The Gumbo Cook Off is continuing to transition to a true community supported event! 2013 s event was the first year the public was invited and was a fantastic success! Dolly Parton s Imagination Library Help build libraries for local families by registering children to receive FREE BOOKS. More than 11,000 children, ages 4 or younger, have receive books on a monthly basis to better prepare to start school ready to learn and read at grade level. St. Martin Council on Aging A non-profit organization providing a multitude of vital services designed to grant the elderly of St. Martin Parish an opportunity to grow old comfortably and gracefully within their own familiar place of residency. Services offered allow seniors to remain in their homes for as long as possible before having to consider institutional services. The FamilyWize partnership provides free discount prescription cards to individuals and families in Lafayette, Acadia, St. Martin and Vermilion parishes and can save an under insured person an average of 30% or more on prescription drugs. Family Service Division Program - 16 th Judicial District Family Service Division is a partnership with the school system. Its programs strive to create a conduit between the home, the school, the social service system and the legal system in order to quickly identify and intervene with elementary and middle school aged children when behavioral, school performance, truancy, or parental involvement problems cannot be resolved through standard school channels.
Gumbo Cook-Off Registration Form October 11 th, 2014 You are invited to take part in the 4 rd Annual St Martin Hospital Gumbo Cook-Off in support of United Way of Acadiana! The event will be held on the hospital grounds on October 11 th, 2014. Booth space is first come, first serve and is limited. Entry Fee per team is $20.00. Please return a completed registration form and a signed rules/regulations form as soon as possible to Seth LeBlanc in the Radiology Department to reserve your space. Deadline for registration will be Friday, September 26 th. For any questions or concerns, Seth can be reached by phone at 280-1825 or by email at setleblanc@smh.lgmc.com. Teams must have four members with one person designated at the team captain. The team captain will be responsible for all team members and communicating all rules and regulations for the event. NO ALCOHOLIC BEVERAGES are allowed on the St Martin Hospital Campus. NO SMOKING is allowed on the St Martin Hospital Campus. Professional and courteous behavior is expected amongst all attending the event. Rules and Regulations Gumbo Cook-Off Timeline 5:30 a.m. Booth assembly and setup 6:00 a.m. Begin cooking 11:30 a.m. Gumbo due at judges table. (Must be ready no later than 11:45) 11a.m. 1 p.m. Gumbo tasting! 1:00 p.m. Presentation of Awards 1:30 p.m. Cleanup Booth Setup and Decoration Each team will be assigned a specific area to setup their cook area. Teams are encouraged to provide a cover, canopy or tent for their temporary kitchens. Teams may begin set up of their area beginning at 3:00 p.m. on Friday, October 10 th. All set up and preparations, and cooking must be done in the team s assigned space. Participants are responsible for all equipment used including burners, propane tanks, tents/canopies, tables and chairs and decorations. BOOTH TEAR DOWN: The dismantling of booths and removal of cooking equipment must be done after 1:15pm on Saturday, October 11 th once the event has concluded. All equipment must be removed by no later than 3:30 p.m. Please notify a cook-off representative if any additional time is needed for pickup of items. Ingredients St Martin Hospital and its sponsors will be providing most of the ingredients that you will need to prepare your gumbo. Below is a list of the items provided. Please place a check in the boxes of the items you would like to receive to use in your gumbo. Chicken Thighs 6 lbs. Sausage 4 lbs. Shrimp 5 lbs. Tasso 2 lbs. Onions 4 each Bell Peppers 2 each Roux 1 16 oz. Jar (Teams may use their own roux) Water 3 gallons o Cooked rice o Sample Bowls o Spoons o Napkins
Rules and Regulations (continued) Rice, bowls, spoons and napkins will be available for all teams to use for samples. Teams may add other ingredients other that those listed above, but will be responsible for the additional cost. Requested items will be available for pickup the afternoon of October 9 th by the each team captain. Ice chest may be used but NO ALCOHOLIC BEVERAGES are allowed on the hospital grounds. Cooking Gumbo All cooking must be done on butane/propane burners. Electricity will not be available for cooking. Each team must provide the cooking equipment needed to prepare their gumbo. Please ensure that burners are in proper working order and butane/propane tanks are filled. Teams may use roux that is provided or make their own. Each team will be provided 3 gallons of water for gumbo preparation. All ingredients must be added to the gumbo on site. Pre-cooked stock and meats are allowed. If game is being used as an ingredient, a sales receipt must be provided showing its purchase. Teams are required to cook a minimum of 3 gallons of gumbo. Judging and Serving Teams may begin preparing gumbo at 6:00 a.m. and should start no later than 7:30 a.m. Gumbo must be ready to serve to the public by 11:00 a.m. All teams must have samples at the judges table by no later than 11:30 a.m. Gumbo can be served to any attendee wearing an armband. Winning teams will be announced and awards presented at 1 p.m. Cleanup Teams are responsible for keeping their respective areas clean during and after the event. The cook-off will conclude after the presentation of awards. Clean up and tear down of the booth and cooking areas may begin at this time. Dumping of grease or leftovers and/or cleaning of pots will not be allowed. Vehicles are not allowed into the event area until all attendees have left the area. Release I acknowledge that this contest will include the use of butane burners, camp stoves and other cooking apparatus and my team members are skilled in the use of such devices. My team members waive and release St Martin Hospital from any injury sustained by misuse or negligence during the event.
