Page 5 Turkey Red Pepper Strata Ingredients 6 eggs This recipe from 1 1/2 cups rice beverage, unfortified www.myspiceitup.ca 1 tsp poultry seasoning 1/4 tsp ground black pepper 1 tablespoon Dijon mustard ~~~~~~~~~~~~~~~~~ 4 cups crusty bread cubed 1/2 cup Swiss cheese, grated 1 cup green onions, chopped 2 cups of leftover turkey or chicken, diced 1 cup red pepper, diced 2 tablespoons fresh parsley Preparation 1. preheat oven to 350 F. 2. In a mixing bowl, whisk together the eggs, ride beverage and spices. 3. In a separate bowl, toss the crusty bread with the cheese, green onions, turkey and red pepper. Transfer to a nonstick 9 inch square pan or your favourite greased casserole dish. 4. Pour the egg mixture over the bread mixture. Press down to ensure all the bread gets coated with the liquid. 5. Place the strata, uncovered in the oven and bake for 50-60 minutes. The strata is ready when it is puffed up and firm to the touch. 6. Serve warm. Excellent for breakfast or lunch. Hamilton Chapter Update from the Polycystic Kidney Disease (PKD) Foundation of Canada 2015 is shaping up to be an exciting year for the Hamilton Chapter of the PKD Foundation of Canada! In March, we had a table in the lobby at St. Joe s and celebrated World Kidney Day by raising a glass of water to toast kidney health. We also held our very first fundraiser a lively dinner-dance that raised more than $6,000 for the PKD Foundation of Canada. Easy Fruity Crostata Ingredients: 1 store-bought 9 pie shell 2 apples, peeled and thinly sliced. 1 cup raspberries 1 egg white 1 tablespoon warm, liquid honey Preparation: 1. Preheat oven to 400 F 2. Remove the pie dough from the aluminum pie pan and place on baking sheet lined with parchment paper. 3. Spread apple slices over the pie dough, leaving a 1 border. Top apple slices with raspberries. 4. Gently fold the border over the apple and raspberry mixture to enclose the dough, pleating it to make a circle. Brush the pastry with the egg white. 5. Bake the crostata for 30-40 minutes or until the crust becomes golden and the fruit softens. 6. Drizzle the apple and raspberry mixture with honey and enjoy. This recipe from www.myspiceitup.ca
