3 School Readiness Corner Get physical with skill building Your preschooler is becoming more sure-footed every day. She is developing her body in new ways, learning to jump, climb, skip, and hop skills that build on one another. This skill building is another form of learning. Developing her large-muscle, or gross-motor, skills increases her strength and stamina. Here s how to further encourage development of her gross motor skills and coordination while having fun: Give her a tricycle or pedaling toy. Walk to the park, where she can climb and swing on the gym equipment. Play catch or kick a ball in the backyard. Get your child involved in group or individual activities such as soccer, jump rope, or swimming. Play a tape or CD of music, and dance to the beat with her. Your child s small-muscle, or fine-motor, skills are yet another part of his step-by-step development. Eye-hand coordination will enable him to draw, scribble, and write. Plan art projects that include drawing, cutting with safety scissors, and pasting. Do puzzles that have pieces of different sizes. Provide toys that allow for sorting or stacking. Offer trains or cars that need to be pushed along a track. Use clay to make things he can play with, using his imagination. Let your child dress himself as much as possible. Buttons, snaps, and Velcro closures help him develop those fine-motor skills.
4 Christabel is originally from Peru and moved to the US in She learned to love this country and the St. George Community. Christabel holds a Bachelor s Degree in Psychology from Dixie State University. She also earned a postgraduate certificate in Infant-Parent Mental Health from the University of Boston Massachusetts. She is the mother of two adopted sons. She benefited from the TLC services when she adopted her youngest son. Her oldest son graduated from the Head Start program. She immediately developed a great admiration and appreciation for these programs. She strongly believes in supporting families. The thing she loves the most is her family. They enjoy going on nature walks, bird watching, hiking, riding bicycles, cooking and reading books. Christabel Parker TANF Family Support Specialist Natalie was born and raised in St. George, Utah. She went to Success Academy High School, which allowed her to graduate with her GED and Associates Degree simultaneously. She then went on to earn her Bachelor s Degree in Psychology from Dixie State University, and graduated this past year in May. Two weeks later she got married. Her husband Patrick, and her own a home in Washington. They plan on staying in the area for a long time. She enjoys hiking, wake boarding, and going to the gym, but she hates playing sports. She is much happier cheering from the sidelines. Gummy worms are one of her biggest weaknesses and she always has to have chapstick with her. Family is the most important thing to her and is also one of the reasons she wanted to be a part of TLC. Her work will help her learn skills for family life and vice versa. She is grateful for the opportunity she has been given and is excited to be a part the TLC family. Natalie Gotcher Caterpillar Clubhouse Childcare Teacher Catheryn is currently working in the 2 to 4 year old childcare classroom. She was born and raised in Jamaica Queens, New York. Her parents are from Colombia and Ecuador making her fluent in Spanish. She is in love with the Hispanic culture. She has been living in Southern Utah since 2008, when she came out here for school. She s currently working on her Bachelors of Spanish and will continue to work towards her Masters in School of Counseling. Her ultimate goal is to be a guidance counselor so that she can guide children to become the best they can be despite any challenges they might face. She has been married for 8 years this June and has two awesome kids Lemuel is 6 years old and Selena is 3 years old. She plans to have 2 more kids in the future. She also plans on staying here for good and growing roots in this community since it s such a beautiful place to live in. She looks forward to getting to everyone here at TLC. 5 Egg in a Bell Pepper Ingredients: 1 red bell pepper, 4-5 large eggs, Salt, Pepper, 1/4 cup grated parmesan cheese, 1 Tbsp. Olive oil Instructions In a large, non-stick skillet, heat 1 Tbsp. olive oil over medium/high heat. Cut peppers into ½" rings and remove the seeds and centers. Place sliced peppers into the pan and let them sauté for a minute. Crack one egg into the center of each bell pepper slice. Start pouring the egg in slowly; it prevents the egg from leaking and forms a nice seal. Sprinkle salt and pepper over each egg. Sauté for 3 minutes, then flip it over carefully. Top with a generous amount of Parmesan cheese. If you want your yolks to be juicy (over easy), cook another minute. Spinach Feta Wrap Ingredients 4-ounces light whipped cream cheese, 3 tablespoons extra virgin olive oil, 1 small yellow onion, diced, 1 red bell pepper, cut into thin strips, pinch of salt, 1 garlic clove, finely chopped, 1 bag (6 to 8 ounces) baby spinach leaves, salt and fresh ground pepper, to taste, 2 green onions, thinly sliced, 1/4 cup shredded parmesan cheese, 1/3 cup crumbled feta cheese, 6 to 8 (8-inch) gluten free, low carb or whole wheat flour tortillas, room temperature, Cooking Spray Instructions Preheat oven to 350. Grease a baking dish with cooking spray and set aside. Place cream cheese in a medium sized mixing bowl and set aside. Heat olive oil in a large skillet; add onions and pepper strips. Season with salt and cook for 3 to 4 minutes, or until tender. Stir in garlic and continue to cook for 30 seconds. Add spinach; season with salt and fresh ground pepper and continue to cook and stir for 3 minutes, or until spinach is cooked down. Remove from heat and add spinach mixture to the cream cheese. Add green onions and cheeses; mix and stir until creamy and well incorporated. Place about 1/4- cup filling onto each tortilla; roll it up. Arrange tortilla wraps in the previously prepared baking dish. Lightly coat each tortilla wrap with cooking spray. Bake for 15 minutes, or until lightly browned and heated through. Cut each roll in half and serve. Turkey Cabbage Rolls Ingredients 1 medium onion (chopped),2 tsp. minced garlic, 20 oz. lean ground turkey, 1 large head of cabbage, 2 large carrots (chopped), 1 Tbsp. oil, 1½ tsp. salt, ¼ tsp. pepper, 1 cup quinoa, 2 cups chicken broth, 1.5 tsp. paprika, 2 tsp. Worcestershire, 1 egg, 12 oz. marinara sauce, ½ cup sour cream (optional) Instructions Preheat oven to 375 degrees F., Rinse quinoa and add with broth to a sauce pan with a tight fitting lid. Bring to a boil, reduce heat to low, cover and simmer for 15 minutes. Turn off heat and let sit for 3-4 minutes before removing lid. Do not let quinoa sit longer while covered or it will get mushy. Heat a large pot of salted water separately over high heat to bring to a boil. Add cabbage, cover and reduce heat to low. Boil cabbage for 10 minutes and then remove from pot using oven mitts or two large spatulas. Set aside to cool. While quinoa and cabbage are cooking, heat oil over medium-high heat. Add onion and carrot and sauté for 3-4 minutes to soften. Add garlic and sauté a minute longer before adding turkey. Cook turkey for 6-7 minutes until fully cooked. While cooking, use a spatula to break the turkey up into small pieces. While turkey cooks, add Worcestershire, salt, pepper, paprika, and ½ cup of the marinara sauce. Add cooked quinoa to turkey mixture and stir to combine. Taste and adjust seasoning levels if desired. Add egg and stir to mix in. Spoon about ½ cup of the marinara sauce into a 9 X 13" casserole dish and spread out to thinly cover the bottom of the baking dish. Peel leaves from cabbage carefully to keep intact. Scoop ½ - ¾ cup turkey filling into the center of a cabbage leaf. Fold the bottom half over the filling and then tuck the sides in. Fold the upper half over and lay seam side down in the prepared casserole dish. Repeat with remaining cabbage leaves until dish is full and filling is gone (typically 10 rolls). Spread remaining marinara sauce on top of cabbage rolls and bake for approximately 30 minutes. Serve with sour cream.
6 Spring Flower Bouquet Materials: Paint (green, and four colors of your choosing), paper, black marker Directions: First start by painting your child s hands from the tips of their fingers to the palms of their hand, make sure you paint each one a different color. Place your child s hands next to each other on the piece of paper and apply pressure, let dry. Wash off excess paint. Once the two are dry paint one hand again and add to the middle of the two to make it look like a three flower bouquet, let dry. Once dry paint stems and bow in the middle. Use your marker to write sign and the date. Hoppy Easter Fingerprints Materials: Paint (salmon and yellow), black marker, paper Directions: Paint your child s thumb and three fingers. Place them in a horizontal row on the piece of paper and apply pressure, set aside to dry. Once they are all dry add the faces to each of your chicks and your bunny, write Hoppy Easter across the top and make sure to sign and date it. April Showers Materials: cupcake wrappers, pipe cleaners, construction paper (any color), blue paint Directions: Fold the cupcake wrappers in half and place a pipe cleaner through the center bending the end of the pipe cleaner up. Glue your umbrellas to the piece of construction paper and let dry. Once glue has dried add raindrops around your umbrellas. Write rain in one of the corners, also remember to sign and date. Earth Day Cookies Materials: sugar cookie mix package, green and blue food coloring Directions: Preheat oven to the degrees stated on the package, follow the directions on how to make the cookie dough. Once you have made the dough separate into two equal parts, add green food coloring to one half and blue to the other. Once you have your desired shades mixed the green and blue together in the separate balls. Once you have mixed them all place in the oven to cook. When finished let cool down and enjoy!
