Mother s Day Mother s day is a little bit difficult to decide what to do if your mother or a member of your family has diabetes, the go to gift ideas of chocolate and flowers need extra consideration due to the sugar content of our favourite brands such as Cadbury and Galaxy means thinking outside the box for gifts and breakfast in bed. We have put together a couple of ideas including diabetes friendly pancakes, egg muffins that your mum will love the look and taste of and a chocolate fondue with a twist. Very Yummy Scrummy Vanilla Pancakes Makes 6 thin pancakes 130g light spelt flour 230ml unsweetened almond milk 1tbsp. agave syrup 1 tsp. vanilla essence 2 tbsp. sunflower oil Pinch of salt Coconut oil for the frying pan Preparation Method Whose mum doesn t love pancakes. This recipe is a lowercarb vegan recipe. Using almond milk helps to keep the acidity in your body lower preventing illness and inflammation. Enjoy these pancakes with lemon or fresh berries such as blueberries and raspberries. Or on their own, the vanilla flavour is delish! Measure and sift the spelt flour into a large bowl adding the salt. Into a smaller bowl, combine all of the wet ingredients. Slowly add the wet ingredients into the bowl with the flour and salt, careful not to get a lumpy mixture. Place the mixture in the fridge for 10 minutes to let the mixture settle. In an non stick frying pan over a medium heat add 1/2 tsp. of coconut oil. Once the oil has melted, add a ladle of batter moving the pan around so that the mixture spreads out. 3

Mother s Day Chocolate Fondue Serves 5 1 green apple, peeled and cored 10 grapes 2 kiwi fruits, peeled 100g raw chocolate (85% raw cocao) Preparation Method Cut the fruit into pieces and add a variety to the kebab sticks or sticks that accompanied the fondue set. Break the chocolate into chunks and place in a pyrex bowl, in a saucepan boil some water. Carefully place the pyrex bowl into the saucepan. Chocolate gets a relatively bad name when it comes to diabetes, however a recent study published in the Journal of Diabetic Medicine suggested high polyphenol chocolate (such as the one used in this recipe) has a beneficial impact on cholesterol levels without affecting weight, inflammatory markers, insulin resistance or glycemic control. With the addition of low carb fruit this is an excellent Mother s Day treat. Stir the chocolate until it is all melted and transfer into a fondue if you have one. Breakfast in Bed Muffins Makes 6 muffins 6 eggs 75ml semi-skimmed milk 1 red pepper 1 red onion 50g mushrooms 100g baby spinach leaves 1 tbsp. extra virgin olive oil Salt and freshly ground black pepper For this recipe you can add all of your mum s favourite omelette ingredients and cook them in silicone muffin cups (they even come in different shapes) to make them into wonderful lowcarb breakfast cakes! Variations could include: Ham, chorizo, sausage, cheese, chilli, leeks, sweet corn or olives. Preparation Method Heat the oven to Gas Mark 4/350 F/180 C. In a bowl, scramble the 6 eggs adding the milk, salt and pepper. Chop all of the vegetables relatively small so that you don't end up with big chunks of veg in your muffins. In a frying pan over a medium heat, fry the vegetables until soft. When they are ready, distribute the vegetables evenly into the muffin cases. 6
