1 Cocktails No one knows who invented the cocktail. Our favourite tale of the origin of the word was documented by George Bishop in his book called The Booze Reader: A Soggy Saga of Man In His Cups (1965). Bishop contends that the word stems from the English cock-tail, which referred to a woman of easy virtue who was considered desirable but impure What better way to describe a cocktail?

2 The first bartender to gain fame and fortune as a master of his craft and creator of the classic Martini was Professor Jerry Thomas, a midnineteenth century bartender who in his book How to Mix Drinks, or The Bon-Vivant s Companion pointed out that The Cocktail is a modern invention and is generally used on fishing and other sporting parties, although some patients insist that it is good in the morning as a tonic. He goes on to list just ten cocktail recipes, bitters being the only ingredient common to each drink. It is, Professor Jerry Thomas who tended the bar of the old Occidental Hotel in San Francisco and reputedly in 1862 made the Martinez (which later became known as Martini) for a gold miner on his way to the town of Martinez, which lay forty miles to the east. By 1900 the Martini had become known across the U.S.A and had spread to the other side of the Atlantic. This is said, by some, to be the beginning of the golden age of cocktails and, incidentally, the birth of jazz music. Monkey Shoulder blended malt whisky, mixed with the zesty King s Ginger liqueur, spiced with our homemade ginger syrup and topped with soda. Goldfish Fishers London Dry Gin shaken with homemade champagne and white wine vinegar-based pineapple, sage & cardamom shrub. Sweet and sour, yet herbal with warming spice finish. Perfect to pair with food! Hot Thing Mixture of Togarashi spice infused Glenfiddich 15yo whisky, Galliano - Italian herbal liqueur, mango and lemon juices with a drizzle of chili oil on top. Fruity one with a stimulating kick!

6 Islay Island Iced Tea Blend of Smoky Laphroaig 10yo whisky and Quiquiriqui mezcal with Stoli Citron vodka, No.3 London Dry Gin, Havana 3yo rum and Cointreau orange liqueur mixed with fragrant Earl Grey Tea., Lemon and sugar. Alcoholic iced tea out of this world. It s Been A Pleasure 9.95 Tullamore Dew 12yo Irish Whisky, Frangelico hazelnut liqueur, Crème de Cacao with touch of vanilla syrup and splash of coconut water. 7 On The Flor 9.95 Olmeca Plata tequila and St Germain elderflower liqueur, shaken with rose syrup, lavender bitters, lime and egg white. This floral and textured cocktail with have you dancing the night away. Sakura Punch Suntory Yamazaki Distiller's Reserve Japanese whisky, delicious Heering cherry liqueur and 30-yearold sweet Pedro Ximenez sherry, mixed with pineapple juice and Peychaud s aromatic bitters. Moreish and satisfying & fruity concontion. Sugar & Spice 9.95 Creamy, rich and warming. Perfect after a meal or a sweet treat on it s own. Prune eau de vie plum brandy, RumChata cinnamon liqueur and Bitter Truth Pimento liqueur with black walnut bitters.

8 The Purple One 9.95 Gin sour taken to another level. Butterfly pea infused Hendrick s gin with lemon juice, sugar and few dashes of lemon bitters. Sounds simple, but the colour of it will blow your mind. The Redhead 9.95 Remy Martin 1738 Cognac, stirred with Aperol aperitif, red vermouth and Modena-made Balsamic vinegar, with a splash of Grenadine. This is a very, very tight twist on the Negroni, enjoy!
