Mix the cream with horseradish, salt and pepper. 2.) Cover the ham with the mix and roll it. 3.) You can eat the starter. Enjoy the ham rolls. 9 Name of the meal / Kind of the meal: Kyselo / soup Nutritional Values: Ingredients: 50g mushrooms 1 teaspoon of caraway seeds 3 eggs 200g sourdough bread 1 dl milk whit of salt 1 onion Energy: 600 Kj x 200ml Sugar: 4,4 g x 200ml Fat: 10,4 g x 200ml Process: 1.) Boil 1,5l water with mushrooms, salt and caraway seeds. 2.) Add fermentum to a cup with cold water and shake it. 3.) Put it into the boiling water. Boil it for a short time and add milk. 4.) Mix onion and salt. 5.) Make scrambled eggs. 6.) Put the hot soup on the plate and add eggs and onion. 7.) Enjoy your Kyselo. Difficulty level: 2 Time for preparation: cca 1 hour Interesting facts about this meal: Typical meal from a hilly part of the Czech republic called Krkonoše. It was a meal for poor people because they had very often all these ingredients at home. Alergens: eggs, milk, gluten
10 Name of the meal: Pork, dumplings and cabbage / The main meal Nutritional Values: Energy: 3251,6 kj/portion Sugar: 82.3 g/portion Fat:36,6 g/portion Ingredients for meat: 1,25 kg pork salt and pepper 1-2 freshly crushed caraway seeds 5 pressed cloves of garlic 2 onions, finely chopped 100 g of lard 1 tablespoon of plain flour for dusting Ingredients for cabbage: 2 tablespoons of lard 100 g bacon, chunks 2 onions, finely chopped 1 bag of sauerkraut ground caraway seeds, caster sugar, salt, vinegar 2 tablespoons of flour for dusting Ingredients for dumplings: 1 kg flour a pinch of salt 1 egg 20 g of fresh yeast a pinch of sugar 1 roll, diced 500 ml lukewarm milk Process + a picture: Preheat oven to 140 C. Pork with salt and pepper, sprinkle with caraway seeds and thoroughly from all sides, rub with garlic. Put meat on a pan with diced onion, add bacon, pour a cup of hot water and cook it until it gets soft - for about three hours. Prepare dumplings (see below) and cabbage. Chop, Warm-up lard, fry the bacon, onion and cumin. Mix in cabbage, bring it to a boiling point. Then add 4 tablespoons of sugar, 100 ml of vinegar and salt. Cook for 15 minutes. Remove the cooked meat from the pan and let it rest for 15 or 20 minutes. Warm rested meat cut into slices with a thickness of about one and a half centimeters. The pork should be succulent and tender, with a crispy crust. Place on a stove and heat the baking pan in which you have roasted the meat. Let the roasted juice with pieces of onion evaporate, then pour a flour and fry it a bit. Pour over with about 200 ml of cold water and boil for about 20 minutes. After about 15 minutes of steaming the cabbage, sprinkle it with coarse flour and cook it for
11 about 15 minutes on low flame. Cabbage should have a slightly sweet flavor, shiny color and a appropriate amount of juice. Be careful and do not overcook it! 1 In a bowl, mix flour, salt, eggs, crumbled yeast, a pinch of sugar and lukewarm milk. Let it stand for about 5 minutes. 2 Knead a soft dough, add the diced roll and let it rise for 1 hour. Then shape three or four cones and boil. 3 Boil in salted boiling water for 18 minutes, turn them in the middle of the process. Whenthey re cooked, pierce on the entire length; steam will come out of them. 4 Perfection is achieved when the finished dumplings are gently rubbed with lard. They will smell nicely and taste good. 12 Name of the meal / Kind of the meal: Buns / Dessert Ingredients: 500g of whole-meel 30g of yeast 80g of sugar 1 pack of vanilla sugar 1/4 l of milk 2 pieces of yolk 120g butter lemon peel a dash of salt Poppy filling: 100g of poppy 1/4 l of milk brown rum cinnamon 1 pack of vanilla sugar icing sugar Process + Pictures: Pour everything into a bowl and prepare a soft dought. Let it rise for half an hour. Meanwhile, prepare the filling. Just mix everything together and boil it for 20 minutes. Divide the fermented dought into pieces, mash it and wrap it. Put side by side into the greased baking dish. Lets bake it for 30 minutes. Difficulty level: 3 Nutritional Values: Energy:657 kj Calories:157,02 kcal Sugar:1,75 g Fat:7,2 g
