3 what s INSIDE Peppermint Stick Brownies Ingredients 2 sticks unsalted butter, cut into small pieces, plus more to grease pan pound bittersweet chocolate pieces tsp pure peppermint extract 4 large eggs ¾ cups packed light brown sugar tsp fine sea salt peppermint sticks, crushed (1/3 cup) Instructions Step 1 Preheat oven to 350. Butter a 9x13 inch baking pan and line with parchment paper; allow 2 inches of overhang on the long sides. Step 2 In a heatproof bowl, combine two-thirds of the chocolate with the 2 sticks butter. Set the bowl over a pot of simmering water and stir until melted. Scrape the chocolate into another bowl and let cool slightly. Add the remaining chocolate pieces and peppermint extract to the heatproof bowl and melt over the simmering water; remove from the heat and let cool slightly. Step 3 In medium bowl, whisk the eggs with the brown sugar until combined. Whisk in the chocolate-butter mixture until glossy and thick. Sprinkle the flour and salt into the bowl and stir until just incorporated. Spread the brownie batter in the prepared baking pan. Dollop the peppermint chocolate onto the brownie batter and swirl in with a table knife. Step 4 Bake the brownies in the center of the oven for 15 minutes. Sprinkle the crushed peppermint sticks on top and bake for 10 to 15 minutes longer; until the edges are set and a toothpick inserted in the center comes out with a few moist crumbs. Let the brownies cool in the pan for at least 2 hours. 10 Sysco s Chefs Present Brussel Sprout Salad with Cider Vinaigrette Ingredients: 1 tbsp. plus 1 tsp olive oil, divided ¼ cup apple cider vinegar lb Brussel sprouts, halved tsp Dijon mustard Gala apple, cut into ¼ inch slices ½ tsp sea salt, or to taste yellow onion, cut into 1 inch chunks Freshly ground black pepper ½ tbsp. pure maple syrup tbsp. olive oil Instructions: Heat oven to 400F. Grease a baking sheet with 1 tsp oil. In a bowl, combine brussel sprouts, apple, onion and remaining 1 tbsp. oil; toss to coat. Roast on baking sheet, turning once, until sprouts are brown and tender, 25 to 30 minutes. In a food processor, mix all dressing ingredients together except for oil. Continue blending and slowly drizzle oil in until incorporated. Season with additional salt and pepper to taste. Plate with spinach, sprout mixture, blue cheese and dressing over top. 10

11 Sysco s Chefs Present Fig, Brie and Prosciutto Flatbread Ingredients: 8 oz. pizza dough Olive oil ounces brie fresh figs 3 oz prosciutto, sliced paper thin tsp fresh rosemary, finely chopped Zest of 1 orange Salt and freshly ground pepper and Instructions: Roll dough to 1/8 inch thickness. Brush with olive oil and pre-bake until barely golden in color, about 6 minutes. Remove from oven and cool for 2 to 3 minutes before adding toppings. Scoop softened brie from rind and spread over crust. Sprinkle orange zest and rosemary over brie. Scatter quartered figs over top and arrange prosciutto among them. Top with some cracked black pepper. Bake for 6 to 8 minutes until crust is crisp and figs are beginning to caramelize. Allow to cool 5 minutes before slicing. 11

Season with salt & pepper, roast in 375F oven until lightly browned. Set aside. Combine the demi glace and beef short rib, braise in 300F oven until heated through Place roasted vegetables on plate. 17 Sysco s Chefs Present Faroe Island Salmon Over Broccolini Ingredients: 4 oz salmon filet tbsp vegetable CharCrust oz fresh broccolini oz lemon herb vinaigrette oz tomato chutney oz butter base sauce Instructions: Lightly coat salmon filet with vegetable char crust Place on char grill, cook approximately 2 minutes each side, set aside. Dress broccolini with lemon herb vinaigrette Grill broccolini until cooked through, approximately 3 minutes Combine butter sauce and tomato chutney, bring to a simmer and reduce until slightly thickened. Place sauce on bottom of plate, top with broccolini, then salmon filet. Serve immediately. 17
