A guest-friendly breakfast program should be conveniently laid out, look inviting and provide a healthy selection of trusted brand name products that are fresh, enticing and nutritious. Sounds simple enough! After a great deal of product and market research, Days Inns Worldwide introduced their enhanced Daybreak breakfast program in September Leveraging the strengths from our friends in the United States and working closely with your Franchise Advisory Committee, we ve strategically identified key areas of our existing breakfast program that will benefit from these enhancements. We want you to be confident that when one of your frequent guests is staying at a sister Days Inn in Canada, they will have access to the same quality breakfast offering. With the standardized Daybreak Café breakfast program, frequent guests will know what to expect from the presentation to the brand name products they trust and respect. The overall success of this program continues to depend on you! This implementation guide includes complete details from F&B requirements to display merchandise options. 5 I. INTRODUCTION FRESH. ENTICING. NUTRITIOUS. As a brand, our primary objective is to strengthen customer loyalty by exceeding guest expectations and improving the overall experience each and every guest has at our properties. We all know that first and last impressions can be equally impacting and significant. Although a guest may have a superb in-room experience, if the last impression is of a poorly laid out breakfast offering, this may replace any remembrance of an otherwise pleasant stay. Regardless if a guest is staying at a Days Inn in Vancouver, Ottawa or Stephenville our goal as a brand is to create an eye-catching breakfast presentation along with a consistent breakfast offering inclusive of a dependable brand name cup of coffee, yogurt and a delicious egg protein at the Daybreak Café. This guide provides detailed requirements for the Daybreak Café breakfast and its distinct elements including proper set-up and continued preservation as well as the food, beverage and service requirements. II. FOOD HANDLING REQUIREMENTS Every franchisee is required to ensure that its offering of the Daybreak Café breakfast fully complies with all federal, provincial and municipal Health Department regulations and codes including without limitation those relating to food handling and storage, public health and safety. If a regulation or code conflicts with the standards in this guide, the hotel must revise the Daybreak Café breakfast offering to meet current Health Department requirements. If the Health Department or other regulations require a specific license for any or all of the required Daybreak Café breakfast items, then the franchisee is responsible for its license for full compliance. 1
6 III. DAYBREAK CAFÉ BREAKFAST STANDARDS A. HOURS This standard applies to every Days Inn without an on-site restaurant offering breakfast. An on-site restaurant is defined as one where the guest does not need to leave the building in order to enter the restaurant. The Daybreak Café breakfast must be available for a minimum of three hours between the hours of 6:00am to 10:00am, seven days a week. A sufficient amount of breakfast items must be available to meet guest occupancy demands for the entire three hours. Hours of operation must be posted and visible in the breakfast area a customized sign magnet can be purchased as part of the Daybreak Café sign program (see Section IV). Guests must be notified of breakfast hours upon check-in. All breakfast signage must be produced by an approved vendor. Handwritten posters or signs are NOT ACCEPTABLE AND MUST NOT BE USED. B. PRESENTATION Presentation of all breakfast items and display counters must be arranged in a professional manner. All food items and beverages MUST BE FRESH - no exceptions. In the event standalone tables are used to supplement built-in displays, fitted spandex table coverings must be used effective June 1, All properties must utilize the merchandise displays, equipment and supplies specified in this guide (see Appendix 1A and 1B). The following items are PROHIBITED in the Daybreak Café breakfast area: the use of paper or cardboard disposable boxes/containers for presentation purposes, the use of plastic wrap or plastic bags for presentation purposes and the use of bed sheets as table cloths. 2
7 III. DAYBREAK CAFÉ BREAKFAST STANDARDS C. SEATING Seating must meet occupancy demands at maximum periods. A minimum seating capacity equal to 20 percent of the total number of guest rooms is required. For example, if a property has 100 rooms, there should be seating for a minimum of 20 people. Café, Bistro or Commercial quality armless chairs with exposed wood frame are required. Chairs may have an upholstered seat (high quality vinyl acceptable as form of upholstery). An upholstery protector such as Scotchgard is highly recommended to repel liquids and block stains. Banquet or "stacking" chairs, plastic furniture or guestroom chairs are NOT ACCEPTABLE. Café, Bistro or Commercial quality tables with a pressure laminate top and self-edging are required. Tables should measure 36 x 36 or 24 x 30. Banquet tables are NOT ACCEPTABLE. The Daybreak Café breakfast area must be kept clean and organized. It is highly recommended that you designate a separate room for the breakfast. To enhance ambiance, include live plants and flowers (artificial items are NOT ACCEPTABLE). All artwork must coordinate with the overall design of the space and be suitably framed. A uniformed staff member with name badge must maintain the Daybreak Café breakfast display in order to restock food and beverage items as needed and to ensure that the area is kept orderly and clean during breakfast hours. If the assigned staff member is also responsible for managing the front desk during the breakfast hours, the property must ensure that the front desk is not left unattended at any time. See Section IV for presentation details. 3
8 IV. PRESENTATION AND SIGNAGE The backdrop signage has been designed to convey a consistent high quality representation for the Daybreak Café while creating visual effect that is unique to the brand. Various configurations of the Daybreak Café merchandise are available to accommodate your existing space (see Appendix 1A and 1B). You must purchase and display the mandatory Daybreak Café backdrop signage. X X BREAKFAST HOURS 6:30 AM TO 10 AM All old signage must be removed no later than June 1, NO EXCEPTIONS will be made. If you have insufficient countertop space, we suggest purchasing substitute units from MityLite. Reveal multi-function tables create an upscale look and match any design requirement through a variety of sizes, surfaces, and frame finishes. 9 V. DISPLAY EQUIPMENT & MERCHANDISE Along with the Daybreak Café signage, Days Inns - Canada has created a merchandise program to best showcase your breakfast items. The merchandise must be used by all properties to create a consistent look across the brand. Based on the dimensions of your existing breakfast area, counter space and the design scheme of your breakfast room, you may opt to go with either the "Bamboo" merchandise program or the "One by One" merchandise program (see Appendix 1A and 1B). FOOD & BEVERAGE Effective June 1, 2015, required food items for the Daybreak Café breakfast are as follows: Minimum of one egg type: hard-boiled, fried, scrambled, patty*, omelet, etc. Pre-packaged egg products and pre-cooked omelets that can be microwaved by guests or kept at safe serving temperatures. Egg items must comply with all federal, provincial and municipal Health Department regulations and codes. Danone Yogurt Minimum of two Kellogg s cereals must be offered. Cereal may be served from bulk dispensers or bulk cereal jugs (previous standard was three cereals) Monday Thursday Raisin Bran and one other option including Special K or Rice Krispies Gluten Free Friday Sunday Froot Loops with one other option including Raisin Bran, Special K or Rice Krispies Gluten Free Quaker Instant Oatmeal Minimum of two handheld fruit selections: oranges, apples or bananas Minimum of two non-sweet baked good: toaster bread, bagels or English muffins Minimum of one sweet baked good: muffins, danish or croissant (previous standard was two baked goods) * If serving an egg patty we recommend offering sliced English muffins or bagels as a non-sweet baked item to allow guests to make an egg sandwich 6

FOOD & BEVERAGE Effective June 1, 2015, additional required items for the Daybreak Café breakfast are as follows: Freshly brewed Club Coffee regular and decaf coffee Hot water and Red Rose tea bags - regular and decaf Minute Maid Orange Juice and Apple Juice served from a juice machine, pitcher or individual containers Minimum of two milks: whole, two percent, skim or almond milk Two creamers: one non-dairy creamer and one dairy Half & Half creamers or shelf-stable creamers Sugar and sugar substitute (Sugar Twin) Condiments including Becel, butter, Kraft cream cheese, Kraft peanut butter and Kraft jam or jelly Recommended Upgrades: Chocolate Milk Additional cereals ands sweet items Kellogg s Breakfast bars Grapefruit Ketchup Salt, pepper Waffles, pancakes, breakfast meat such as bacon, sausage link or sausage patty can be offered as additional hot items 7

FOOD & BEVERAGE Equipment: All Daybreak Café signage must be produced by an approved vendor Breakfast display equipment and merchandise that meets or exceeds the items in this guide including: Minute Maid juice dispenser or approved tabletop chiller Thermoses and coffee brewer (possible coffee dispenser) Kellogg s bulk dispenser or bulk cereal jugs Toaster Napkin holder Danone Yogurt tray Quaker Instant Oatmeal merchandise rack If using a counter top fridge, must be glass front If offering hot items, must use stainless steel chafing dish with roll top lid Q: Can I serve additional food items? A: Yes, as long as all mandatory food items listed in the Standards of Operations are included (See Section VI). Q: Can I purchase breakfast items from a retail outlet like Costco or a supermarket? A: Our preferred supplier for all breakfast items is Gordon Food Service (GFS). Q: Can I use my existing platters and display equipment? A: In order to keep the presentation consistent, you must order the specified Daybreak Café merchandise. You may select the "Bamboo" merchandise program or the "One by One" merchandise program. If you have permanent merchandise that is built into your counter, please submit photos to ops@daysinn.ca for brand consideration/approval. 9

It is suggested that you forecast occupancy for ordering weekly purchases Keep storage area clean and neat to avoid spoilage.
