2 We re feeling festive... It s that time of year when the air is filled with the buzz of the festive season. It s also a time when there s more opportunities to indulge, which is why our dietitians have shared their tips for eating healthily at Christmas (p. 4), to help keep you on track while still enjoying festive fare. The amazing Toni shares her journey after losing 18 kilos, and we share mouth-watering recipes like Choc Orange Mousse and Pesto Pasta Salad just made for celebrating the season. 3 Meet Toni Toni lost 18KG^ NOW Before Never in a million years did I expect to lose the weight I had gained two years previously, 18 kilos. Whilst I tried to pretend my weight didn t bother me, deep down inside it really did. When I joined Jenny Craig I weighed exactly the same as when I was 9 months pregnant and ready to give birth to my first daughter. I know this because the first thing they did when I arrived at the hospital in December 2004, was put me on the scales. Great, I thought, I weigh 94 kg! No surprises then when my baby girl weighed 10lb 15oz! I managed to lose all my baby weight but a couple of years ago some very unfortunate events occurred in my life and my weight rocketed out of control. At the time, my body felt like it was in shock and I ate to try and numb the pain. Within a very short space of time, I gained a tremendous amount of weight. My nice figure that I had always enjoyed all my life was gone. During this period, I tried a couple of other well-known diets, including Weight Watchers but counting points wasn t for me. I just don t have time for that. I also tried the gym but as most of us know, 80% of our shape comes from what we eat and I was eating for two. As the weeks went by, and the weight started dropping off, my motivation and determination increased because I then believed I could do it. -Toni My light bulb moment came when I bumped into a friend of mine who I hadn t seen for a while. She looked absolutely amazing and it was all due to Jenny Craig. I had also tried Jenny Craig a couple of years earlier, but my work life, just wasn t constructive to me truly embracing the JC program. Anyway, I knew it could work, it suited my lifestyle so I thought; why not give it another chance? I had nothing to lose and everything to gain - in more ways than one! ^Individual results may vary At first, I really didn t believe I could get any weight off. However, I had a brilliant Consultant Kylie we clicked instantly as she was a school teacher as well and she said basically, if you follow the menu, tick off what you eat each day, the scales will go down, I promise. As the weeks went by, and the weight started dropping off, my motivation and determination increased because I then believed I could do it. So much about the program suits my lifestyle. The food tastes great, I love the snacks, and it s convenient. I was also fortunate enough to be a member of a happy, supportive and bubbly Jenny Craig Centre in Cairns. One of my great motivating tools was jumping on the Jenny Craig website and reading the Success Stories, some of them I even know off by heart. They were a great source of inspiration to me, especially when I felt like I was mentally slipping. I still read them! My family were another great motivating force and supported me all the way. I remember when I first joined, my youngest daughter, aged 11, said to me (when I was about to eat something fattening) Mum, if you re going to do this, you have to be 100% committed. That comment stopped me dead in my tracks. She was right. Commitment is critical. Moving forwards, today I feel like a million dollars. It is so great to get back into my old wardrobe. However, more importantly, I am so much happier. I truly wasn t aware of the connection between me being unhappy and my weight. Once I got slimmer, my inner smile returned. It seems so obvious when I lost the weight, but when you re down in the trenches, the connection between the two gets lost. Trust me; if I can do it, you can too. 4 a dietitian s Christmas Whether you celebrate Christmas or not, the end of the year is a good time to catch up with friends and family and that often comes with plenty of food. If you are following the Jenny Craig program, you can still enjoy all of your traditions, including the delicious food you grew up with. And of course, relish the time spent with loved ones because that is what makes Christmas! With Christmas just a few days away, we asked our Dietitian team how they celebrate Christmas including their favourite family traditions. Karen Stafford s Seafood Christmas Eve My family background is Polish so our big Christmas tradition is on Christmas Eve where we celebrate Wigilia. It is traditionally a meat free meal, so there is an abundance of seafood, salads and veggies! While over the years other foods have been added to our feast, we still enjoy the traditional seafood including prawns, smoked salmon and baked or fried fish. After dinner, the kids go to the park on a hunt for Santa and when they return, the pressies have magically appeared under the tree! To me, sharing time with those people who matter the most to you and creating memories is what Christmas is all about! If you love to enjoy seafood at Christmas too, here s some of my favourites you can try on Christmas Day. Fresh Prawns and Seafood Sauce 60g fresh prawns (approximately 8 large) Seafood sauce (made with Fat Free mayonnaise, tomato sauce and a splash of Worcestershire sauce and lemon juice) Grocery Serves: 2 Meat + Limited Free Megan Alsford s FAMILY BREKKIe My favourite part of Christmas is our family breakfast. Before the mad rush of extended family and friends, my immediate family have a quiet breakfast together. Our breakfast tradition includes ham off the bone, tomatoes and avocado on toast with a big pot of coffee. It s a great healthy start to the day while being surrounded by family. We also stay active throughout the day and bring along garden games like croquet, finska and kubb (really fun Scandinavian games the whole family can enjoy). Or if it s hot enough a water fight! This keeps us moving with just a little bit of competitive spirit. Megan s Family Christmas Toast 1 slice of grainy bread 2 slices fresh ham ½ tomato, sliced 1/8 avocado, sliced or used instead of butter Pepper Grocery Serves: 1 grain, 1 meat, 1 fat Smoked Salmon with Cream Cheese 3 slices smoked salmon 1½ Tbsp light cream cheese mixed with chopped dill Spread the cream cheese over the salmon and roll up. Grocery Serves: 1 Meat + 1 Fat + Free 4
5 Karen Barber s Traditional Christmas Lunch I m heading to snowy England for a traditional festive Christmas lunch with family. I can t imagine Christmas Day without a delicious roast turkey, stuffing, Brussels sprouts and all the trimmings while wearing embarrassing paper hats from the crackers! With a few wise choices, it s easy to enjoy a wonderful lunch without blowing out on the kilojoules. Save some room for Laura s yummy desserts! Roast Turkey 90g Chestnut Stuffing ¼ cup Roast Potato 1 egg size Peas, boiled ½ cup Parsnip, boiled ½ cup Brussels sprouts 1 cup Gravy ¼ cup Cranberry Sauce 2 tsp Grocery Serves: 3 meat, 3 ½ grain serves, 3 fat serves, 2 limited free foods Laura Ford s christmas treats I ve always had a bit of a sweet tooth and I love enjoying treats over the Christmas period. Even after Christmas lunch or dinner, I always manage to find space for dessert! I absolutely love eating all the amazing summer fruit over the Christmas period; cherries, berries, mangoes, lychees and peaches, YUM! Perfect on their own but they make for the ultimate summer treat when paired with a scoop of vanilla bean ice cream. Of course, there are plenty of other desserts that I love to eat so here are some of my other favourite Christmas treats and how they fit into Christmas Day. Mango & cherries with ice-cream ½ mango, sliced 1 cup cherries 1 scoop vanilla ice cream Grocery serves: 2 Fruit, 1 Grain, 2 Fat Pavlova with whipped cream and fruit 50g slice of pavlova topped with whipped cream and fruit Grocery serves: 2 Grain serves, 2 Fat serves, ½ Fruit serve Christmas pudding with custard 110g Christmas pudding ½ cup low fat custard Grocery serves: 3½ Grain serves, 1 Milk serve
6 Watermelon & FetTa Salad Serves 4 INGREDIENTS 2 cups rocket leaves 4 cups watermelon, cut into chunks 1/8 red onion, finely sliced 1 cup fresh mint, leaves picked and finely sliced Pepper to season 160g reduced fat fetta cheese, cubed Juice from 1 lime ½ pomegranate, deseeded METHOD Place rocket leaves, watermelon, red onion and mint in a large bowl. Season with pepper. Scatter fetta cheese over the top and drizzle with lime juice. Finish with the pomegranate seeds. Enjoy! Grocery Count (per serve): 1 Fruit serve, 1 Milk serve, 1 Limited Free Food 6
7 Choc Orange Mousse Serves 4 INGREDIENTS 4 packets Jenny Craig Chocolate Mousse 1 orange, zested and juiced 1½ cups skim milk 100g fat free vanilla yoghurt to garnish Make With Me METHOD Using an electric beater, whisk the Jenny Craig Chocolate Mousse powder with orange juice, orange zest and skim milk until light and frothy. This should take approximately 4-5 minutes. Pour the mousse into 4 serving dishes or ramekins and place in the fridge for at least 30 minutes to chill and set. Serve cold from the fridge and top with a dollop of fat free vanilla yogurt and extra orange rind to garnish. Enjoy! tip Make the decorative orange slices by baking thin orange slices in a low oven (100 C for 2-3 hours), until dried out. Check occasionally. Grocery Count (per serve): ½ Milk serve, ¼ Fruit serve 7
8 The Ultimate Pesto Pasta Salad Serves 4-6 INGREDIENTS 3 packets Jenny Craig Cheesy Pesto Pasta, thawed 200g cherry tomatoes 4 cups spinach leaves ½ red capsicum, sliced into thin strips ½ red onion, thinly sliced ½ cup fresh basil leave 2 tbsp lemon juice Make With Me METHOD Preheat oven to 200 C. Place cherry tomatoes onto a baking tray lined with greaseproof paper. Bake tomatoes in the oven for 20 minutes until slightly softened. Remove from oven and set aside to cool. Arrange the salad by placing spinach leaves onto a serving plate and topping with thawed Jenny Craig Cheesy Pesto Pasta, sliced capsicum, red onion, roasted cherry tomatoes and fresh basil leaves. Season with fresh lemon juice. Enjoy! Grocery Count (per serve): Free Food Grocery Serves 8
