1 U.S. Hop Varieties Available Ahhhroma (GHR Proprietary variety currently available in Hopzoil ) Ahhhroma has the highest volume of aromatic oils that we have seen (up to 3.6% total oil), with unusually high percentages of the highly aromatic myrcene (67% of the total oils are myrcene), making it an ideal hop for dry-hopping. Tested in the laboratory, the Lab Technicians proclaimed it having a similar aroma to a Pina Colada. Aroma: The intense tropical fruit, spice and slight citrus notes is reminiscent of a Pina Colada. It is an excellent bittering variety but showcases pleasant fruit and sweet floral aroma characteristics too. Aroma: Specific aroma descriptors include orange, vanilla and floral. Brewer's Gold is primarily a bittering agent and commonly used in lighter style ales, although it works well in lager beers as well. This bittering or late addition hops has a spice to its flavor and aroma. Aroma: Black currant, fruity, spicy Alpha-Acids: 5.5% - 7.8% Beta-acids: %

It is one of the most popular hops for craft brewing and is great for dry hopping. It is characterized as a medium strength aroma of unique floral/spicy with a bittering potential. Cascade is the most used variety by American craft brews. A true Craft workhorse hop. Aroma: Unique floral with citrus notes Alpha-Acids: % Beta-acids: % Cohumulone: 33-40% Total Oil: % Myrcene: 45-60% Humulene: % Caryophyline: % Farnesene: % Centennial Sometimes called super Cascade ; Centennial has nearly double the alpha profile of Cascade. Many craft brewers today find this to be a favorable variety, particularly with the popular IPA style, because of its balance of aroma / bittering/high oils and lupulin content. It also has an abundant amount of lupulin that is dark yellow in color. Aroma: Medium with floral and citrus tones; not as citrusy as Cascade but has more bittering Alpha-Acids: % Beta-acids: % Cohumulone: 28-30% Total Oil: % Myrcene: 45-55% Humulene: % Caryophyline: 6.44% Farnesene: 8.1% Challenger Challenger is England s response to U.S. Centennial, developed at Wye College in England. A good all-purpose hop, with balanced bittering and with higher alphas than most English hops, a versatile kettle hop. This hop consistently surprises craft brewers in our trials. The profile is similar to Northern Brewer (a notoriously low-yielding variety), but with better yields for growers, making it more popular and feasible to grow. Popular with both craft and major brewers; thus grown as a workhorse hop. The variety has a good resistance to disease but it susceptible to powdery mildew. Aroma: Bold grapefruit with pine Alpha-Acids: % Beta-acids: % Cohumulone: 29-35% Total Oil: % ml/100g Myrcene: 35-40% Humulene: 18-23% Caryophyline: -11% Citra Citra Brand HBC 394 features fairly high alpha acids and total oil contents with a low percentage of co-humulone. It is tolerant to downy mildew and powdery mildew with good pickability of dense, medium sized cones. Comprised of Hallertau Mittelfrüh, US Tettnang, Brewer's Gold and East Kent Golding. Aroma: Specific aroma descriptors include grapefruit, melon, lime, gooseberry, passion fruit and lychee. Alpha-Acids: % Beta-acids: % Cohumulone: 20-24% Total Oil: % ml/100g Myrcene: 60-70% Humulene: 7-12% Caryophyline: 5-8% Cluster With its well balanced bittering and aroma properties, Cluster is an excellent multipurpose hop. The variety is the oldest hop grown in the U.S and was one of a few hops that grew until the late 1970's. Cluster has a good resistance to disease. Columbus is popularly used as a bittering hop with an intense, pungent aroma. Commercial production ceased in the early 1980s in favor of newer super-alpha hops, however, Comet has made a recent comeback, finding favor with some brewers in dual purpose applications for its subtle and unique, "wild American" aroma. 6 Crystal Crystal is an aroma variety with derivations from Hallertau Mittelfrueh, Cascade, and Northern Brewer. Primarily grown in Oregon, its aroma is mild and pleasant with a delicate blend of spices and flowers. The variety is versatile and wildly popular. Aroma: woody with spicy and clean floral finishing notes Alpha-Acids: % Beta-acids: % Cohumulone: 20-26% Total Oil: ml/100g Myrcene: 40-65% Humulene: 18-24% Caryophyline: % El Dorado A dual-purpose hop variety with exceptional aroma qualities and high alpha acids. El Dorado was developed by CLS Farms in Moxee, Washington in 2008 and released in The Moxee Valley is a sub-growing district of the Yakima Valley and has a slightly cooler climate. Due to its cooler temperatures, outstanding aroma crops are grown there. Aroma: El Dorado consistently elicits responses of fruity notes, specifically tropical fruit flavors. Other fruit notes offered have been pear, watermelon and stone fruit. Alpha-Acids: % Beta-acids: 7-8% Cohumulone: 28-31% Total Oil: % Myrcene: 55-60% Humulene: 10-15% Caryophyline: % Ekuanot (formerly Equinox) Ekuanot Brand HBC 366 features pronounced aroma characteristics and extremely high oil content. This variety bursts out of the spring soil in vibrant yellow and gradually matures to a deep green color by fall harvest. Aroma: Specific descriptors include melon, berry, orange peel, lime, papaya, pine and fresh peppers. 8 Glacier Released in 2000 from Washington State University, Glacier is a dual purpose hop. The variety has a low cohumulone content which allows a well balanced bittering properties along with a pleasant aroma. Aroma: soft citrus, very mild and pleasant hop aroma Alpha-Acids: % Cohumulone: 11-13% Beta-acids: % Total Oil: ml/100g Myrcene: 33-62% Humulene: 24-36% Caryophylline: 6-10% Golding (US) U.S. Golding is the American-grown version of the classic English aroma hop variety which have been cultivated since Golding is used mostly for its sweet aromatic characteristics. Aroma: Mild with sweet floral notes Alpha-Acids: % Beta-acids: Cohumulone: 23-28% Total Oil: ml/100g Myrcene: 25-35% Humulene: 35-45% Caryophylline: 13-16% Idaho 7 Idaho 7 burst onto the scene in 2015 with a sensory profile that reminded some of Mosaic in its multifaceted character. In its complexity, it seems to show pine, tropical fruit, citrus and tea leaf. The high oil content makes it a natural finishing, whirlpool and dry-hopping all-star, where it can deliver most strongly on its complex and powerful charcter. Expect overtones of resiny pine needles with big notes of pungent tropical fruit and citrus (think apricot, orange, red grapefruit, papaya) and earthy/fruity suggestions of black tea leaves. 9 Jarrylo Jarrylo (pronounced Jar-ril-low) is named after Jarilo, the Slavic god of fertility and springtime. Jarrylo s banana, pear, spice aroma translates perfectly to Pale Ales, Saisons and Belgians. Liberty Hops is used in many different fashions and in many styles of beers. It will contribute bitterness at the beginning of a boil, and is used in that capacity often. Liberty is more aggressive on the aroma contribution late in the boil, as it comes equipped with high levels of humulene and caryophylline oil. Humulene provides the earthy spice and withstands heat better than caryophylline, which is known for its essence of grapes, peaches, and vanilla. 11 Pekko A newly released aroma variety, Pekko is named for the Finnish God of Field and Crops. Perle was bred in Germany at the Hop Research Center and made available here in the states in the 1980's. Popular with craft & microbrewers. Moderate clean bittering qualities and clean spicy aroma used in a wide range of beers. Aroma: Pleasant floral bouquet and slightly spicy. Similar to noble types. Distinctly different aroma compared to the 4 C s of US aroma varieties. Acclimating to its new home, this variety has developed a more delicate, continental profile than English-grown Fuggle hops. An Aroma variety, it can be used for light bittering duty in a number of styles but shines as a late kettle or dry hop for English bitter and pale ale, mild, brown ale, as well as a wide array of Belgian styles. Styrian Golding is versatile and is used throughout the world. Aroma: Spice with a earthy/sweet edge Alpha-Acids: % Beta-acids: 2-3% Cohumulone: 25-30% Total Oil:.5-1 ml/100g Myrcene: 27-33% Humulene: 34-38% Caryophylline: 9-11% Farnesene: 2-5% Tettnang (US) U.S. Tettnang is a dual purpose hop that is regarded as a noble variety. It is comparable to Saaz hops in many ways, and has a clean bitterness character coming from its low alpha acid content (4.0%-5.0%). The alpha beta ratio is nearly 1:1, and the co-humulone is low at 20.0%-25.0% giving it the noble character foundation. The aroma is a floral spice and comes from the moderately abundant oils, including farnesene oil. American Tettnang Hops are going to be suitable for kettle additions in the wort for both aroma and bitterness, and is going to make a suitable dry hopper as well in the brew keg or fermenter. 14 Humulene: 18-23% Caryophylline: % Farnesene: % Warrior Warrior Hops is a strong bittering variety. With an alpha acid content of 14.5%-17.0%, Warrior is going to be an excellent bite to any beer needing a strong bitter foundation, especially considering its relatively low cohumulone content at 22.0%-26.0%. As you might expect, this variety comes with a high myrcene content. The rest of the oils are in moderate range, with farnesene barely hitting the radar. Warrior Hops are known for their mild aroma. You will mostly find it in strong ales...and although predominately used in American Craft breweries, Aroma: Mild citrus/herbal notes Alpha-Acids: % Beta-acids: % Cohumulone: 22-26% Total Oil: ml/100g Myrcene: 40-50% Humulene: 15-19% Caryophylline: 9-11% Willamette Willamette (pronounced Wil-AM-et ), is primarily an aroma hop, and most successfully produced in Oregon due to its growth characteristics. Its English-type aroma is often described as pleasant with a hint of spice and a smooth, soft flavor. Although Willamette can contribute slightly to the bittering of a craft beer, Willamette dominates its usage for its flavor and aroma. Of the oils in Willamette, myrcene, humulene and farnesene are all elevated above the norm. This results in a delicate peppery herbaceous spice that has both fruit and floral essence. Since its introduction, Willamette Hops has been growing in demand as well as supply. It is one of the most common aroma hops used in the United States. And brewers that use it seem to use it a lot, as it has become the foundation of modern Craft brewing in the USA.
