The Origin and Legend of Tea According to legend, on a day five thousand years ago, Shénnóng Shì travelled up a mountain to gather medicinal herbs. Tired and thirsty, he stopped by a tree to boil water to drink. At the same time, a gust of wind blew over, causing several leaves to fall into the pot; as a result, his water turned tan. He took a sip - at first, it tasted bitter, but the aftertaste was sweet and delicious. Not only did the water quench his thirst, it also cured his tiredness and brought up his spirits. Shénnóng Shì thought the leaves were a type of medicine, so he started looking for them and teaching others how to cook them, allowing people to become healthier. In Yunnan, the ancients once planted a tea tree. This tree now estimates to be about 3200 years old! Therefore, we can say that our ancestors started drinking tea at that time. 1100 years ago, Lù Yǔ of the Tang Dynasty collected all the different cultures of tea. Using this, he completed the Classic of Tea, the world's first book of tea introductions. We refer to him as the Sage of Tea. Ever since the Tang Dynasty, tea has slowly expanded to other countries, first to Japan, then to Europe, and it has become the world's popular drink.
"Eating" Tea and "Drinking" Tea During the ancient times, tea was first used as medicine, then as a vegetable for people to cook into soup or porridge, and finally becoming a drink. Below are some popular ways of drinking tea: 1. Máo chá (Spiced Tea) Before the Tang Dynasty Roasted tea cakes would be ground into tea powder. Pào chá (Brewing Tea) Ming & Qing Dynasty (Estimate 400 years ago) For both cooked tea and whisking tea, the tea cake must first be ground into tea powder, however brewing tea is putting separated tea leaves into a teacup or teapot and using hot water to brew it. The Types of Tea 1. Classification by Tea Trees: Arbor-Type Tea These can grow to be about 50 to 100 ft tall; tea leaves are harvested by people climbing onto the trees. Shrub-Type Tea For the shorter tea trees, tea leaves can be harvested by people standing next to them. 2.Classification by Degree of Oxidation: Tea can be roughly split into 3 different types. After brewing the tea leaves, the color of the teas will be different. Tea Non-Oxidized Partially Oxidized 發酵 Fully Oxidized Green Tea Oolong Tea Black Tea 3. Scented Tea:Adding the fragrance of flowers with tea leaves can create different types of scented tea, such as jasmine tea, osmanthus tea, rose tea, and more.
Unique Teas of Taiwan Taiwan has many delicious teas, mostly are partially oxidized teas. 聞 Bāo Zhǒng Tea Has a strong floral scent; legend says that if one drinks tea before taking a test, he will pass the test. Dòng Dǐng Tea Grows on the hillside, has a sweet taste. High-Mountain Tea Grows in the tea gardens located in the mountains, does not have a bitter taste when drinking. it How to Make Tea? Learning the Tea Set When brewing tea, people will use many utensils which make up a "tea set ": 1. Tea Scoop - Used to pick up tea leaves. Tea Pincers - Used to pick up used tea leaves or the teacup. Tea Pick - Prevents spout blockage. 2. Tea Can- Place to put tea leaves. 3. Tea Strainer - Filters out tea leaves from the tea itself. 4. Teacup for Smelling - Smell the fragrance of tea. 5. Serving Teapot - Place to put finished brewed tea, used to pour into teacups. 6. Teapot - Best known as Yixing Clay teapot. 7. Teacup - It is better if the inside of the cup is light-colored, so users can admire the color of the tea. 8. Tea Pet Small cute clay figure placed on the tea tray. 9. Tea Boat - Place to put the teapot. 10. Gài Bēi - A teacup with a lid. 11. Tea Saucer - Place to put the cups. 12. Tea Cloth - Used to wipe water. 13. Teapot Brush - Used to wash tea set. 14. Brewing Tea - How to Brew Oolong Tea 1. Use hot water to heat up the teapot. 2. Wait for about 30 seconds; after, pour out the water. 3. Put in the tea leaves. 4. Pour in hot water. 5. Wait for about 1 minute. 6. Pour the tea into the serving teapot. 7. Pour the tea into the teacup for smelling. 8.Pour the tea into the teacup. 9. Drink the tea!
