The softer landscape is mirrored in the region s single malt, which tend to be lighter in both colour and body. With little or no peat used in the drying of the malt, the whiskies distilled here are generally fresh and light, floral and fragrant. Rugged, windswept and barren, these island landscapes generally produce single malt whiskies with strong peaty, marmite aromas. The Islands malt range from powerful, bursting with flavour notes such as the black pepper to the lighter, aromatic notes. The Isle of Islay is generally recognised for its smoky malts like the pungent, peat smoke sweetness of Lagavulin. Not all Islay malts are so full of rich smoke however like the cleaner, lighter notes in Caol Ila.
