Lisa A. Lundy Public Speaker & Author Biography Lisa A. Lundy is the author of The Super Allergy Girl Allergy & Celiac Cookbook From A Mother Who Knows. Her gluten free, dairy free and allergen free cookbook, which is designed to help people with a variety of health issues is based on years of practical experience, baking and culinary expertise and the motivation to have fantastic foods for her own three food allergy children. Due to her premature birth, severe allergies, and other factors, the then predictable and heartbreaking future of Lisa s third child, Anne, was to become unable to walk or talk, to become brain damaged, to have numerous seizures, to need a feeding tube and to have frequent hospitalizations. Lisa s daughter has avoided all of these serious health issues and is the picture of a normal looking, chatty little girl due to the interventions Lisa and her husband have used. It has taken more than five years and has come at a cost of over $125,000 in uncovered medical bills to move Anne from having no immune system and being severely malnourished (due to a malabsorption problem) to a child whose future looks bright. Because Lisa and her family had and continue to have health insurance, it came as a shock to her that an HMO could get away with denying life saving medical treatments to a 20 month old child who literally could not digest food, while offering no option for other treatments whatsoever. Due to her experiences, Lisa is passionate about helping others by providing inspiration, information, hope and a dose of fabulous tasting recipes. Biography: Lisa A. Lundy Page 1 of 3

When Lisa discovered that the gluten free commercially made breads tasted like cardboard, and she couldn t purchase non dairy ice cream that was also free of other allergens, Lisa looked for answers and recipes. While there were many gluten free cookbooks on the market, she could not find one that was free of dairy, eggs, peanuts, tree nuts and other allergens and which produced foods that had a great taste, the right appearance and a good texture. Over time she created her own cookbook with her family recipes as well as recipes invented with the help of her loving husband and three children. Prior to publishing the cookbook in 2007, Lisa taught gluten free, dairy free and allergen free baking classes in the Western New York (Buffalo Niagara) community. She has also consulted with bakeries and restaurants in New York City, Western New York State and New Jersey. She has been involved with the Western New York celiac and autism communities for many years. Lisa is a dynamic public speaker credentialed by Toastmasters International to the Advanced Toastmaster Silver Award level and the Competent Leader level. She has been on the news in New York City (Fox 5) and a featured guest internationally on the Korean News station (MBC). She recently completed taping a Living Well with Montel show with Montel Williams. She speaks as a motivational and educational speaker to large and medium sized groups. Born in Muncy Valley, Pennsylvania, Lisa spent the majority of her childhood in State College, PA, the small college town that people call Happy Valley and is also the town that surrounds Penn State University. she worked for ten years in sales and marketing for Xerox Corporation, Bausch & Lomb, and Rhone Poulenc Rorer (Dermik Laboratories Division). While in sales for these Fortune 500 companies, Lisa won sales awards and recognition including a Pinnacle Club trip to Hawaii. While at Xerox, she received acknowledgement for developing sales materials for the company s sales force. Lisa has over 60 hours of IACET (International Association for Continuing Education and Training) certified credits in communication, leadership, linguistics, and the study of human behavior. She is also a Global Co Leader for an international 9 month long program of 300 people who are committed to improving the world in various aspects. In addition to her involvement with the celiac and autism communities and other groups committed to health and well being, Lisa is currently working with several national groups of physicians to improve health care in the U.S. One of the goals is to eliminate the type of difficulties Lisa and her family has had to endure. Married in 1994, Lisa and her husband moved to Buffalo, New York in 1997. Together they enjoy a variety of activities with their three home schooled children. They love arts and crafts, sports, family games, the beach, amusement parks and visiting family and friends. As a family they have committed themselves to making the world a better place. Molly had to have an alternate sugar cookie to decorate at school so I sent along a few of the heart shaped cookies that I made. They turned out wonderful, actually better than any gluten and butter recipe that I have tried and I am the family/extended family baker who has made dozens of sugar cookies for my kids, nieces/nephews and friends kids. The other night, I made the recipe for chicken nuggets out of your cookbook. My 7 year old who misses fast food children meals, said they taste just like his favorite chicken nuggets; of course, his older brother and sister corrected him and said that they were better than the fake chicken nuggets from the fast food chain! American Health Statistics 1 out of every 133 Americans have celiac disease making it one of the most common diseases in the United States. According to the University of Chicago, Celiac Disease Program, 97% of the people with celiac disease in the U.S. are not yet diagnosed. 1 in every 20 children under the age of 3 has food allergy. 1 90% of all food allergy reactions are caused by 8 foods: milk, soy, eggs, wheat, peanuts, tree nuts, fish, and shellfish. For drug allergies, penicillin is the most common allergy trigger. 2 An estimated 50 million Americans suffer from all types of allergies (1 in 5 Americans) including indoor/outdoor, food & drug, latex, insect, skin and eye allergies. The prevalence of reported food allergies has risen 24% among children under age 5 years and 19% among children aged 5-17 years during the past decade, according to a study by the National Center for Health Statistics. 7 Allergy is the 5th leading chronic disease in the U.S. among all ages, and the 3rd most common chronic disease among children under 18 years old. 8 73% of 26 children with ADHD responded favorably to a diet eliminating reactive foods and artificial colors. 16 of the improved children were given a double blind challenge with 100 mg of mixed food dyes or a food chosen by the parent. ALL of them reacted to the challenge. Placebo effect was ruled out, as the children were as good on placebo days as at baseline (on the diet). "This study demonstrated a beneficial effect of eliminating reactive foods and artificial colors in children with ADHD.
