Much of the work is done by hand in small lots, and some of the equipment has been in continuous use for nearly a century. Yamagata Miyagi Niigata Tochigi Nagano Dewazakura Hoyo Koshi no Kanbai Sohomare Masumi/Miyasaka Dewazakura is one of the most innovative sakemakers in Japan, using new yeast strains and brewing techniques to craft distinctly original sakes. Often called wine -drinkers sakes, they do indeed possess fruity flavour notes reminiscent of certain white wines. Graceful and charming, extending a demure welcome to the world of sake enjoyment. Regional rice strains, like Kura no Hana, lend themselves especially well to the brewery s delicately nuanced brewing style. Koshi no Kanbai is Japan s most famous and soughtafter sake. Its winter plum label is familiar to enthusiasts everywhere, conjuring up the image of a sake so perfect that every single molecule seems immaculately in place. Rich, expressive flavour, genteel clarity and balance these are the characteristics of sakes from Sohomare, established by the Kono family in. Unusually, Sohomare uses Designation A Yamadanishiki rice. Full-bodied, flavourful and well-rounded sakes. Association No., an aromatic new yeast strain discovered by Masumi s brewmaster in, is used by over half of the breweries in Japan. Ishikawa Fukui Kyoto Hiroshima Gunma Tedorigawa Kokuryu Tamagawa Kamoizumi Seitoku Tedorigawa s sakes are big on flavour, but never heavy or dense. Clean, great-tasting and easy to drink, it s no wonder that Tedorigawa is a favourite with sake enthusiasts everywhere. The Birth of Sake movie, released in 0, was recorded in this brewery. Among the soft-water breweries of Japan Kokuryu is perhaps the most famous. Its water is drawn from the subterranean flow of of Kuzuryugawa (NineHeaded Dragon River), famed since ancient times for its delicious taste. In 00, the owner recruited Philip Harper, the first and only non-japanese toji in Japan, as the brewer s new toji. Displaying a broad grasp of the sake-brewers art, he introduced earthy wild-yeast brews with bold flavours. No brewery in Japan has taken a stronger stand for individuality than Kamoizumi. Their sake has an attitude: robust, tawny, full-flavoured, yet with the smooth finish and easy drinkability that are the hallmarks of technical mastery. Seitoku s virtuoso brewmaster, Yoshihiko Nishioka, trained under Chieko Kumagai at the National Research Institute of Brewing. His precise, understated style has elevated Seitoku to prominence both in Japan and abroad.
