for additional time to marinate) 6 boneless chicken breasts (or 1 bag of chicken tenders) 2 cups pineapple juice 2 Tbs. worcestershire sauce 2 Tbs. soy sauce 2 Tbs. brown sugar Combine all the ingredients, except the chicken. Pour the marinade over the chicken and refrigerate. The longer the chicken marinates, the better. Marinate 30 minutes to overnight. Cook them on the grill. Summer Corn Salad For the Salad 32 oz. frozen corn, thawed 1 cucumber, peeled and chopped 1 small green pepper, chopped 4 Roma tomatoes, chopped ½ large white onion, chopped 1 jalapeño, seeds removed, diced ¼ cup fresh basil, chopped ¼ cup fresh parsley, chopped For the dressing 2 tsp. dry mustard ¼ tsp. black pepper 3 cloves garlic, crushed 2 Tbsp. white wine vinegar ⅓ cup olive oil Salt to taste Stir all the veggies together in a large bowl. Whisk the dressing ingredients together and pour over veggies. Toss. Serving Suggestion: Cantaloupe Slices

African Pulled Beef Sandwiches and Sweet Potato Fries Yield: 8-10 Servings Time: 10 Minutes Hands On, 5-8 Hours Cook Time or 45 Minutes in Pressure Cooker Pulled Beef 2-3 lb. chuck roast 3-5 cloves garlic, 1 whole and peeled, others crushed 1 tsp. cumin ½ tsp. ground red pepper (cayenne) ¼ tsp. allspice 1 onion, diced 1 jalapeno, seeds removed and diced 15 oz can petite diced tomatoes Cut one garlic clove in half and rub roast all over with it. Place roast and whole garlic clove in slow cooker. Add remaining ingredients to the slow cooker, sprinkling spices directly on meat. Cover and cook on high 5-6 hours or low 7-8 hours. Remove meat from crock and shred with a fork. Return meat to the crock and stir to combine with juices from cooking the meat. Sauce 10 oz Greek yogurt 1 large cucumber, peeled and diced ½ tsp. dried mint Pita bread Stir yogurt, cucumber and mint together. Serve meat in pita bread with yogurt sauce. Pulled Beef Pressure Cooker In addition to all ingredients listed for slow cooker, add 1/2 cup beef broth. Add all ingredients to the pressure cooker pot. Set for 45 minutes cook time. Do a quick pressure release.

Sweet Potato Fries ½ -1 sweet potato/person olive oil Kosher salt black pepper Wash the sweet potatoes and cut them into sticks. Put them in a large bowl and drizzle with olive oil. Sprinkle with salt and pepper and toss to coat. Place them on a greased baking sheet and bake at 400 degrees for about 30 minutes, or until the potatoes are tender. Serving Suggestion: Sweet Potato Fries

Grilled Sandwiches with Potato Chips and Fresh Fruit Yield: 6-8 Servings Total Time Needed: 20 Minutes ½ lb. deli ham ½ lb. deli turkey ½ lb. deli roast beef ½ lb. provolone cheese Lettuce Tomato Onion Bread dense bread that can hold up on the grill such as sourdough or oat Mayonnaise and mustard - optional Set out ham, turkey, roast beef, provolone cheese, lettuce and tomato. Grill slices of onions by cutting them thick, brush with olive oil and lay them on the grill. Flip them carefully so they don t fall under the grid. Brush olive oil on the outside of the bread and assemble the sandwiches. Grill each side to desired doneness and until cheese is melted. Serve warm. Serving Suggestion: Potato Chips and Fresh Fruit

Pound Cake with Fresh Berries and Whipped Cream Yield: 10 or more servings Time: 15 Minutes Hands On, 45 Minutes Cook Time 1 box white or yellow cake mix 1 box vanilla pudding mix 1¼ cup milk 4 eggs 2 tsp. vanilla 1 can whipped cream Mix first five ingredients together with an electric mixer until well blended. Pour into well-greased bundt pan. I like to spray mine with Baker's Joy cooking spray that also has flour in it. Bake at 350 degrees for 45 minutes or until a toothpick comes out clean. Cool on the counter still in the pan for 10 minutes. Remove from pan and cool completely. Serving Suggestion: Whipped Cream and Fresh Blueberries and Strawberries
