11 Chemicals Cleaners & Sanitizers Alconox Detergent 4 lbs B-Brite Cleanser BTF Iodine Sanitizer Citric Acid Fisan Brite B-Brite - Cleanser - Dissolve one tablespoon of B-Brite per gallon of warm water. Wash equipment with B-Brite solution and then rinse with clear, cold water. Cleans with active oxygen. Does not contain chlorine or bisulfite. 8 ounces makes 15 gallons. 8 ounces 5 lbs. Iodine Sanitizer - When diluted 1 oz. to 5 gallons of water, it can be used to sanitize equipment when allowing 1 minute contact time. A powerful sanitizer. Reduces spotting, filming and streaking in warm or cold water (not for use in hot water.) It's odorless, tasteless and is easy on the hands. Citric Acid is used for sanitation and acid adjustment. 4 ounces 32 oz. 1 gallon **To prepare a sanitizing solution dissolve 3 grams of potassium metabisulfite and 12 grams of citric acid in 1 gal of water. 12 Chemicals Winemaking Chemicals A blend of Citric, Malic and Tartaric Acid used to increase the acidity of wine. Acid Blend 3 ounces 1 lb. 5 lbs Ascorbic Acid Ascorbic Acid, Vitamin C, is sometimes added to white grapes to prevent browning from oxidation. Dosage is 3-5 oz. per ton. Also, added to white wine prior to bottling to add crispness. 1 lb. 8 lbs. 50 lbs Calcium Carbonate Calcium Carbonate is used to reduce acidity in must and wine. 2.5 grams per gallon should lower acidity of 1 gal. by 1 ppm. 1 lb. 8 lbs. 50 lbs Campden Tablets Each Campden Tablet contains.44 grams of sulphite and will bring a gallon of must to about 30 ppm free SO2. They should be crushed and added to a little juice or warm water, stirred until dissolved, then stirred into wine or must. Dissolve in water before adding to wine. 3 ounces 1 lb. 10 lbs. 50 lbs Cream of Tartar Cream of Tartar is used to remove tartrate crystals from wine. 10 lbs. 50 lbs Fumaric Acid Fumaric Acid can economically acidify wine with no detectable difference in flavor. It also prevents secondary fermentation after bottling and can act as a clarifier when low concentrations of copper and iron are present. 50 lbs Effergran 5 Effervescent granulated metabisulphite for sulfiting casks, barrels and small tanks. When added to wine, it rapidly dissolves on the surface of the liquid, assuring that its antioxidant effect is maintained where it is needed. Subsequently, it assures homogenous and rapid distribution of the released SO2 without requiring any mechanical action. Each packet of Effergran Dose 5 liberates 5 grams of SO2. The pre-dosed packaging reduces the risk of incorrect addition. 1 Box/ 25 packets Glycerine Glycerine is a non fermentable additive used to smooth, sweeten and mellow wines. Cold water soluble. 4 ounces 1 lb 10 lbs Pluxbenton N Granular sodium bentonite. PLUXBENTON N combines a very good clarifying effect with an excellent protein removal property. PLUXBENTON N is also very effective in reducing riboflavin, the molecule responsible for the lightstruck defect in white wines. Dosage: g/100l or lb/1000gal 20 kg Pluxcompact A bentonite obtained by a special procedure: its activation rate is designed to produce a protein removal efficiency comparable to that of sodium bentonite with lees volume generation similar to that of calcium bentonite. It is advised for clarification of all wines (white, red and rose) when reduction of bitterness as well as oxidative and herbaceous characters are desired without adversely affecting the structure of the wine. Moreover, it improves brilliance and filterability of wines which are difficult to filter. Liquid 2 oz. 15 Winemaking Chemicals Fining Agents Potassium Caseinate Protoclar PVPP Polyclar Silica Sol Sil Floc Sparkalloid Super Kleer KC Pure potassium caseinate containing over 90% protein. Manufactured by a special method designed to produce a product meeting the specific requirements of the wine making industry, PROTOCLAR dissolves readily in water, without forming lumps and causing minimal foaming. Dosage: g/100l or lb/1000gal 1 kg. 25 kg. Polyvinylpolypyrrolidone used for clarification and reduction of bitterness caused by oxidation. It is highly effective in removing oxidized and oxidative poly phenols. It s thus recommended to prevent and to cure oxidation in all wines Dosage: gr/gal 2.5 lbs. or 1 kg A stable pure silicon dioxide in aqueous dispersion. SIL FLOC contains homogeneous negatively charged particles of silicon dioxide. The ultra-fine size of the dispersion offers a very large specific contact surface and consequently great clarification efficacy in combination with protein fining agents. Solution ph Dosage: ml/100l or L/1000gal 10 kg. 25 kg Red and white wine fining agent. Dissolve 1 tsp in 1 cup boiling water for 5 minutes. Add mixture to 6 gal wine. It is recommended for the prevention and curing of oxidative phenomena associated with phenolic components of must and wine. Wines treated with Claril SP have a more intense and elegant nose, and possess a better aging capacity. It can also be used to increase clarity and reduce bitter sensations. Dosage: gr/100l or lb/1000gal 10 kg Blend of bentonite, gelatine, egg white and activated carbon. It can be used to treat white, rosè and red wines as well as juice. It ensures fast and thorough clarification, and minimal amounts of lees. The combination of several organic clarifiers improves the organoleptic features of the wine while the bentonite ensures the proper protein stability. The product gives red wines remarkable stability, without affecting color. It also facilitates wine filtration. Dosage: gr/100l or lb/1000gal 1 kg Protomix Blend of bentonite, potassium caseinate and cellulose particularly suited for the clarification of juice and white wine. Protomix enhances white wine quality through the elimination of oxidized polyphenols. When added during fermentation, it also provides a support for yeasts, helping their metabolism. It is ideal for softening pressing wines and young red wines that have excessive astringency at the front of the palate. White wine Dosage: 2-4 gr/100l or lb/1000gal Red wine Dosage: 8-15 gr/100l or lb/1000gal 20 kg Clargel High molecular weight liquid gelatin. Very effective for clarifying both juice and quality wines. Practical alternative to warm soluble gelatin and egg albumin. White wine Dosage: ml/100l or L/1000gal Red wine Dosage: ml/100l or L/1000gal 1 Liter 25 kg Finegel Concentrated solution containing 200 g/l of high quality fish gelatin. In white wines, it s very effective in reducing the oxydative and vegetal characters. In red wines, Finegel eliminates hard tannins and improves wine finesse, roundness and fruity aromas. It s also helpful in color stabilization. It can be used for the clarification of wines destined for markets which prohibit treatment with substances of bovine or porcine origin. Dosage: ml/100l or L/1000gal 1 Liter 20 Liters Goldenclar Heat soluble gelatin in thin sheets suitable for the fining of high quality wines. This gelatin is characterized by a high molecular weight and a high charge density. It is recommended for softening and refining high quality red wines. White wine Dosage: 2-4 gr/100l or lb/1000gal Red wine Dosage: 8-15 gr/100l or lb/1000gal 1 kg Hydroclar 30 30% liquid solution of food grade gelatin. This medium hydrolyzed gelatin can be successfully used for clarification of juice and wines, and for removing excessive astringency. 45 Winemaking Equipment Della Toffola Della Toffola - Open Presses DELLA TOFFOLA pneumatic presses are fitted with a tubular membrane made of non-toxic material, attached to a winged supporting element; this membrane (which always remains basically in the middle of the drum) and the supporting element are then mounted on the axle of the stainless steel perforated drum. One of the most particular features of these presses concerns the holes punched in the drum through which the strained must emerges. In traditional presses, these holes cover only 50% of the drum's surface at most, whereas in the models made by DELLA TOFFOLA they occupy the entire surface, effectively doubling the must straining area. When it comes to the pressing action, the membrane does not expand on either side of the drum (as is usually the case), it presses evenly against the entire inside wall of the drum. The exceptional advantages offered by this solution are immediately apparent, in terms of must output and economy of operation by comparison with conventional machines: 1) the straining surface area is doubled for the equivalent size of press; 2) the total pressing time is drastically reduced, to half the usual time; the crushed grapes are exhausted at a lower working pressure, using fewer pressing and crumbling cycles, and consequently with a minimal handling; 3) inside the press, the product is distributed in an even, thinner layer and the must is strained over the entire surface of the drum. Thanks to the extremely flexible and user-friendly programming system, there are no limits to the type of grape that can be pressed. In fact, the control panel is complete with a programmable computer (PLC) for the automatic completion of all the processing stages. At the end of the working cycle, the press can quickly unload the grape marc and the cleaning of the press is made simple by the absence of any internal manifolds, which often become clogged and this makes the cleaning procedure far more troublesome. The most interesting novelty of these models lies in these channels for the runoff of the must. Instead of being straight, as in all the other presses, the channels in the PFC models made by DELLA TOFFOLA are round - or rather they are circumferential. These perforated grids assure a fast and effective, unhindered straining action all around the circumference of the drum. The must can consequently flow smoothly through these channels, without any clogging and thus guarantees an effective and continuous cleansing of the straining holes. It is easy to see the exceptional return in terms of output and economy of operation that this solution offers by comparison with a conventional machine: 1) the straining surface area is doubled for the equivalent size of press; 2) the total pressing time is drastically reduced, to half the usual time; the crushed grapes are exhausted at a lower working pressure, using fewer pressing and crumbling cycles, and consequently with a minimal handling; 3) inside the press, the product is distributed in an even, thinner layer and the must is strained over the entire surface of the drum. Thanks to the extremely flexible and user-friendly programming system, there are no limits to the type of grape that can be pressed. In fact, the control panel is complete with a programmable computer (PLC) for the automatic completion of all the processing stages. At the end of the working cycle, the press can quickly unload the grape marc and the cleaning of the press is made simple by the absence of any internal manifolds, which often become clogged and this makes the cleaning procedure far more troublesome. The washing procedure is also facilitated by a specific oversized hatch that makes it easier to access the inside of the drum. 46

47 Della Toffola - Sorting Lines Winemaking Equipment Della Toffola The new grape sorting lines are used to facilitate the manual grape sorting procedure required before the grapes are crushed or pressed: this has become increasingly necessary and important to companies seeking to achieve the best quality for their wines. These lines are particularly suitable for: - automatically spreading and leveling the grapes on a flat surface so that it is quicker and easier for operators on either side of the line to complete the manual sorting procedure; - manually separating the mass of grapes from fragments of foliage, branches, bunches with grapes that are damaged or show signs of anthracnose, stalks, etc. The lines consist of the following units, in the following order: - a vibrating metering device for draining off and collecting any free-flowing must; - a sorting table with a non-toxic rubber conveyor belt, where operators on either side can quickly and easily sort through the grapes by hand; - an elevator belt that is adjustable in height and is complete with a hopper for collecting the grapes coming from the sorting table. A destemmer-crusher or a press can be placed at the end of these lines for the subsequent extraction of the must. 47

52 Yeast, Nutrients & Enzymes Wine Yeast, Lalvin Lalvin EC 1118 The EC-1118 strain was isolated, studied and selected from Champagne fermentations. Due to its competitive factor and ability to ferment equally well over a wide temperature range, the EC-1118 is one of the most widely used yeasts in the world. Oenological properties and applications The fermentation characteristics of the EC-1118 extremely low production of foam, volatile acid and hydrogen sulfide (H2S) make this strain an excellent choice. This strain ferments well over a very wide temperature range, from 10 to 30 C (50 to 86 F) and demonstrates high osmotic and alcohol tolerance. Good flocculation with compact lees and a relatively neutral flavor and aroma contribution are also properties of the EC The EC-1118 strain is recommended for all types of wines, including sparkling, and late harvest wines and cider. It may also be used to restart stuck fermentations. 5 grams for 5-6 gallons juice 1.10 Wine Yeast, Red Star Red Star Côte des Blancs Red Star Pasteur Champagne Red Star Pasteur Red Red Star Côte des Blancs (Davis 750), a strain of Saccharomyces cerevisiae, has been derived from a selection of the Geisenheim Institute in Germany. It is a relatively slow fermenter, identical to Geisenheim Epernay, but producing less foam. This yeast requires nutrient addition for most chardonnay fermentations. Côte des Blancs produces fine, fruity aromas and may be controlled by lowering temperature to finish with some residual sugar. It is recommended for reds, whites, sparkling cuvées and non-grape fruit wines (especially apple, it is reported). Ferments best between C (64-86 F). Sensitive below 13 C (55 F). 5 grams for 5-6 gallons juice Red Star Pasteur Champagne (Davis 595), a strain of Saccharomyces bayanus, has been derived from a pure culture slant of the Institut Pasteur in Paris. This strain has been widely used in the U.S. since It is a strong fermenter with good ethanol tolerance, and will readily ferment grape musts and fruit juices to dryness. This strain also has good tolerance to free sulfur dioxide. This strain is recommended for all white wines, some reds and for fruit juices. Although this yeast is somewhat flocculent, it is not commonly used for sparkling wine. Pasteur Champagne has been recommended, by several sources, for restarting stuck fermentations. Ferments best between deg. C, (59-86 deg. F). 5 grams for 5-6 gallons juice Red Star Pasteur RedTM (Davis 904), a strain of Saccharomyces cerevisiae, has been derived from the collection of the Institute Pasteur in Paris. It is a strong, even fermenter that produces full bodied reds. This yeast encourages the development of varietal fruit flavors, balanced by complex aromas, especially when using grapes of the Cabernet family. It may be necessary to cool the fermenting must to prevent unwanted temperature increase. This yeast is reported to give character to less robust red grapes, or those picked before optimum development grams for 5-6 gallons juice 1.00 Red Star Premier Cuvée Red Star Premier Cuvée (Davis 796), a strain of Saccharomyces bayanus from a French wine yeast, is a special isolate of Red Star Yeast & Products. This yeast has good tolerance to ethanol and free sulfur dioxide, and ferments to dryness. Premier Cuvée is noted as a very low producer of foam, urea, and fusel oils. It is recommended for reds, whites and especially champagne. This yeast is reported to perform well restarting stuck fermentations.
