German Pancakes Preheat Oven: 400 degrees Bake Time: 20-25 minutes Put into a blender in order: 6 whole eggs 1 cup milk 1 T. sugar 1/2 t. salt 2 t. vanilla 1 cup flour Blend until smooth. Melt 1/2 cup butter in the bottom of a 13 X 9 pan in the preheated oven. Take out of the oven and pour the blender ingredients over the melted butter and replace it into the oven. Bake for 20-25 minutes until browned on top edges. Toppings: This may be used as any meal, depending on what toppings you put on it. Just put your favorites on it. I like to put apple pie filling in the middle and whipped cream. May just put maple syrup over it. I forgot to mention that I do this as a demo in class many times, and give students the full recipe, but I write the 1/2 recipe for those doing it in groups in their units. Baking time would also be reduced to round 15 minutes or so. If you put the butter and pancake mix in large, texas muffin tins, it makes great individual ones for each group member. I like the homemade apple pie filling. Carol Lee clee@lavaridge.net

While heating, melt 3 tablespoons of butter in a glass 9" x 13" pan. (I find glass works best) While heating pan and melting butter, beat eggs well with an electric mixer. Add flour, salt and milk. Beat well. Pour mixture into heated pan. Return to preheated oven immediately. Bake for 18-20 minutes. Remove from oven and serve. It is fun to turn the oven light on and watch them GROW! We love to serve them with the following apple filling. Cinnamon Apple Filling 3 medium apples peeled and sliced thinly 1 1/2 tsp. lemon juice 3 T brown sugar 1/2 tsp. cinnamon 3 T. Butter Mix together in a pan and simmer 15-20 minutes or until apples are barely tender. Serve over German Oven Pancakes. When my kids were home and wanted to make one for themself or a friend, I would have them get one egg per person and crack it (them) into a measuring cup. Whatever it measured, add that much flour and that much milk and it works every time. You can do up to a dozen eggs and bake it in a jelly roll pan--that looks impressive when pulled out of the oven.
