Limagrain Céréales Ingrédients & Unicorn Grain Specialties join forces to offer a wider range for clean label bakery For bakery, clean labeling and innovation are key drivers for Limagrain Céréales Ingrédients (LCI) and Unicorn Grain Specialties (UGS)! Limagrain Céréales Ingrédients (LCI) has entered into an agreement to acquire 100% shares of Unicorn Grain Specialties (UGS) from Nordian Capital. The operation will be effective in few weeks. The combination of strengths of the two structures will provide enhanced expertise and innovative ingredients to our customers, particularly for the clean labelling in the bakery sector. Both companies propose a range of wheat-based functional flours. Used as low percentages (less than 10%), these functional flours can change texture by improving softness or by reducing fat in formulations, Moreover, these functional flours are totally clean label because they are declared as a regular wheat flour, and they remain invisible in the composition list of baked goods. The wheat-based functional flours can be used in breads for improving softness or for extending freshness or in pastry for reducing fat, for making choux pastries in cold conditions or for keeping fruits in suspension. For wholemeal bread or bread with increased fibres, LCI and UGS give you natural solutions with a fibre range (wheat, maize, oats, buckwheat), a large choice of seeds and flakes (sunflower, linseed ), a toasted range (Nutricorn, maize flour, buckwheat ), preheated wholegrain flours from cereals (maize, wheat, rye, barley ) and from pulses (chickpea, fababean, lentil.) and Presco range (wheat, rye, barley, spelt, quinoa, sweetcorn), puffed grains (whole kernel or broken) able to give new textures and new tastes. CERECLEAN, a 100% clean label preservative, for bakery products preserved as in the past! Aware to consumer expectations in terms of Naturalness and Clean Label, Limagrain Céréales Ingrédients is proud to present CERECLEAN. CERECLEAN is a clean label preservative (fermented wheat flour) that provides the same results as a chemical preservative such as calcium propionate (additive E282), potassium sorbate (additive E202) or alcohol. The preservative in bakery products slows down the natural development of molds and ensures consistent organoleptic quality over a long life. Formerly this preservation was linked to the type of bread produced, indeed the craftsmen carried out a long fermentation which allowed to naturally create the organic acids ensuring the long conservation of the product. Today, we revisit these old principles with our CERECLEAN solution! Indeed, CERECLEAN is a fermented wheat flour whose fermentation process is controlled for a targeted production of organic acids to ensure the preservation of bread products. Limagrain Céréales Ingrédients (LCI) provide the BRICKS, it is the base ingredients for bread improvers, and the client build his own improver especially adapted to his needs, with LCI s advice and technical follow up! The clients can re-create their improver with the BRICKS that they can modulate as their wishes. With the BRICKS solutions, they can keep the secret of their formulation! Furthermore, our offers is also available in Clean Label or classical versions. Indeed, LCI have in one hand ready to use improvers which gives improvement on technical and softness point of the product, and on the other hand, these ready-to-use improvers which are split in BRICKS.
