4 Taste of Italy Focaccia FOOD COURT October 13, 2015 River Center Davenport, Iowa Focaccia Bread 1 each Roast Beef 2 oz Pepperoni 1oz Capicola 2 oz Mozzarella 2 oz Red Onion, sliced 1 each Roasted Garlic Aioli 1 oz Butter and grill the focaccia 2. Arrange sliced mozzarella on focaccia and melt 3. Heat the meats on grill 4. Plate bottom piece of focaccia 5. Layer with roast beef, pepperoni, capicola and red onion 6. Spread prepared aioli on top slice of focaccia 7. Top, cut on a bias then shingle At this year's Fall Food Show you won't want to miss lunch in our food court. The 1980's themed show will feature a photo booth, blue light specials, allowances, giveaways and more, but the centerpiece of the day will be the Food Show Food Court. Featuring Fresh Made Burritos Bowls Salads The Food Court will feature three quick service restaurants Cascabel Mexican Grill, Luigi's Italian Kitchen and Schnitkes Gourmet Sandwiches. Not only will it be a place to grab a quick lunch on the food show floor, but a great way to experience our exclusive brands and services in action. The restaurants were conceived and designed by our in-house chef and marketing department. Our in-house consulting team can help you do the same with your business by helping you create new menu items, restaurant concepts, menu design, brand development, food photography and more. Featuring Fresh Made Pizza Specialty Pastas We also wanted to focus some attention on quick service restaurants and give you ideas so you can capitalize on this growning trend in your own buisness. West Creek pork has many of the features of Allegiance. It comes from the top 40 percent of best hogs that meet very specific marbling, color, and animal care specifications. The product quality is far above typical commodity fresh pork but priced to be comparable to the market. The hogs are raised on the same local farmer-grown corn diet giving the same marbling that produces great flavor, juiciness and tenderness. Roast Pork with truffle Mashed recipe page10 Allegiance comes from the top 20 percent of hogs available in the United States. The hogs raised for Allegiance are bred from Duroc males, which are known for exceptional pork quality, outstanding growth, impressive muscle and unmatched tenderness, and Yorkshire/Laundrace females, which are known for large litters, excellent temperament and very good growth. The hogs are born on a single-source Midwest family farm with 24 locations, so every carcass is traceable from start to finish. 6 Pork TenderLoin With Gnocchi Pictured on inside front cover Pork Tenderloin 6 oz Gnocchi 5 oz Green Onion 1 oz Tomatoes, diced 2 oz Microgreens 1 oz Southwest Sauce 4 oz Southwest Base 1 teaspoon Water 1 cup Black Pepper touch Mix all ingredients and bring to a boil, thicken with a slurry 1. Rub tenderloin with salt, pepper and old bay seasoning 2. Sear each side, then place in oven to cook until reaches Heat gnocchi in a sauce pan over medium heat 4. Add sauce and diced tomato, toss and coat, bring to a slight boil 5. Add green onion and toss. Place in bowl 6. Remove tenderloin and let stand for 3 minutes 7. Slice on a bias and shingle onto pasta, top with micro greens Roast Pork with TrufFLe Mashed Pictured on page 8 Pork Loin 5 oz Apple Cider Dressing 3 oz Cherry Tomatoes 3 oz Garlic Mashed 4 oz Truffle Salt pinch Fresh Thyme pinch page 10 Fall 2015 Chipotle BBQ Ribs with Roasted corn Pictured on back cover Pork Rib 1 slab BBQ Sauce 4 oz Chipotle Base ½ teaspoon Green Onion, sliced 1 oz Sweet Corn 3 each Place the BBQ sauce in a bowl and whip in the base 2. Lightly brush the ribs and smoke at 300 for 3 hours 3. Change chips each hour for max smoke flavor 4. Take out and brush with BBQ sauce and char grill 5. Let ends char and caramelize 6. Flip ribs and do the same, move 90 and let cook for another minute creating nice char on top of ribs 7. Brush with sauce one last time and place on plate 8. At the same time you put ribs on the grill, spray corn with butter and place on char grill 9. Move around as needed and keep spraying with butter mist 10. Add to plate and top with a sprinkle of green onion 1. In a roasting pan, pour apple cider dressing over the pork loin 2. Roast in oven until it reaches 155, then let stand for 3 minutes 3. Halve cherry tomatoes and toss in olive oil, roast for 4 minutes 4. Place mashed into a pastry bag and pipe onto the plate 5. Top mashed with a sprinkle of truffle salt, followed by thyme 6. Slice loin thin and fan around the mashed, top with cherry tomatoes Harvest Pork Salad Pork Tenderloin 4 oz Cucumbers 3 oz Apples, diced 2 oz Pineapple, diced 2 oz Red Onion, diced 1 oz Chainti Dressing 3 oz Chipotle Base 1/2 teaspoon Olive Oil 1 oz Arcadian Blend 3 oz Place olive oil and whip into it the chipotle base 2. Rub tenderloin and roast in the oven, to 155 internal temperature 3. Plate lettuce, top with onion, apples, pineapple & cucumbers 4. Rough cut pork, place atop the salad, and drizzle with dressing CinnAmon Pork Salad Pictured on front cover Pork Loin, diced 5 oz Cinnamon Chipotle Rub 1 teaspoon Olive Oil 1/2 oz Rainbow Peppers, sliced 3 oz Tomatoes, diced 2 oz Pecan Smoked Bacon, diced 2 oz Red Onion, diced 1 oz Archidian Blend 3 oz Microgreen Flowers 1 oz Combine cinnamon chiptole and olive oil 2. Mix diced pork loin in and sauté until cooked 3. Place lettuce in a bowl 4. Top salad evenly with tomatoes, peppers, bacon and red onion 5. Placed pork loin in middle of the salad mix, top with flowers and serve
