2 Ordering Dormant Grape Vines The Beverage People has ordered dormant bare-root grapevines for our fourth season. We will be carrying the following varities from mid-april until we run out. Make your selection from: Cabernet Sauvignon (Clone FPS06) Chardonnay (Clone FPS37) Merlot (Clone 181) Pinot Noir (Clone FPS23) Syrah (Clone Shiraz FPS06) Zinfandel (Clone FPS01A) Most vines are grafted on rootstock, which is Phylloxera resistant and widely adapted for different soil types and growing environments, including clay soils. Although not drought resistant, you can plant your vines to grow anywhere you can irrigate them. Vines from our stock program require a minimum order of 5 plants, priced $5.95 per vine. Vines from the stock program are available now. Other varieties, clones, and rootstocks are available with a minimum order of 25 vines of any one kind. Call for availability and allow three weeks for special orders for vines to arrive at our store. Prepaid orders of 25 vines are $4.95 per vine plus UPS shipping charges if not picked up at the store. Wine Competitions Deadlines Upcoming wine competitions that you may drop off entries to BP for shipping are: Orange County - May 17 ( Marin County - May 29 (marinfair.org), and Ca State Fair - June 21 (bigfun.org). We have entry forms at the store, except for State, which should come in May. Please include $2.50 for the shipping fee per entry for Orange County only. The other entries will be picked up by the fair personnel. PREARRIVALWINEMAKING EQUIPMENT SALE 2008 Place your orders now for our annual winemaking equipment sale. We have a great selection of the best manufactured equipment in the world from Enotecnica Pillan. Our stainless tanks are made by Lainox, also of Italy. We have presses, crushers, apple grinders and crusher/destemmers to fit the 5 gallon or even the 500 gallon winemaker. We encourage you to take advantage of our prearrival discount to assure you of getting the right equipment and to help you get the lowest price. Equipment prices are lower than last year, but don t wait, because after May, prices will go up 15 to 20%. For those of you out of the immediate area there are both a roller crusher and an apple crusher available for UPS shipping, as well as several sizes of small basket presses. We will be accepting orders with a 60% deposit until May 31. Your interestfree balance is due within 10 days of arrival of equipment in late July. As always, we back up this equipment with a warranty against defects and available replacement parts should you ever need them. In addition to grape equipment, we have a new Apple processor for rent and for sale. The Jaffrey apple grinder and press uses a manual flywheel to grind the apples. The pulp collects to a large, nylon mesh-lined press basket which slides under a manual Acme screw plate to squash the pulp, and release the juice. It is quite efficient for its size. NOTES FROM THE BEVERAGE PEOPLE Please note that we have 2 store closures of holidays for the staff in July 4 and 5, and December 25, through January 1. The new BP Classroom was a big success. We added 1000 sq ft. to our available space with the unit to our West, Suite 15. This is allowing us to have several configurations of classrooms dedicated all spring for our varied fermentation classes. 4 SPRING BEER RECIPE Stouts have enjoyed a real renaissance in the last ten or fifteen years as craft brewers and home brewers have explored and extended the style. Stout now occupies no fewer than six different subcategories in home brew competitions. Today s recipe is in a style that may fit better with the warming weather of springtime than some other stouts it is a Foreign Extra Stout, sometimes identified as Tropical Stout. Major British brewers (like Guiness) have long made stout to different recipes for different regions of the world. A foreign extra stout may be similar to either dry or sweet stout, but with more gravity and sometimes with additional sugars. Sail Away is in a further subcategory of sweet stouts milk stout using unfermentable lactose (milk sugar) to provide a rich, creamy flavor and smooth, full mouthfeel. It s ready for the tropics, so spring and summer in Wine Country should be just fine. It s an easy extract recipe, so there s no need to wait for winter to enjoy a great stout! SAIL AWAY FOREIGN EXTRA MILK STOUT (5 GALLONS)(EX5) 6 lbs. Light Dry Malt Extract 1/2 lbs. British Pale Malt 1/2 lb. Wheat Malt 1/2 lb. Carapils Malt 1/2 lb. Caramel 40 Malt 1/4 lb. Black Patent Malt 3/4 lb. Chocolate Malt 1 lb. Dry rice extract 1/4 lb. Lactose powder 1/2 tsp. Gypsum 1/4 tsp. Calcium Chloride 1 tsp. Chalk 2 tsp. Irish Moss (15 min.) 1 1/2 oz. Willamette Hop Pellets (60 min.) 27 IBU 1 oz. Fuggle Hops (60 min.) 18.8 IBU 1 oz. Fuggle Hops (30 min.) 6.6 IBU 1/2 oz. Willamette Hop Pellets (Dry Hop) 1.6 IBU Water to 5 gallons 3/4 cup Corn Sugar for Priming Special London or 1084 Irish Ale Yeast Mash grains together at 155 degrees F. in 3 1/2 quarts of water for 45 minutes. Sparge with another 3 quarts of water. Use a 60 minute boil, adding hops as indicated above. Dry hop in secondary. SG IBU 54 CHEESE RECIPE Our cheesemaking supplies are moving well, and after 3 years, we are really enjoying the response to the cheese fermentation program. If you haven t tried it yet, we offer a wealth of information at the store or on the website. Check out a video or book for more ideas. Now that Bob, Byron, Gabe, Robyn and Nancy have all been experimenting, our list of cheeses that we have first-hand knowledge to support is getting pretty long. The idea for making Cabra Al Vina came to Nancy from two directions. Over the Christmas holiday, her attention turned to cheesemaking. Rereading the Making Artisan Cheese Book, by Tim Smith, this recipe cried out for a winemaker to try. Then while racking her Pinot Noir she had about 3/4 gallon of wine left. So instead of struggling to keep it in small containers until the next wine racking, she coupled the wine with this wonderful cheese, during a 24 hour soak of the pressed wheel and came up with a winning combination. See for yourself if this easy to make aged goat cheese isn t the most wonderful cheese you have tasted from your own kitchen. CABRA AL VINO A mild, semi-hard cheese with a starkly red contrasting rind against the pure white color of the goat milk curd. It makes about a one pound wheel which will age in a regular refrigerator, in a ripening box, for up to 3 months. The flavor is mild, lightly acidic, fruity and very much shows the influence of the wine soak. Just a really delightful cheese.keeps several weeks to a month. Ingredients 8 qts of Trader Joes Summerhill Goat Milk 1/4 tsp. MA4001 culture or other Mesophilic Direct Set Culture, such as Aroma B 1/8 tsp. Calcium Chloride, in 2 Tbl. water 1/2 tsp. liquid Rennet, in 2 Tbl. water 6 cups water, heated to 175º F 1 to 1/2 Tablespoons Flaked or Kosher salt 1 bottle of Red Wine (to cover cheese) Equipment Stainless Steel Pot, 11 qt. Inset Pot Oversize Kettle for Water Bath 2 Thermometers Perforated ladle or slotted spoon Cheesecloth to line Mold Camembert-sized Mold with Follower and Weights to 20 lbs. Ripening Box with Drain Rack and Lid Method Place the inset pot in the water bath and addthe CABRA AL VINO CONT. milk to the pot and bring to 90 F. Turn off the heat and stir in the ripening culture, using 20 gentle strokes. Wait 10 minutes. Add the diluted calcium chloride and stir. Add the diluted rennet. Stir, cover, and let stand at 90 F. for one hour. Note: Check for a clean break after one hour. Cut the curds into 1/2 cubes. Stir and let the curds settle for 5 mintes. In a small pan, heat the required 6 cups of water to 175ºF., and cover. Using a ladle, remove about 1/3 of the whey. Then ladle about half of the hot water in slowly over the curd and stir the curds until the temperature is 92ºF. Rest for 10 minutes. Repeat removing whey down to the level of the resting curds. Again raise the tempature, with the slow addition of heated water to reach 100ºF. Stir gently but frequently to keep the curds from matting. Rest for 30 minutes. Stir gently occasionally. Drain off the whey, pouring the curds back into the inset pot and let them mat together for 5 minutes to make a slab of curd. Place the slab of curd on a sanitized cutting board and mill the curd, by cutting into 1/4 dice with a sharp knife. Mix in about 1 to 1 1/2 tablespoons of kosher salt. Pour the curds into a cheese cloth lined mold. Cover the curds with the cloth and press at 15 lbs. for 20 minutes. Rewrap the cheese and press under 20 lbs. for hours. Repeat this for another 12 hours. Unwrap the cheese wheel and place it in a container with the wine to cover for 24 hours. Remove and air dry for a day. Store the cheese in a ripening box on a drain tray in the refrigerator for 2 months. During storage, check the cheese and turn over the wheel every day for a few weeks, then turn over every few weeks. If mold develops on the rind, mix salt with vinegar, and give the rind a scrub with a moderately stiff bristle brush and dry with a paper towel. Yields 1 pound. However, if you order two weeks in advance of pickup, quantities of 25 cases are $8.95 case and quantities over 50 cases are $7.95 case. Non-printed, plain cases are either $10.95 or $11.95 a case of 12, 750 ml. Maximum discount for 25 or more cases is $1.00 off. The sale will include all printed carton cases that we can obtain from now until August potentially including: other colors, sides, punts and other bottle styles such as burgundy.
