These oat flakes are mostly served as a popular, hot breakfast meal. In addition, they are a primary ingredient in a number of applications such as cookies, breads and granola. The thickness and absorbency can be adjusted to fit your needs. Thick Rolled Oats / Organic Thick Rolled Oats

Thick rolled oats are made from kilned, whole groats processed by steaming and flaking. These oat flakes provide a textural difference (a more solid "bite" than regular rolled oats) while still maintaining the high nutritional value common in all oat products. Thick rolled oats are frequently used in breads, energy bars and granola. The thickness and absorbency can be adjusted to fit your needs. Quick Rolled Oats / Organic Quick Rolled Oats Quick rolled oats (sometimes called instant oats) are made from kilned, steel-cut oats processed by steaming and flaking. These oat flakes are commonly found in pouches with seasonings and sweeteners for a quick and nutritious breakfast. Quick oats are also used in breads, bars, and granola. The thickness of quick rolled oats can be modified to suit the needs of a specialized application. Baby Rolled Oats / Organic Baby Rolled Oats Baby rolled oats are made from kilned, fine steel-cut groats processed by steaming and flaking. These oat flakes are frequently used as toppings to garnish and add nutrition to baked goods. Baby oat flakes are useful in applications where a high water absorption is needed, i.e. flavored instant oatmeal. Oat Bran / Organic Oat Bran Our coarse Oat Bran is produced by grinding sound and pre-selected, kilned oat groats. The resulting oat meal is separated into a starchy fraction (refined oat flour) and the oat bran to achieve a functional and attractive particle size. It has an ideal ratio of soluble (primarily beta-glucans) to insoluble dietary fibers, high proteins, vitamins and minerals. Its particle size distribution makes it most suitable in the formulation of variety breads, muffins, cereal products and other food systems where the presence and "nutty" flavor of oat bran is desired. Micro-ground oat bran (sometimes called oat bran powder) is a specialty product made from standard oat bran that has been milled down to flour. Fine Oat Bran / Organic Fine Oat Bran Scottish Oats / Organic Scottish Oats Our Fine Oat Bran is produced by grinding sound and pre-selected kilned oat groats. The resulting oat meal is separated into a starchy fraction (refined oat flour) and the oat bran to achieve specific functional properties. It has an ideal ratio of soluble (primarily beta-glucans) to insoluble dietary fibers, high proteins, vitamins and minerals. Its fine particle size and high water absorption makes this product most suitable when formulating to achieve greater crumb moistness in baked goods as well as in other food systems where the presence and natural flavor of oat bran is desired. Scottish oats are produced from kilned groats. The groats have been carefully sized and dehulled with the objective of producing the highest possible number of whole groats. The whole groats are then cut, classified, toasted, steamed and ground to produce a product with uniform absorption characteristics. The product lends itself well as a porridge, and as an ingredient for cookies and biscuits where texture and hydration are a concern. Whole Oat Flour / Organic Whole Oat Flour Created by grinding kilned groats while retaining the bran layers fully intact. Whole oat flour is an excellent "whole grain source" for use in many baking applications. The particle size of this whole oat flour can be customized to meet a particular functionality. Low Bran Oat Flour / Organic Low Bran Oat Flour

Our low bran oat flour (debranned, or extracted flour) is produced by removing most of the bran layers from the groats through a systematic grinding and sifting process. As it is typically of lighter color and lower protein, this flour is often found in ready-to-eat (RTE) cereals and other extruded products. Whole Oat Groats / Organic Whole Oat Groats Whole oat groats (or WOG) are the product of cleaning and dehulling oats and kilning the resulting groats. This is the basic raw material for stable oat-based products from oat flour to instant oats. Steel- cut Oat Groats / Organic Steel- cut Oat Groats Large cylindrical steel cutters chop kilned whole oat groats into steel-cut groats, which shortens cooking time while maintaining the whole-grain integrity. Steelcut groats can be used as a hot cereal on the breakfast table, or baked into breads. Steel-cut groats are sometimes sorted into fine, medium and coarse granulations, or sold as a mixed-granulation product. We customize our steel-cut granulations to fit your needs. Natural Oat Fiber / Organic Natural Oat Fiber Lightened Oat Fiber Our natural oat fiber is produced from food-grade oat hulls through a proprietary process. This is a chemicalfree process, allowing us to turn organic hulls into various organic fibers. Oat fiber has many uses in bakery products, ready-to-eat cereals, meat extenders and snacks. For these industries we offer two fibers differing in water absorption: our standard-absorption BCS20 (200% w.a.) and our higher-absorption BCS30 (300% w.a.).

By treating our natural oat fiber with a peroxide solution we offer an oat fiber with a lighter tint. This is useful in applications where customers expect a lighter color in their finished product. Hydrocolloid Fiber Blend / Organic Hydrocolloid Fiber Blend Our hydrocolloid fiber is a proprietary blend of finelyground high-fibers, with superior hydrophylic (water) and lipophilic (oil) holding properties. It is useful as a meat extender with improved mouthfeel, texture and flavor. Red Wheat Berries / Organic Red Wheat Berries Red wheat berries are a result of cleaning hard winter or spring red wheats. Red Wheat Nuggets / Organic Red Wheat Nuggets Red wheat "nuggets" are wheat kernels cut and sized through a proprietary process. They are primarily used in flourless breads and other bakery applications where the texture of whole grain is desired. Red Wheat Quick Flakes / Organic Red Wheat Quick Flakes

Similar to quick rolled oats in shape and thickness, red wheat quick flakes can be used in a variety of baking applications or eaten plain. Quick wheat is sometimes called cracked wheat nuggets or crushed wheat nuggets. Red Wheat Regular Flakes / Organic Red Wheat Regular Flakes Regular red wheat flakes are made by cleaning, steaming and flaking wheat berries to a customized flake thickness. Applications include bakery products, mueslies and ready-to-eat cereals. Whole Red Wheat Flour / Organic Whole Red Wheat Flour Whole red wheat flour is made by systematically grinding and sifting pre-cleaned red wheat berries.
