Meet Simone NOW Simone lost 22KG^ I am a mother of 5 so life is very busy. I had become so overweight I stopped looking at myself in the mirror. A friend recommended Jenny Craig and I thought it sounded too good to be true so I joined the program. In 7 months I lost 22kg and I finally got my sparkle back and I couldn t be happier. active Challenge Day 1 Good Friday Make the most of the public holiday and start your day with a walk. Even better, organise an active date with friends or family and get social while you get active. It s time! With public holidays and a host of tempting treats on offer there has never been a better time to challenge yourself and up the activity. We have you covered with our 7 Day Easter Active Challenge go on, give it a go! Day 2 saturday Day 3 easter sunday Heading out to the shops to prepare for the Easter Feast? Make sure you take the long way and do a few extra laps. With Easter, comes friends and family and a whole host of chores. So why not get really stuck into housework. Vacuuming, window washing and cleaning the bathroom can be great ways to work up a sweat. Turn on your favourite music and have a dance as you clean! Day 5 tuesday Day 6 wednesday Time to really pay for those sneaky Easter treats. Challenge yourself with a new class at the gym. If you don t have time to get to the gym, workout at home with an exercise DVD, resistance bands or dumbbells. Back at work? Activate your lunch take 10 to 20 minutes to get out of the workplace for a quick lap around the block to stretch the legs and get some fresh air. Day 4 monday Take advantage of the last public holiday and try something new. Always wanted to visit that local hot spot or try that new café why not walk or ride there? Hot Cross Bun Pancakes Serves 1 INGREDIENTS METHOD 1 packet Jenny Craig Wholemeal Pancakes ½ tsp cinnamon Pinch ground nutmeg Pinch ground cloves 1 tbsp sultanas 1/3 cup skim milk ½ tsp grated orange zest (optional) Few drops of vanilla extract Spray oil Dollop of plain non-fat yoghurt to serve and draw crosses Combine the Jenny Craig Wholemeal Pancake mix with cinnamon, nutmeg, cloves and sultanas in a bowl and stir to combine. Mix together milk, orange zest and vanilla extract, then add to the dry ingredients. Stir until combined. Lightly spray a non-stick fry pan with oil then heat on medium heat until hot. Spoon the mixture into a hot pan and cook as per instructions on the pack. To serve, use the yoghurt to draw a cross on each pancake. Serve With Me Enjoy! 5
raspberry apple pancakes Serves 1 INGREDIENTS 1 packet Jenny Craig Wholemeal Pancakes ¼ tsp cinnamon 1 small red apple, cut in half ½ cup frozen raspberries 1/ 3 cup skim milk Spray oil Dollop of plain non-fat yoghurt to serve METHOD Grate half the apple and combine with the Jenny Craig Wholemeal Pancake mix, cinnamon and frozen raspberries. Add in milk and stir until combined. Lightly spray a fry pan with oil then heat on medium heat until hot. Spoon the mixture into a hot pan and cook for 3-4 minutes on each side, or until golden brown and cooked through. Slice the remaining apple half and serve with the pancakes and plain non-fat yoghurt. CHOC BANANA PANCAKES Serves 4 INGREDIENTS 1 packet Jenny Craig Wholemeal Pancakes 2 tsp cocoa powder 1 small banana, cut in half 1/ 3 cup skim milk Few drops of vanilla extract Spray oil Dollop of plain non-fat yoghurt to serve METHOD Combine the Jenny Craig Wholemeal Pancake mix with cocoa powder until combined. Mash half the banana and mix with the milk and vanilla extract. Mix together the wet and dry ingredients until just combined. Lightly spray a fry pan with oil then heat on medium heat until hot. Spoon the mixture into a hot pan and cook as per instructions on the pack. Slice the remaining banana half and serve with the pancakes and plain non-fat yoghurt. Serve With Me Enjoy! 7
CARROT & ZUCCHINI FRITTERS Serves 1 INGREDIENTS METHOD 1 packet Jenny Craig Wholemeal Pancakes ½ cup zucchini, grated ½ cup carrot, grated 1 spring onion, sliced finely 20g reduced fat feta Pinch dried oregano Pinch dried (or fresh) basil Black pepper, cracked 1/ 3 cup skim milk Spray oil Dollop of plain non-fat yoghurt to serve 4 cherry tomatoes, quartered, to serve Serve With Me Squeeze out the moisture in the grated zucchini and carrot and lay the grated vegetables on a plate with paper towel. Allow the moisture to be absorbed for about 30 minutes. Combine the Jenny Craig Wholemeal Pancake mix with drained zucchini, drained carrot, spring onion, feta cheese, oregano, basil and pepper. Add milk and stir to combine. Lightly spray a fry pan with oil then heat on medium heat until hot. Spoon the mixture into a hot pan and cook for 5 minutes on each side, or until golden brown and cooked through. Serve with yoghurt and cherry tomatoes. Enjoy! 8
MISO EGGPLANT Serves 4 METHOD INGREDIENTS 2 medium sized eggplant, cut in half 1 tbsp miso paste 1 tsp teriyaki sauce 1 tsp sweet chilli sauce 1 tsp ginger, grated 4 tbsp water Spring onions to garnish Serve With Me Preheat oven to 200 C and line a baking tray with greaseproof paper. Heat a non-stick fry pan on high heat until hot then add the eggplant, skin side down. Fry the eggplant on one side for 4-5 minutes (or until it has coloured) then flip and cook the other side until golden brown. Remove from pan and allow to cool slightly. Once cooled, use a knife to draw a diamond pattern across the eggplant flesh. Mix together the miso paste, teriyaki sauce, sweet chilli sauce, ginger and water to form a paste. Spread the paste over the cut eggplant flesh then bake in the oven for 20 minutes or until the eggplant is golden brown. Allow to cool slightly before serving with spring onions scattered on top.
