3 Flourless Chocolate Brownie This is not a lie. It is definitely the best brownie I have EVER tasted!! I am so impressed with this simple recipe for flourless chocolate brownie. Took me only a couple of minutes to whip up and it is TRULY fantastic. Give it a whirl and you will not be disappointed. 4 large eggs 1 cup Organic raw cacao powder 1/2 cup honey 1/4 cup coconut sugar or 2 tablespoon coconut jam ¼ cup extra virgin coconut oil 2 tsp vanilla extract 1/8 tsp salt 1. Preheat oven to 180 C (350 F) 2. In a large bowl, mix all the ingredients until it will become smooth. 3. In a bread tin/loaf tin line with baking paper. 4. Pour mixture into it and bake for minutes. 5. They will seem like they aren t cooked, let them cool and allow them to set. 4 hours on the bench will do it, or 1-2 hours in the fridge. 4 Chocolate Covered Super Seed Bites This recipe combines two other recipes super seed bar with homemade chocolate. 1/2 Cup Flax Seeds 1/2 Cup Chia Seeds 1/2 Cup Almonds 1/2 Cup Sunflower Seeds 1 cup Dates 1 cup Dried Apricots 1/2 Coconut Oil Chocolate Topping 1/4 cup Coconut oil 1/4 cup Organic Raw Cacao powder Construction Instructions 1. Put it everything minus oil in a blender, blitz up into fine crumbs. 2. Press the mixture into little cupcake holders. 3. Press firming down. 4. In another bowl, melt coconut oil and add to it cacao. 5 Banana Chocolate Mousse 3! Tracy Mitchell gave me the idea for this! Thanks!! Incredibly simple and so divine. I mean definitely divine!!! All you need is 3 ingredients!! Only takes seconds to whip up. The perfect indulgent dessert for any occasion. 1/2 cup Organic Raw Cacao Powder 1/2 cup coconut oil 1 Banana Optional extras vanilla, orange rind, honey Construction Instructions 1. In a bowl melt coconut oil and mix in cacao powder. 2. Mash a banana and mix in. Then using a stick blender, food processor or whisk blitz it up until smooth. 3. 6 Chocolate Chia Mousse I am ever so slightly addicted to this. It is so quick to make, feels incredibly indulgent and its amazing for you! Really low calorie and full of amazing nutrients to fuel you throughout your day. One of the key ingredients is this chia flax seed mix I just have sitting in my fridge everyday. It is the basis of any quick snack and if you add cacao, its super delicious. Chia seed jelly ( place 2 tablespoons of chia seeds and 2 tablespoons of flaxseed in a jar, fill with water and shake. Leave in fridge overnight or until it thickens to a jelly) Organic Raw cacao powder Fresh berries Coconut Cream Crushed Nuts and cacao nibs to sprinkle on top Optional Sweetner if you want coconut jam/ honey/ maple syrup. Construction Instructions 1. Place chia seed jelly mix into a bowl, mix in as much cacao as you want. Taste test it. 2. Stir in some coconut cream. 3. Sprinkle with nuts and berries. 7 Chocolate Fruit and Nut Bark A dairy milk version of chocolate that is good for you! Yes its possible. The problem with store bought chocolate is not the chocolate but rather its the sugar and all the other ingredients. If you strip away the crap you are left with actually not much chocolate in most products. So quit buying the chocolate from the store and instead make your own. So delicious and a million times tastier than store bought crap. I made this without sugar as I like to have a little piece after dinner and sugar makes me wired and can t sleep. This batch has no sugar! 1/2 cup Coconut Oil 1/2 cup Organic Raw Cacao Powder 1 tablespoon coconut milk ( add more for more milky chocolate) Fruit and nut mix I used raisins, apricots macadamia nuts chopped up Optional sweetner Honey, coconut jam Construction Instructions 1. Melt coconut oil in a pot on the stove, remove from heat. 2. Add to it cacao and coconut cream. Stir until combined. 3. Chop up nuts and fruit and stir into mix. 4. Line a tray with baking paper and pour mix over it until a thickness you want. I did around 1cm. 5. Cover with another layer of baking paper and place in fridge until set. 6. 8 Raw Chocolate Surprise These are surprising are very simple to make. Full of nutrients and OMG these are so DIVINE!! I can t believe I just said OMG. Trust me, these are a winner that next time you feel like really making something special for yourself or your guests, this should be it. I only made 2 because I wasn t sure how they would turn out. Im glad I only did 2 as well, otherwise they would have been eaten already. Makes 2 large for Crust 1/2 cup dates 1/2 cup almonds 1 tablespoon Coconut Oil 1/4 cup Organic Raw Cacao Powder for centre 1/2 Coconut cream 1/2 Organic Raw Cacao powder To taste add in honey/maple syrup/coconut sugar/coconut jam Construction Instructions 1. In a blender place almonds and dates, blitz it up until all crumbly. Add this to a bowl with coconut oil and combine. 2. Line muffin tin with paper muffin holders, then into a muffin tin press the mixture in to make a crust. Press up the sides to the full height of paper holder. 3. In the blender, place the centre ingredients, blitz it up, then pour into the middle of crust. 4. Make a lid using the crust ingredients, and gently place in top. 5. Place in the fridge until set. I ran out of mix so I made one without a lid. But it is just as good. So if you want to make more, you could make without lid also. Page 12 Clean Eating Chocolate Recipes Page 13

9 Homemade Divine Chocolate I LOVE CHOCOLATE!!! However, most chocolate I buy from the supermarket contains some sort of sugar and it makes me wired! Since I am trying to avoid all sugar at the moment, I tend to react pretty severe. So I decided to make my own chocolate. These were divine!! Very simple to make. 1/4 Cup Organic Raw Cacao Powder 1/4 cup Coconut Cream 1/2 cup Raw Organic Coconut Oil Option Raw Cacao Butter Option Coconut Jam/Honey Option Smedgen of vanilla 1. In a pot melt the coconut oil. 2. Add in the cream and cacao powder and stir. Thats it!!..you can adjust flavours now to suit. If you want it milder add more coconut cream. 3. Pour into some little cupcake holders, or onto a lined dish. Place in fridge to allow to harden and eat. I have got mine in the freezer to make extra hard and stop me eating so much of it. 4. I split the mixture in half, because Ben doesn t like the plain version, so I added some coconut jam to his, and he was in heaven! Better than bought stuff he reckons. 5. Another variation I did was melt some raw cacao butter in a pot and used that as well as the coconut oil. Everything else the same. Created an even nicer version of the chocolate. There are many yummy variations you can do. I put some hazel nuts into some almonds, coconut, orange rind. The list is endless. It is such a simple way to make chocolate. 10 Gluten Free Hotcross Buns Easter is just around the corner, so I thought I would help you prepare and get ready for the occasion. This is my first attempt at Gluten Free Hotcross Buns and they are actually pretty good. I used coconut flour and tabioca because that s all I had. You could use all almond flour which I think will make them even better! 2 cups coconut flour/almond flour 1 /2 cup of tabioca flour 6 eggs 1 teaspoon baking powder 1 teaspoon baking soda 1/2 cup coconut oil/melted butter 1/4 cup maple syrup/honey 3 ripe bananas 1 teaspoon cinnamon 1 teaspoon mixed spice chopped dates around 20 Chocolate topping Coconut oil Raw cacao powder Coconut sugar 1. Heat oven to 160 degree celsius 2. In a large bowl add all dry ingedients. 3. Mash bananas in a seperate bowl add oil, eggs and honey. Mix until combined and add to dry ingredients. 4. Mix together and then using your hands make little buns and place on a tray lined with baking paper. 5. Cook for minutes or until golden. 6. 11 Chocolate Jelly Talk about having flash backs to when I was a kid and loving the chocolate dairy foods. They were such a treat as a kid and tasted so good. I can t believe how close this chocolate jelly tastes to them and how good it is. No dairy and no sugar!! You think im lying ah? Super good for healing the gut. It is made with gelatin which provides all the nutrients to help repair and recover the digestive system. Healing and tastes amazing! 1 tablespoon gelatin 300 mls of water 2 teaspoons organic raw cacao powder 1 tablespoon coconut cream Construction Instructions 1. Melt gelatin in boiling water.. 2. Add cacao, and coconut cream. Stir to combine and pop in fridge. 3.To make thicker you add more gelatin, and to make more chocolaty add more cacao. I personally loved it as is because I am avoiding all sugar at the moment. I made another one for Ben and dissolved some coconut sugar into his and he loved it! 12 Chocolate Macaroons Wow, my first attempt in making some macaroons and holy molly! These are so good! They also freeze well, so you can make a batch up then hide them away for your guests or for those treat days. 3 cups shredded coconut 1/2 cup honey 1/2 cup organic raw cacao powder 1/2 cup coconut milk 1/4 teaspoon vanilla extract I used Heilala Vanilla 1 egg white Pinch of seasalt 1. Preheat oven to 160 C/ 320 F. 2. In a bowl combine coconut, honey, cacao, coconut milk, vanilla. Stir through well. 3. Then in another bowl, place egg white and using a whisk, whisk it up until stiff peaks appear. Of course if you have a electric beater this will save you 5 minutes. I don t, it took a good 4-5 minutes with some solid arm whisking. Good exercise! 4. Add the egg whites to the mix. Fold through gently. 5. Using a spoon, divide mixture balls out onto lined baking tray and then press down gently. Make sure you compact each ball as you do this to ensure it is well stuck together. 6. Place in oven for 15 minutes, then turn the tray and cook for another Checking that they aren t burning. 7. Remove and cool on oven rack before eating. Page 20 Clean Eating Chocolate Recipes Page 21

13 Chocolate Coconut Rough Chocolate heaven! I LOVE chocolate!!! However last time I had some it was store bought and I ended up having to cut it out because of my digestive problems and it contained way to much sugar in even a 75% bar. However I have discovered how to make it, and that I can have some every now and then without issues. So here is my first attempt. Watch this space for more homemade chocolate recipes!! Practice makes perfect. Chocolate coconut rough was the first round. 100 grams of coconut oil 30 grams raw cacao powder 1 tablespoon coconut nectar/honey 100 grams of shredded coconut 1. In a pan heat oil and stir in cacao powder and coconut nectar. Keep stirring on a how heat until all dissolved and smooth. 2. Add in shredded coconut and place in fridge or freezer to harden. 3. Once hard, roll into balls and place in fridge to harden. Store in fridge. You can make this more or less of a chocolate by changing the amounts of cacao you add, also you can make sweeter by adding in more honey/nectar. Page 22 Clean Eating Chocolate Recipes Page 23

14 Gluten Free Chocolate Chip Cookies How good do these look! Hot from the oven, chocolate melting. Its enough to make you want to bake them straight away. I made these gluten free chocolate chip cookies up and froze the rest. I do that to keep them out of site. This way Ben won t eat them all. 2 cups almond flour 1/4 teaspoon baking soda 1/4 teaspoon salt 1/3 cup coconut oil/butter melted 1/4 cup honey/coconut nectar 1 tablespoon vanilla extract 1 tablespoon coconut cream 12 squares of quality dark chocolate chopped up 1. Preheat oven to 160 C/ 350 F. 2. Combine all dry ingredients in a large bowl and stir until combined. 3. In another bowl combine wet ingredients. Add them to the dry and stir. 4. In a separate smaller bowl, combine the liquid ingredients. Blend well. 5. Using a table spoon scoop out even amounts of dough and roll into balls. 6. Place them on a lined baking tray. Using your fingers or the back of a fork press down the cookie gently. I made my quite flat, so you choose the shape. 7. Place in hot oven and cook for minutes, keep an eye on them. Check at 10 and if you want a little browner stay till Remove from oven and cool. Page 24 Clean Eating Chocolate Recipes Page 25

15 Gluten Free Chocolate Biscotti There is something quite special about biscotti that when you dip it into your hot drink its pretty amazing! Everything in your day just stops. This gluten free chocolate biscotti recipe is incredibly simple to make. 1/4 cup coconut flour 1 cup almond flour 1/4 cup organic raw cacao powder 1/2 cup pure maple syrup 1/2 teaspoon baking soda 1/4 teaspoon salt 1/2 cup slivered almonds 1/2 cup quality dark chocolate ( chopped up with sharp knife into bits.could use chocolate chips) 1. Preheat oven to 350 F/160 C. 2. Add all the dry ingredients together in a bowl almond flour, coconut flour, cocoa powder, baking soda and salt. Stir until all combined. 3. Pour in maple syrup and stir until you get a dough. Can use hands at this point 4. Place dough on a lined dish, and mould it into shape. Mine was about 15cm/15cm, you could make it into a log. 5. Place in oven and bake for 15 minutes. Allow it to cool completely. NEXT 1. Once cooled, around 1 hour later, cut log into slices. 2. Put them back on tray on their side and cook for another 12 minutes at same heat. Keep an eye on them as I burnt my first lot at this point! 3. Allow to cool and serve. Store in airtight container. 16 Banana and Chocolate Cookies Well, this is my first attempt to make banana and chocolate cookies. I am creating clean eating cookie and it is actually not a lie, I did my clean eating carrot cookies about 6 months ago! Forgot all about them. Obviously been a while since I made cookies. May there be plenty more cookies to come! These one which I left in the oven a little too long, so slightly browner than they should have been. Master Chef on TV may have distracted me but still pretty good, if I do say so myself. I do find it amusing that I am watching a cooking show while my cookies are almost burning in the oven. They weren t all burnt after all, just threatening to be. They turned out pretty good. Well Ben tells me they were but he could be biased or too kind to tell me otherwise. So hopefully you like them :) 1/2 cup coconut flour 1 teaspoon baking soda 2 ripe bananas 4 tablespoons coconut oil 2 eggs pinch of salt 1/2 a cup of chopped up quality dark chocolate or chocolate chips 1. Heat oven to 350 F/180 C and line a baking tray with some baking paper, or grease with some coconut oil/butter. 2. Mash up banana and use a sharp knife to shred some dark chocolate. 3. Combine all ingredients in a bowl 4. Use a spoon to make small balls and place on baking tray. Then with a fork press down. 5. I like them quite chunky, so I didn t squash to low. 6. 17 Clean Eating Chocolate Mousse Want some chocolate dessert in a hurry? This clean eating chocolate mousse is tasty and really simple to make. The best thing about it is that its really adaptable. So depending on how sweet your banana is and also your sweet tooth, how much honey you need to add. Play around with flavours and make your own unique combination. 1 ripe avocado 1/2 ripe banana 1/4 cup coconut cream 2 tablespoons organic cocoa powder 1 tablespoon honey or coconut nectar 1 /4 teaspoon vanilla dash of cinnamon 1. Add all ingredients into a bowl and using a stick whiz or blender, mix until smooth. 2. Serve straight away or cover and place in fridge until needed, eat within a day though. 3. You can easily change the ingredients in this to make sweeter, depends how ripe your avocado and banana is to the outcome of the flavours so just adjust to your own taste. 18 Chocolate Sweet Potato Muffins Wow! So tasty! No grains, dairy, gluten, sugar insight and taste unreal! Could be made in a flat dish and as a brownie or even a cake.i think. Will try it next time. 1 sweet potato Good quality dark chocolate or cacao 2 tablespoons coconut oil 1/4 teaspoon baking powder 1/4 teaspoon baking soda 1/2 teaspoon cinnamon 1/2 teaspoon vanilla 3 tablespoons honey 1/2 cup coconut flour/almond flour 1/4 cup shredded coconut 3 eggs optional chopped walnuts and dates 1. Heat oven to 200 c degrees 2. Peel sweet potato and cook 3. Drain and blend cooked potato until smooth, add oil while its still hot and grate over chocolate. As much as you want the more you grate the chocolaty it will be. Stir so it melts through. 4. Add other ingredients and stir. Add more coconut and or coconut flour if needed. 5. Pour mixture into a baking tins and cook for around 15-20mins until they are cooked through and golden on top. Enjoy!!! 19 Cacao Delights Always eat real chocolate, 70% plus, avoid the sugar. Cacao is 100%! So good! Check out how simple this recipe is, you could do so many different variations on it. Play around and see what you come up with. Perfect treat! Coconut cream Cacao Shredded Coconut Dates Cinnamon 1. Chop up dates as find as possible 2. In a pot heat coconut cream and grate in cacao to it, stir until the cacao has completely melted. 3. Stir in dates, cinnamon and allow them to dissolve throughout the mixture, add coconut. Taste and see if you want to add anything else, for a sweeter mix, add more dates, or you can grate in more cacao for a deeper flavor. 4. Then pour into a dish and allow it to cool, then place in fridge so it sets. 5. Once set roll into balls and roll through coconut. 20 ForeverFit Chocolate Fudge So happy with how this turned out! It s a stunner, tastes unreal, gluten free, dairy free and no sugar or flour in sight. No baking at all!! I am keeping this in the freezer so I can just whip it out anytime I feel like it. Check out how easy it is to make. For the Base 1/2 cup Almonds 1/3 Cup Coconut 1 Cup Dates 2 Tablespoons organic 100% Cocoa For the topping 1 cup pureed Cooked Carrots 1/2 cup Coconut Milk 1/2 cup Coconut 1/2 cup Raw Cashews 1/3 cup Pitted Dates 2 Tablespoons Almond Butter 2 Tablespoons of Organic 100% Cocoa 1 Tablespoon Manuka Honey Assembly Instructions 1. Place the base ingredients into a blender and whiz it up. You want all the nuts crushed so it is a crumble like texture. Then press the mixture into a slice dish lined with oven paper. 2. Place all the topping ingredients into the blender and whiz it up. It will resemble a thick paste. Keep mixing until smooth. If it s too thick add some more coconut milk, or if too thin, add more dates and nuts. 3. Spread topping mix over base, and sprinkle with some crushed cashews if you wish. 21 Coconut Caramel Slice What could be better? Caramel, cacao and coconut! This slice is my variation on a classic slice, however in this you will find no highly refined grains and white sugar. It is made with nutrient rich ingredients which will leave you feeling satisfied and completely guilt free after this treat. For The Base 1/4 cup almond flour 1/2 cup coconut flour 1/4 teaspoon salt 1 teaspoon vanilla extract 1/4 teaspoon baking soda 1/4 teaspoon baking powder 1 teaspoon cinnamon 1/4 cup organic coconut sugar 1 egg For Caramel 2 cups coconut cream 1/2 cup honey 1 teaspoon vanilla For Top 1 cup Shredded Coconut 1/2 Cacao Nibs 1 cup Crushed Walnuts for Base 1. Preheat your oven to 175 C (350 F). 2. Mix all of your ingredients together in a bowl 3. Line a dish with baking paper and press mix into dish. I used a square slice tin, prick the mix with a fork. 4. Then bake for 10 minutes until slightly golden. 5. Remove from oven and cool completely. for Caramel Sauce 1. Add all ingredients into a pot, simmer over a low heat. 2. Stir occasionally, cook for 45 minutes until slightly golden and gooey. 3. Pour over cooled cooked base. 4. Then Spread over top the topping mix. Press the mix down into caramel and place in fridge to set. 5. Slice and store in freezer Page 38 Page 39

22 Dark Rich Orange Chocolate I love chocolate, im not going to lie, I do however not like chocolate that is really sweet. For some reason supermarket chocolate is just choca block full of sugar and very little actual chocolate. Real chocolate has huge health benefits, including increasing serotonin levels which is what makes you happy..it definitely makes me happy! Try this recipe out, add sweetener to it according to your taste buds. This is perfect to have in your fridge and you can whip up a platter with some dried fruit and nuts anytime you have some guests and you need a quick simple dessert. 1 cup coconut oil 1 cup organic raw cacao powder Grated orange zest 1/4 cup Finely Crushed Walnuts 1. In a pot melt coconut oil, remove from heat and add cacao. Stir until smooth and well combined. 2. Add in zest and walnuts, stir through. Taste and add coconut sugar according to your taste. 3. Pour into a lined container and place in fridge until set. 4. Once hard, run a knife under hot water and use this to slice the chocolate into cubes. Stir in a container in fridge or freezer. 23 Wellness Chocolate Truffles What a perfect afternoon treat for what was truly an amazing day at the 2013 Womens Wellness Experience. I hope everyone enjoyed the truffles. They really are so simple to make. 3 ingredients and I know you will agree they are Amazing!!! Cup Organic Raw Cacao Powder 1 Cup Organic Raw Coconut Oil 1/2 Cup Coconut Cream Optional Extras coconut sugar or coconut jam to taste 1. In a pan heat oil until melted, remove from heat 2. Add in cacao and stir until dissolved. 3. Add coconut cream and stir until combined, this will thicken up the mixture, keep stirring until smooth. 4. Place in fridge overnight, then roll into balls. 24 Chocolate Almond Cake I felt like something chocolatey and comforting in this winter weather. So got a little creative with some simple ingredients I had in the cupboard. This almond chocolate cake is so yummy and I even gave a piece to an unexpected guest and they couldn t believe it was gluten, grain and dairy free. The chocolate chunks sunk to the bottom on mine making this gooey chocolate layer on the bottom. So good! 4 eggs ¾ cup coconut milk 2 teaspoons vanilla essence ¾ cup coconut sugar ½ cup almond flour ½ cup coconut flour ¼ teaspoon himalayin rock salt ½ teaspoon baking soda ¼ cup shredded coconut ¾ cup crushed chocolate I used loving earth dark chocolate 1. Preheat oven to 170 C or 350 F. 2. Line a baking dish with baking paper, or grease with some coconut oil. 3. In a large bowl whisk eggs, coconut milk, vanilla and coconut sugar 4. In another bowl mix almond flour, coconut flour, salt and baking soda 5. Combine the two bowls together and blend until smooth 6. Using a sharp knife chop up chocolate into shreds 7. Pour the batter into dish and then sprinkle the chocolate on top 8. Cook for minutes Page 44 Page 45

25 Hot Coco Want a hot chocolatey drink, low in calories and incredibly satisfying? This is it. I made this the other night because I wanted a chocolatey hot drink. Real experiment, incredibly happy with the result. This recipe is to make up a jar full of the recipe. You could break it down to per cup if you want and stick to the ration of 2:1. 29 Chocolate Mint Slice Gluten Free, Grain Free, Dairy Free Do you love those mint slice biscuits you get from the supermarket, but know you shouldn t be eating them? Well they used to be one of my favs, so it inspired me to make this creation. I love peppermint flavor and when combined with chocolate, well.its pretty magical. for inside 1 cup organic raw coconut oil 2 cups unsweetened shredded coconut 2 tablespoons honey/coconut sugar few drops of organic peppermint oil/extract for chocolate outside 1 cup raw organic coconut oil 1 cup raw organic cacao powder 1 tablespoon honey/coconut sugar Instructions for coconut filling 1. In a small pan, melt coconut oil gently and stir occasionally until melted. 2. Combine oil with coconut flakes and honey/sugar in a blender (or mixer) and process until smooth. You can skip this step, and it will just create a more textured filling. I did half and half. 3. Into muffin tins divide filling evenly, around 1-2 cm full. 4. Place in freezer and allow it to set, at least 30 minutes. 5. Onceit is set remove from pan and keep cool until you need them for next stage. Instructions for chocolate coating 1. In a small pan, gently melt coconut oil on low heat. 2. Once the coconut oil has melted, stir in cocao powder and add honey/sugar. 3. Fill each muffin cup with around 2 tablespoon of chocolate. 4. Now get your solid fillings and place them on top of the chocolate in your muffin cup and gently press down gently. 5. Use the rest of your chocolate to cover the top of the filling. 6. Place in freezer and leave to set. 7. Perfect to keep in the freezer for treat days. Page 54 Page 55
