4 featured produce item Zucchini Item# 776 1/18 lb. crate Zucchini is a green summer squash and is a good source of vitamins A and C and dietary fiber. It can be eaten raw or cooked and can be used in baked goods, such as zucchini bread. Zucchini usually grows about 6 inches long and is best harvested when the skins are shiny and without pockmarks or other scars. Zucchini can be stored in the refrigerator or freezer, depending on your needs. Zucchini Ribbon Risotto (as seen on front cover) Ingredients: 2 tbsp olive oil 2 shallots, diced (or 1 medium onion) 4 cloves garlic, minced 1 cup Arborio Rice 1/2 cup dry White Wine 2 1/2 cups Chicken Stock 1/2 cup Parmesan Cheese 1/3 cup Mascarpone Cheese 2 medium Zucchini, cut into ribbons with a peeler 2 tbsp Basil (for garnish) salt and white pepper to taste Directions: In a large skillet heat the olive oil over medium high heat. Add the onion and saute until translucent. Add the garlic and saute for about 1 minute more. Add the Arborio rice to the skillet, making sure to stir it around in the olive oil so that each granule is coated with it, and toast it for about 3 minutes. Next add the white wine and stir the rice. Wait until all the wine has been absorbed and then start adding the chicken stock 1/2 cup at a time, making sure not to add more until the previous addition has been absorbed. Once the rice is just tender, add the Parmesan and Mascarpone cheese and combine. Add the zucchini ribbons and carefully combine into the risotto so they just barely cook down in the last minute of cooking. Remove from heat and season with salt and pepper as well as the basil and serve.

6 Sesame Crusted Tuna with POM Soy Syrup Ingredients: TUNA STEAKS- DiCarlo item# or to 8-oz. albacore tuna steaks, skin removed 3 4 tablespoons white and/or black sesame seeds 2 tablespoons canola oil salt and pepper to taste WASABI-CILANTRO-GINGER VINAIGRETTE 1 tablespoon wasabi paste 1 oz. ginger, about the size of a quarter 1/2 bunch cilantro 1/4 cup rice wine vinegar 1 tablespoon soy sauce 1/2 cup canola oil POM-SOY SYRUP 1/2 cup POM Wonderful 100% Pomegranate Juice 1 tablespoon soy sauce 1 tablespoon sugar Preparation: Tuna Steaks: Use half of the canola oil to rub the tuna. Season with salt and pepper and coat with sesame seeds. In a large sauté pan or two small sauté pans over medium heat, add the remaining oil and cook each tuna steak for about 30 seconds on each side or until the fish is cooked to your desired temperature. Slice the fish for service. Wasabi-Cilantro-Ginger Vinaigrette: Combine all ingredients except for the oil in a blender and blend until smooth. Drizzle the oil in to make the vinaigrette. If it gets too thick, add a tablespoon or two of water. Plate seaweed salad and pickled ginger (found in most grocery stores) and drizzle vinaigrette over each portion. POM-Soy Syrup: Prepare fresh pomegranate juice.* Combine ingredients in a small sauce pan over high heat. Reduce by half or until syrup consistency. Remove from pan and let cool to room temperature before serving. Drizzle over seared tuna. 100% Pomegranate Juice Item# /48 oz. refrigerated POM Wonderful 100% Pomegranate Juice. 9 Why Every Restaurant Should Post Their Menu Online A headline on the National Restaurant Association website reads in big bold letters, "The restaurant industry is fast-paced and ever changing." Like many other industries, the Internet has affected the way that restaurants operate and advertise. Besides being listed on sites like Yelp and Google Maps (which has turned into a major player in the yellow pages game), having a menu online is one of the essential steps in being found and attracting more customers. Posting a menu online provides an edge over the competition. As an article on Neuromarketing.com puts it, "menus are printed marketing pieces, much like catalogs, magazines, ads, etc." Many restaurants, whether they are franchises or small independent venues, have chosen to include a menu on their websites. Not having a menu can make your business look out of date, and therefore less competitive. From the point of view of an online-savvy customer, this lack of information is a likely deal breaker. Sybil Yang, a doctoral student at Cornell University's School of Hotel Administration, goes a step beyond and says that "menus are a way restaurants build trust between them and the guest." If your restaurant has a website (which is highly recommended), make sure that you include a menu that is easy to find. And the more detailed the descriptions in the menu, the better. You might include: * Ingredients * Prices * Daily Specials * Combos/Promotions * Nutritional Information * Other specifics; i.e., kosher, gluten-free, vegan, etc. Make sure to include your menu as high up on the page as possible. Readers tend to scan a page in mere seconds, from left to right, and are highly unlikely to scroll down to find more information. So from a marketing point of view, your best bet is to make your online menu readily available and highly visible. Another benefit of having an online menu is search engine optimization (SEO). Menus are chock-full of keywords that will pop up on search engines. It's easy content to keep up and a possible traffic-driving tool to your website. If you don't have a website for your restaurant, get one. In the meantime, you can use different online directories that offer restaurant menus, often searchable by area. These are: * Menupages * The Grub Club * All Menus * GrubHub * Seamless (for ordering online) A fast and easy way to make your menu digitally available is to make a Facebook page for your restaurant. This is a great option for restaurateurs who are on a tight budget, since it's free and also doubles as a marketing tool.
