HOSPITALITY & CATERING Hospitality & Catering is based at The Manor House Restaurant, next to our Corby campus. The restaurant is open to the public and provides a first-class facility to develop your skills and gain valuable hands-on experience in a supervised setting. Our experienced lecturers will provide you with all the key skills and training that you need, working in fully equipped professional kitchens including a specialist patisserie kitchen. During the course you will have the opportunity to participate in regional and national competitions and gain work experience at prestigious outdoor events such as concerts and sporting events. ENTRY REQUIREMENTS 1 year: Hospitality & Catering at Level 1. 2 years: 3 GCSEs grades A*-G or 9-1 including English and maths and a keen interest in catering. Other relevant levels of qualification or experience will be considered. WHAT WILL I STUDY ON THIS You will study food preparation and cooking including: fruit and vegetables; soups; sauces; meat; offal; poultry and fish and hot and cold desserts. You will also study employment skills, food safety, health and safety, menus and cost management. You will develop your skills in the commercial kitchens at the Manor House Restaurant as well as developing your understanding and ability within hospitality, taking the lead in hosting and managing the restaurant. Your programme of study will also require attendance at tutorials, work experience and employability skills. HOW WILL MY WORK BE ASSESSED? This course involves practical sessions in our Manor House restaurant kitchens alongside written assignments and theory tests. Practical assessments will be carried out in test conditions at set times throughout the year. ARE THERE ANY ADDITIONAL COSTS ASSOCIATED WITH THIS STUDY PROGRAMME? You will be required to purchase a uniform, professional knives and course material, approx. cost 230. IS THERE ANYTHING ELSE I SHOULD KNOW ABOUT THIS Entry is subject to a successful interview and a positive tutor reference. RIONA S STORY STUDYING: HOSPITALITY AND CATERING (LEVEL 1) I particularly enjoy the baking side of the course and have been given many opportunities to come up with some creative designs and creations. Since joining the course I ve noticed a huge difference in my ability to speak and interact with others, especially when I m on front of house duties.
