Iformatio What are allergies? Allergies occur whe the immue system produces atibodies agaist substaces i the eviromet (allerges) that are usually harmless. A food allergy is a immue system respose to a food protei that the body mistakely believes is harmful. Whe the idividual eats food cotaiig that protei, the immue system releases massive amouts of chemicals, triggerig symptoms that ca affect a perso s breathig, gastroitestial tract, ski ad/or heart. It is estimated that up to 2% of Australia adults ad 1 i 10 ifats* aged 12 moths, have food allergy ad some of them will experiece a life-threateig allergic reactio (aaphylaxis). Approximately 10 people die from aaphylactic reactios each year i Australia. * Osboure et al. Prevalece of challege prove IgE-mediated food allergy usig populatio based samplig ad predetermied challege criteria i ifats. J Allergy Cli Immuolol 2011: 127: What are the symptoms of allergies ad aaphylaxis? The symptoms of a mild to moderate allergic reactio ca iclude: - Tiglig i the mouth - Swellig of the lips, face ad eyes - Hives or welts - Abdomial pai ad/or vomitig Symptoms of aaphylaxis a severe allergic reactio ca iclude: - Difficulty breathig or oisy breathig - Swellig of the togue - Swellig/tightess i the throat - Difficulty talkig ad/or a hoarse voice - Wheezig or persistet coughig - Persistet dizziess ad/or collapse - Youg childre may appear pale ad floppy A severe allergic reactio usually occurs withi 20 miutes to 2 hours of exposure to the trigger ad if left utreated, ca be fatal. Eatig a small amout of food; playig with toys or touchig hads that have bee cotamiated by the food ca cause a allergic reactio. Page 3

Iformatio What are the mai causes? There are ie foods that accout for 90% of allergic reactios: peauts, tree uts (waluts, almods, cashews, pistachios, pecas etc.) fish, shellfish, eggs, cow s milk, sesame, soy ad wheat.) The other 10% are triggered by foods such as kiwi fruit, baaa, chicke, mustard ad celery. Peauts are the leadig cause of fatal food iduced aaphylactic reactios. Curretly, there is o cure for food allergy. Avoidace of the food is the oly way to prevet a reactio. Other allergy triggers iclude isect stigs, particularly bee stigs, medicatios, latex Why is it importat to kow about aaphylaxis? Avoidace of kow allerges is crucial i the maagemet of aaphylaxis. Schools eed to work with parets/ guardias ad childre to miimise a child s exposure to kow allerges ad reduce stigma, bullyig ad teasig that may result for some childre. Kowledge of severe allergies will assist staff ad studets to better uderstad how to help childre who are at risk of aaphylaxis. How ca aaphylaxis be treated? Adrealie (epiephrie) give as a ijectio usig a autoijector (such as a EpiPe ) ito the outer mid-thigh muscle is the most effective first aid treatmet for aaphylaxis. Adrealie (epiephrie) autoijectors are desiged so that ayoe ca use them i a emergecy. Parets/guardias should provide schools with a adrealie (epiephrie) autoijector ad ASCIA Actio Pla for their child, which should be stored ulocked ad easily accessible to staff. If a child is treated with a adrealie (epiephrie) autoijector, a ambulace must be called immediately to take the child to a hospital. How ca aaphylaxis be preveted? The key to the prevetio of aaphylaxis is: - Kowledge of childre who are at risk, - Awareess of kow allerges, ad - Avoidace of exposure to kow allerges Some childre wear a medical warig bracelet to idicate allergies. Page 4

Activity 1 Privacy cosideratios It is importat to be aware that some parets/guardias may ot wish their child s idetity be disclosed to the wider school commuity, this may also apply to the studet themselves. It is recommeded that this be discussed with the studet s parets/guardias ad writte coset obtaied to display the studet s ame, photograph ad relevat treatmet details i staff areas, catees ad/or other commo areas. TUNING IN ALLERGY AWARENESS Makig Allergies Maageable Preparatio Activity sheet 1.1 The allergy awareess quiz photocopy oe per studet Activity sheet 1.2 Recogisig a allergic reactio to food place o iteractive whiteboard or photocopy to A3 Explai that Australia has the highest icidece of food allergies i the world ad that oe i te Australia childre aged 12 moths ow has a food allergy. Stress that havig a food allergy is maageable if we are all more allergy aware because avoidig the trigger food is the oly way to prevet a allergic reactio ad we ca all help those with allergies avoid their triggers. Ask Do you kow someoe with a food allergy? Do you kow someoe who is allergic to somethig else, maybe isects like bees ad wasps, medicie like Peicilli or latex like i rubber gloves ad swimmig caps? Do you kow how may studets are affected by allergies i our school? (fid this out prior to activity). Explai that to see how allergy aware studets are they are goig to do a quiz. Studets complete Activity sheet 1.1 The allergy awareess quiz idividually or i small groups. Discuss the correct aswers ad clarify misuderstadigs Page 5

Activity 1 Ask (ad whiteboard key ideas) Were there ay aswers that surprised you? If so, why? What three questios do you thik every perso at this school should kow the aswer to so that our school is more allergy aware? Why What could you do at our school to help those people with allergies avoid their triggers? (remid them about their allergy: ot sit with someoe whe you have a food you kow someoe is allergic to; make sure you wash your hads before ad after eatig; ever share your food; ever try to trick them ito eatig food they are allergic to.) What could you do if you have a allergy to help avoid your triggers at school? What do you thik a perso might look like if they were havig a allergic reactio? (show Activity sheet 1.2 Recogisig a allergic reactio to food ad explai the differece betwee a mild ad severe allergic reactio (aaphylaxis), stressig that aaphylaxis ca be a life threateig coditio. What actio do you thik you should take if you saw someoe at school with ay of these sigs ad symptoms? (tell the perso to stay calm ad fid someoe to sit with them ad get a adult s help immediately.) How do you thik you might feel if you had a allergy? (scared, uhappy, disappoited, left out, special). What is some positive self-talk a perso with a allergy ca use to make him/herself feel better about their allergies? ( everyoe is differet ; I kow how to stay safe aroud these foods/items ; there is o eed to be scared or uhappy, I just eed to be careful ; I am lucky to have good frieds who will help me stay safe aroud these foods/items ; ca get other treats istead of food treats ; I get lots of extra love ad care from my family my allergy does t stop me doig lots of fu thigs ad My allergy makes me uique but I also share lots of qualities with others.) What are some actios you could take to let a perso with a allergy kow you are there to support them ad be their fried? (help them if they are bullied about their allergies or beig pressured ito eatig a certai food; stop them from takig risks with their eatig; help them read food labels, eat with them if someoe i the group is eatig somethig that is usafe ad they have to move away, tell them that you will get help for them if they feel sick.) (might be scared you will get bullied yourself; might ot wat to draw attetio to your fried s allergy; might ot wat to feel left out; might be scared to go ad get help if your fried looks sick.) What is some positive self-talk you could use to make sure you do the right thig? (remid yourself that beig courageous is ot always easy; remid yourself that bullyig is ot allowed at our school; remid yourself that good frieds stick up for each other; remid yourself that gettig a adult s help is the school rule whe someoe looks like they are havig a allergic reactio; remid yourself that actig fast is the safest optio; remid yourself of what could happe if you do t do the right thig. Why do you thik we are learig about allergies? (because beig more aware of what triggers cause allergies ca help those who have a allergy avoid these thigs ad help others kow what to avoid eatig or usig aroud people with allergies. Whe people are aware of the symptoms of a allergy they ca act quickly to avoid a emergecy. There is o cure for allergies. Avoidace is the oly way to prevet a reactio.) Studets write a summary of this discussio i their ow words ad the prepare prompt cards ad illustratios to use to help them with a discussio with their buddy class studet (or other youger studet) about allergy awareess e.g. The three most importat thigs kids i Year 1 eed to remember about keepig yourself or others safe from allergies. Sed Paret Iformatio sheet 1 Beig allergy aware home with studets ow ad a iformatio letter to parets if there are ay studets i your class with kow allergies (see page 12 for sample). Leave extra copies i the school foyer, library ad pick up areas. Page 7

Paret Sheet 1 Paret Iformatio Beig allergy aware Dear family We are coductig a allergy awareess program i our classroom as part of our school health educatio program. Here are some facts to help you discuss allergy safety with your child ad some tips o what you eed to do to help your child at school if he/she has a kow risk of aaphylaxis. What are allergies? A allergy is whe the immue system reacts to substaces (allerges) i the eviromet which are usually harmless (e.g. food proteis, polle, dust mites). What is aaphylaxis? Aaphylaxis is a severe allergic reactio that is potetially life threateig. What causes aaphylaxis? Aaphylaxis is most commoly caused by food allergies. Ay food ca cause a allergic reactio, however ie foods cause 90% of reactios i Australia, these are: Peauts Tree uts (e.g. hazeluts, cashews, almods) Egg Cow s milk Wheat Soy Fish Shellfish Sesame. Page 12

Paret Sheet 1 Other causes of aaphylaxis iclude: Isect stigs ad bites Medicatios Latex Excercise. What are the sigs ad symptoms? Mild to moderate allergic reactio Swellig of lips, face, eyes Hives or welts Tiglig mouth Abdomial pai, vomitig (these are sigs of a severe allergic reactio to isects). Aaphylaxis (Severe Allergic Reactio) Difficult/oisy breathig Swellig of togue Swellig/tightess i throat Difficulty talkig ad/or hoarse voice Wheeze or persistet cough Persistet dizziess or collapse Pale ad floppy (youg childre). How ca aaphylaxis be preveted? There is o cure for food allergy. The key to the prevetio of aaphylaxis is: Kowledge of childre who are at risk, Awareess of kow allerges, ad Prevetio of exposure to these allerges. How ca aaphylaxis be treated? Adrealie (epiephrie) give as a ijectio usig a autoijector (such as a EpiPe ) ito the outer mid-thigh muscle is the first aid treatmet for aaphylaxis. Page 13

Activity 2.1 What ca you do if your child is at risk of aaphylaxis? Iform staff of your child s allergies ad discuss risk miimisatio strategies Work with staff to complete a Idividual Aaphylaxis Health Care Pla Provide the school with a copy of your child s ASCIA Actio Pla that has bee completed by a doctor ad has a up-to-date photograph Supply your child s adrealie (epiephrie) auto ijector ad esure it has ot expired. What ca you do to help your child support a classmate who is at risk of aaphylaxis? Talk to you child about ot sharig food with other childre Talk to your child about washig hads before ad after eatig Talk to your child about the sigs ad symptoms of aaphylaxis ad the importace of gettig a adult s help if they see ayoe with these symptoms. Adapted from Aaphylaxis Fact sheet WA Departmet of Health ad developed by Allergy & Aaphylaxis Australia For more iformatio see FINDING OUT Food labellig for allergies Preparatio Activity sheet 2.1 Readig Igrediet lists photocopy oe per studet Clea, empty food packagig e.g. boxes, bottles ad plastic cotaiers Teachig tip Esure that the empty food packages are free of ay food (icludig crumbs or smears). Explai that while beig able to read the utritio iformatio pael ad igrediets list o packaged foods is a healthy skill for everyoe to have (because it gives us valuable iformatio about the kilojoules or eergy; fats; salt ad sugar i the food so we ca make healthier food choices), it is a lifesavig skill for people with food allergies. Explai that the ie foods that are resposible for 90% of all severe allergic reactios (peauts, tree uts, seafood, fish, cow s milk, eggs, soy, sesame ad wheat must always be listed o the igrediets list of packaged foods if they are preset, o matter how small the amout. Page 14

Activity 2.1 Explai that some labels iclude may cotai... statemets for allerges (e.g. may cotai traces of peauts ad tree uts ) if there is a chace of allerges beig preset due to shared equipmet or cross cotamiatio. It is ot a legal requiremet that maufacturer s do this so a product that does t have a may cotai statemet might ot be safer tha oe that does. Stress that readig food labels ca ofte be a cofusig task for people with food allergies because the foods are ofte listed i scietific ames ot the everyday oes. Read through Activity sheet 2.1 Readig Igrediet lists with studets. Studets complete the matchig activity idividually. Aswers: (peaut groudut),(tree ut pistachio, almod, walut), (egg- albumi), (milk casei, hydrolysed whey), (fish tua, achovy, salmo), (shellfish crayfish, praws, crab), (wheat glute),(soy tofu), (sesame tahii) Distribute empty ad clea boxes ad bottles of packaged foods ad ask studets to idetify from their Igrediets List o their item: - The amout of Kilojoules/100g - The amout of fats/100g - The amout of salt/100g - The amout of sugar/100g - Ay allerges or traces of allerges - Ay alterate or scietific ames used istead of the everyday allerge food ame. Record ad graph the results as a whole class activity ad discuss results. Ask or coduct a Thik, pair, share Tell your parter what you leart from this activity Why do you thik it s so importat for people with food allergies to read the labels of packaged foods every time they eat that food, ot just the first time they eat it? (because the maufacturig process may have chaged from the first time they ate this food.) How could you help a fried with a food allergy always remember to read the label before eatig a packaged food? Why do you thik the rule No adrealie (epiephrie) o eat is particularly importat if someoe with a food allergy is ot sure what is i a food item? Page 15

Activity 2.1 Readig food labels is oe way that food allergies ca be avoided. Remid me agai of some other thigs that everyoe ca do to help those with food allergies avoid their allerge? (remid them about their allergy; ot sit with someoe whe you have a food you kow someoe is allergic to; make sure you wash your hads before ad after eatig; ever share your food; ever try to trick them ito eatig food they are allergic to.) Food labels are oe reliable source of iformatio about food allergies. Where else could a perso with a food allergy get iformatio? (parets, doctors, hospital staff, the media, Allergy & Aaphylaxis Australia pamphlets, the iteret) - Whiteboard resposes. With your parter, rak these sources of iformatio from most reliable (1) to least reliable (5) Discuss resposes ad clarify that Allergy & Aaphylaxis Australia ad other govermet departmet sites may be more reliable tha persoal blogs ad uploads o YouTube. Studets devise a way to explai to a youger studet with a food allergy how readig food labels; usig the No adrealie (epiephrie) o eat rule ad accessig reliable iformatio ca help them stay safer. Studets make a persoal spellig list from ay ew or difficult words from the Activity sheets. At Home Activity: Studets locate three utritio iformatio paels o packaged foods at home ad explai to their family/caregivers the foods that are allerges. Page 16

Activity 2.1 READING INGREDIENT LISTS Readig the Igrediet list o packaged foods is a skill that helps us make healthy food choices but it takes some practise. It is particularly importat that people with food allergies read the igrediet lists of packaged food because this will help them avoid the foods they are allergic to. Tips for everyoe: First thigs first: I ay list, the biggest igrediets must be listed at the top. Beware of foods that start out with sugars (like sugar, cor syrup, ad sucrose), fats ad oils (vegetable oil, soybea oil), ad salt. If these igrediets appear early i the igrediet list, the food is probably ot a healthy choice. Shorter is better: Healthier food usually has a short list of atural soudig igrediets ad ot too may igrediets which soud like chemicals. (help them if they are bullied about their allergies or beig pressured ito eatig a certai food; stop them from takig risks with their allerge or eatig; help them read food labels, eat with them if someoe i the group is eatig somethig that is usafe ad they have to move away, tell them that you will get help for them if they feel sick.) Ask What are some thigs that might stop you from doig the right thig i these risky situatios? (might be scared you will get bullied yourself; might ot wat to draw attetio to your fried s allergy; might ot wat to feel left out; might be scared to go ad get help if your fried looks sick.) What is the most importat actio you ca take if you see someoe havig a allergic reactio? (tell the teacher or perso i charge immediately so they ca follow the studet s Actio Pla which may mea admiisterig their adrealie (epiephrie) autoijector (such as a EpiPe ) Studets form small groups ad assig oe sceario from Activity sheet 3.1 Takig actio ad large evelope to each group. Ask studets to paste their sceario to their evelope. Give groups three to five miutes to cosider their sceario ad braistorm a rage of solutios to their problem. The solutios are listed ad eclosed i their evelope. Studets pass their evelope to the ext group ad the process is repeated. Remid studets ot to read the solutios idetified by the previous group. Repeat the process util groups have completed all the scearios. Groups the review all the ideas suggested i their evelope ad decide which solutio/s would be the most effective or the oe they would feel cofidet to use ad preset fidigs to the class. Each group presets their solutio as a role play. Page 20
