4 RECIPE INGREDIENTS 4.5 5lb prime rib roast 1 cup coarse salt 1/3 cup coarse black pepper 1 tsp. fresh thyme leaves 3 springs fresh rosemary, chopped (just the leaves) 1 tsp. smoked paprika 4 tbsp. roasted garlic purée 1 tsp. grainy mustard ½ cup roasted garlic oil Optional: 2 spanish onions DIRECTIONS unforgettable PRIME RIB ROAST 1. Preheat oven to 400 F. 2. In a mixing bowl, combine salt, pepper, thyme, rosemary and paprika. 3. Mix roasted garlic oil and mustard together, then combine with roasted garlic purée. 4. Slowly add the wet ingredients to the dry spices to create a paste. 5. Rub the paste into your roast, top to bottom. 6. Place the roast in a baking pan on a wire rack or prop it up with thickly sliced onions. 7. Roast at 400 F for about 15 minutes. This will quickly brown the outside of the roast. 8. Turn the temperature down to 275 F and continue to roast for about minutes. 9. Remove the roast when it reaches an internal temperature of 115 F. 10. Allow it to rest at room temperature for 20 minutes before carving. The finished temperature will reach F. This is a good medium rare to medium. TIP For the best flavour, marinate and allow roast to sit overnight before roasting. Resting the roast at room temperature for 15 minutes before it goes in the oven is crucial for even cooking. Serve up a spectacular holiday dinner with this mouth-watering prime rib roast as the centerpiece.
