ICE PROGRAM Working with ice blocks requires clear ice and cool thinking. During the 19th century, ice was cut from large, frozen ponds, the directional freezing creating perfectly clear cubes. Bartenders were presented with a block of ice and it was down to their expertise and tools to create smaller, usable chunks. Why is clear ice important? Melting around five times slower than ice containing trapped air, clear ice ensures your drink is kept consistently cool, and helps to avoid a watery mess at the bottom of your glass. There is a growing acceptance amongst professional cocktail makers that ice type is as crucial as the base spirit. After all, ice gets used in everything, and when it melts, it becomes part of the drink. At Mojo we use blocks of ice sourced directly from a local ice sculptor. Ice is cut down to the required size and specially stored ready for service. ICE-DILUTION-BALANCE Ice has two roles: to keep the drink cold and to control dilution. Correct ice handling shouldn t be underestimated. Ice will always make drinks colder. Newton s 3rd law of thermodynamics states that the colder you make something, the longer it will stay that temperature. Take for example the combination of a classic gin and tonic. Why do we serve it with as much ice as possible? What do we want from the ice in this drink? Tonic water is the weak element that adds dilution to the gin. We want to add as much ice as possible to make the drink colder hence slowing the rate of dilution. You may think you re getting less alcohol in fact, you re getting a better drinking experience. Dilution comes from a mixer such as tonic or cranberry juice added to ice and water. Take, for example, a vodka & cranberry. The ideal ratio of any spirit to a mixer is 3-1 or three parts weak to 1 part strong. Without using the correct ice to stir a drink, it would be difficult to control dilution and temperature. Balance is the single most important concept when it comes to mixing cocktails. When a drink is balanced correctly all the flavours come together onto the palate. The correct balance brings together a harmony of flavours. 4 5
