1 Kohl mit Bratwurst Cabbage with Bratwurst I d hate to think of a world without Bratwurst. Can you imagine standing forlorn and destitute, staring out at a barren landscape like the surface of the moon and no Bratwurst as far as you can see? When I was stationed in Prüm, there was a man who had a Bratwurst Stand near where I lived. He served them on a bun
2 with Pommes Frites and Mayonnaise not mustard. There was always a little crowd and they tell me he now owns about half the town. I often cook Bratwurst with Cabbage. Ingredients: 1. A head of Cabbage.whatever kind you like. 2. Bratwurst or an assortment of whatever kinds of sausages you like.i usually add Knockwurst, and maybe a Wiener or two 3. A can of Stock I usually use Chicken but whatever you like 4. Vinegar 5. A Bottle of Beer.optional 6. Black Pepper 7. An Apple or two 8. Margarine or Butter 9. Bacon..optional 10. An Onion
3 11. Green Onions optional 12. Caraway seed optional 13. Sugar optional 14. A nice pile of pills for old poots Gather a nice pile of German looking things.
4 In Dallas, we have a great German store called Kuby s.
5 And there are many little German towns in Texas like Muenster. This store is called Fischer s and I bet you can find a German store around you somewhere. Prepare an Onion.
6 I only use a few pieces, put the rest in the fridge and save the scraps for stock or compost.
7 If you are an old poot like me, you might use the healthy kind of Margarine with the Omega stuff and such good things. But if you are like Julia Childs, old and don t care, you could use Butter.
8 Put in a little Onion and a few Apple slices.
9 Sauté until the Onion is clear but the butter is not brown (just a little bit) and dump in the Stock. And if you happen to be having a Beer, open another one and dump it in now.
10 Dump in some sausages and simmer for a little while (not too long.4-5 min on low boil) this is just to add the flavor of the meat to the broth.
11 Cut the cabbage into quarters and leave the stalk.it s good. The stalk will put a spring in your step and keep Banshees away.
12 Add the cabbage and cook another few minuets.
13 Now, if you want, you could add a few more pieces of apple. The first apple was for flavor. I didn t put these in until later because I wanted them to keep some color.
14 Add a little vinegar about 1/3 cup or less.
15 Now maybe a little Black Pepper..about a tablespoon.
16 It s not necessary but if you want you could chop a nice little batch of Green Onions. All this does is make it all look a little more interesting.
17 Now you could add the Green Onions, Caraway Seeds and whatever else you think might look nice.or taste good. The Skillet Method: Sometimes I use this electric Asian gizmo which is very handy for many things.
18 I m not sure what it is called but it s like a Teppanyaki skillet or grill for home use. You can find them at Asian stores. Here I noticed some Bacon when I opened the fridge so I decided to use a little. The important thing about using Bacon in stuff like this (e.g. Kartoffelsalat) is to cook it until it s real crispy.all the fat rendered out.
19 When the Bacon is real crispy, dump in the other stuff a mustard seed or two? If you re having a Beer, dump the rest of that in and get a fresh one to drink.
20 I make up little batches of pepper vinegar with peppers right out of my garden and here I am adding a little. My maternal grandmother was German and she often put a little Sugar in stuff like this..but you don t really need it.
21 Cover it and cook it on low for a little while until everything looks nice. Be careful not to over cook the sausages in this thing or the pot.
22 I usually have beggars and onlookers when I cook. I bid this guy Guten Abend but I don t think he understood because he just went on eating his nut. So just ignore them.
23 Sometimes I like to serve stuff like this with Pierogi, which are actually Polish but go good with German food.
24 The main thing of course is to have plenty of pills for us old poots. Benimm Dich, iss ordentlich! Guten Appetit
