2 INTRO Pisco is a city in the Ica Region of Peru. Located on the Pacific coast, south of Lima, Pisco has a combination of altitude, weather and soil that creates fantastic conditions to grow wine grapes. The name orginates from a Quechua word that means bird. Pisco is also the Peruvian national spirit. It is produced using a similar method to brandy, by distilling wine fermented from the fresh must of eight specific varieties of vines. It is a clear spirit (unlike brandy, normally barrel-aged) which was developed by Spainish settlers in the 1th century out of the need to concentrate alcohol volume in order to transport it to remote locations. Peru s Pisco has three types: Pisco Puro, made 0% from a single approved grape variety; Acholado, a blend of two or more varieties; and Mosto Verde, produced from grape must that has not yet completed fermentation. At LIMA we use our own brand of Pisco supplied by Bodegas Viñas de Oro and have the following varieties: Quebranta - Strong with apple, green mango and toasted aromas. Moscatel - Sweet and fruit taste with pears, grapes and daisies. Italia - Orange and lemon blossoms, white raisins and geranium. Torontel - Intense fruit and floral aromas. Subtle and elegant taste. Negra Criolla - Fruit aromas with a hint of chocolate. Albilla - Spice and herbal notes with chamomile Acholado - Tropical sensations with a toasted touch.
