CHARLESTON S BAR Charleston s prides itself on its high standards of quality food products and dedicated employees. Those same high standards of freshness and consistency of food products are emphasized just as strongly when it comes to Charleston s bar. Our standard pour is 1½ oz. compared to the 1 ¼ oz. that our competitors pour. We use bottle mixers to ensure a consistent product every time. Charleston s bar is also known for its specialty drinks. We fresh squeeze our orange and grapefruit juices. Each Charleston s offers a Happy Hour in our bar (possible patio) area only. Your trainer will let you know the Happy Hour times and policies. BAR GARNISHES Bar garnishes include a variety of fruits and accessories. The purpose of a garnish is to enhance the appearance and/or taste of a cocktail. Always check garnishes for quality before placing them into a cocktail. The bartender is responsible for cutting garnishes. GARNISH VOCABULARY Cherry A stemmed red maraschino cherry. Place the cherry directly into the cocktail. (ex. Rob Roy, Manhattan) Orange Flag A stemmed red maraschino cherry speared together with an orange and placed on the rim of the glass. (All Collins and Sours) Orange Slice A wedge of orange cut into 6 pieces. Oranges are placed on the rim of the glass (ex. Screwdriver) Lemon Wedge - A triangular segment of lemon. Placed on the rim of the glass. (ex. Long Island Tea) Lemon Twist - A slice of lemon rind 2 inches long, and 1/2" wide. Twist the rind over the drink and then run it around the rim of the glass (rind side down) and drop it in. (ex. Martini) Lime Squeeze A lime cut in half and then cut into quarters.
