Nearly every bodily function needs water to operate. Even though cucumbers are considered vegetables, they are actually the fruits of a vegetable plant. They are in the same family as gourds, melons, pumpkins and squash. The expression cool as a cucumber has science behind it. The inside of a cucumber can be up to 20 degrees cooler than the outside. Edamame is a source of vitamin C, protein, iron, calcium and fiber. It s the only vegetable that contains all nine essential amino acids. Steam or boil before eating. Edamame first appeared in Japanese literature in 1275AD. It is commonly used in Chinese, Japanese, Korean, Indonesian, and Hawaiian cuisine, but started its popularity in mainland U.S. in Edamame grow well in many parts of the U.S. The University of Nevada, Reno is an EEO/AA institution. It s believed that grapefruit was an accidental hybrid between the pummelo and sweet orange. The first American grapefruit seedlings grew in Florida around A Jamaican farmer named grapefruit when he realized they grew in clusters like grapes. The Grapefruit Diet became popular in the 1930s. Green beans are considered an edible pod bean rather than a shell bean, and can be green, purple/red,or yellow. Green beans have been cultivated for 8,000 years. They originated in Guatemala, Honduras, parts of Costa Rica and southern Mexico. They were in North and South America long before European explorers ever arrived. It does not grow in the U.S. The jicama s skin, leaves, vines and flowers contain a natural insecticide called rotenone and can be toxic. Only the peeled root should be eaten. Jicama can be cooked or eaten raw. It stays crisp after cooking. Try it sliced with lime juice and chili powder. Jicama is an excellent source of vitamin C to fight infections and heal wounds. Kiwi is an excellent source of vitamin C for fighting infections and healing wounds and of vitamin K for blood clotting. Vitamin C is only found in plant foods. Kiwis are actually berries that grow on vines as much as 30 feet long. Kiwi skin is edible and a kiwi can be eaten like an apple. Lemons originated in Northern India, while limes are originally from Malaysia. Lemon was added to the Crayola crayon box in Citrus fruits are high in vitamin C which fights infections and heals wounds.
