Portion size: 1 salad 12 servings Featured Chicken of the Sea Recipe for Healthcare Foodservice Ingredients ½ c White vinegar ¼ c Sugar ½ tsp Salt ½ tsp Ground black pepper 2 Tbsp Poppy seeds ½ c Salad oil 6 c Fresh strawberries 2¼ lb Fresh baby spinach ½ c Pumpkin seeds 40 oz Chicken of the Sea Premium Wild-Caught Pink Salmon Notes Preparation 1. Combine white vinegar, sugar, salt, black pepper, poppy seeds, and salad oil to make the dressing. 2. Wash, trim, and quarter strawberries. 3. Toss spinach and strawberries with dressing. 4. To fi nish each salad on demand: Sprinkle ¼ cup of strawberries and pumpkin seeds and 2.5-oz (drained weight) salmon over salad. Total yield: 1 quiche 1 Portion size: 8 quiche 8 servings Featured Chicken of the Sea Recipe for Healthcare Foodservice Ingredients 1 9 prepared deep pie crust 10 oz Chicken of the Sea Pink Salmon, Skinless & Boneless 1 Tbsp Dried bread crumbs, finely ground 1 Tbsp Parmesan cheese, grated 2 tsp Olive oil 2/3 c Fresh red pepper, diced 1 3 c ½ tsp ¼ tsp Fresh green onion, thin-sliced Old Bay Seasoning Hot sauce 2 Tbsp Reserved salmon liquid 6 Fresh eggs ¾ c 2% milk 1 c Sharp cheddar cheese, shredded 1 Tbsp Fresh parsley, minced Preparation 1. Prick pie crust with fork and bake at 425 F for 7 minutes or until lightly browned. 2. Drain salmon and reserve liquid. Chop salmon, toss with bread crumbs and Parmesan. 3. Heat olive oil in a sauté pan, medium heat. Add peppers and onions. Cook until onions are translucent. Add Old Bay Seasoning and hot sauce; toss with reserved salmon liquid. Simmer until liquid is reduced by 90%. 4. Blend eggs and milk. Add cheese and parsley to the egg mixture. Blend in cooked vegetables and salmon/bread crumb mixture. 5. Pour into pie crust and place in 350 F oven for 35 minutes or until done. Total yield: 1 gallon Portion size: 1 cup 16 servings Makes 1 gallon Ingredients 30 oz Canned Chicken of the Sea Pink Salmon, Skinless & Boneless ½ gal 2% milk 1 lb Fresh Idaho potatoes, peeled and medium diced 1 Tbsp Minor s Lobster Base ¼ c Tomato paste 2 oz Butter ½ c Diced shallots 2 c Celery 2 c Red pepper, seeded and diced 2 tsp Paprika ½ tsp Chili powder tsp Cayenne pepper 1 c Dry sherry ½ c Flour 1 8 8 oz Chicken of the Sea Pink Salmon, drained 1 c Sour cream 3 Tbsp Minced fresh chives Preparation 1. Combine 30 oz salmon, milk, potatoes, lobster base, and tomato paste. Simmer until potatoes are close to tender to make the stock. 2. Separately, melt the butter with the next 6 ingredients and cook on medium heat until the shallots are translucent. Add sherry to deglaze the pot and reduce by 50%. Add the fl our and cook on low heat for 3 minutes, stirring frequently to prevent browning. 3. Once the potatoes are nearly cooked through, add hot stock in small batches, stirring constantly until smooth, bringing to a simmer after each addition. Allow the soup to simmer for 3 minutes, or until the potatoes are cooked through, stirring frequently. Puree in a blender. 4. Portion 1 c bisque into each bowl. Place ½ oz of fl aked salmon in the center of the bowl. Top with 1 Tbsp sour cream, then dust w/ minced chives.
