Olive Oil Production To produce award winning products, the oils are extracted with state of the art modern technology to create a natural, clean product to satisfy the most discerning markets. The best oils can only be produced from the best freshest fruit. To ensure efficient, timely harvesting, EV Olives have their own mobile harvesting equipment. This allows for the harvesting of fruit from 35 regional growers, to be transported freshly picked to the modern processing facility at Markwood in the shortest possible time. Upon arrival the fruit is milled and the oil extracted with a modern all stainless steel centrifugal extraction plant processing 1,500kg of fruit per hour. The oil is immediately sealed in stainless steel bulk tanks excluding all contact with air and light to maintain freshness and quality. EV Olives supplies customized packaging to suit all market requirements. This includes bottles, cans, modern bag-in-box casks or bulk containers, our labels or custom designs. The packaging operations are semi-automatic allowing the flexibility to a range of customer requirements from small order lots to export container consignments.

Extra Virgin oils meet the International Olive Council (IOC) standards, certified by the Australian Government Testing Laboratories, NSW Department of Agriculture. Products are GM Free. The Technical Stuff Extra Virgin Olive Oils must have acidity (Free Fatty Acids) below 0.8%, test show EV Olives oils generally have less than 0.3% acidity. The peroxide index must be below 20, EV Olives oils generally show a peroxide index of 5 to 7. A low peroxide index is a measure of the stability of the oil and indicates a long shelf life. Low acidity and peroxide are quality indicators suggesting high levels of natural anti-oxidants and thereby strong health giving benefits as well as fresh delightful tastes. Health Giving Benefits Good quality extra virgin olive oil is mono-unsaturated fat, a good fat that your body needs. It promotes the reduction of LDL (bad) cholesterol and increases HDL (good) cholesterol. It is high in natural anti-oxidants. Many published studies have shown evidence of improved health through reduced blood pressure, lowering of blood LDL cholesterol, guarding against many cancers etc. The better the oil, the higher the health giving benefits.
