16 on the menu APPETIZER: Spring Asparagus with Wine and Cheese Sauce 2 lbs fresh asparagus 2 tbsp chopped garlic ½ cup oil 3 litres heavy cream 1/2 cup white wine 2 lb grated parmesan cheese Asparagus: Preheat oven to 325. Wash and trim ends. Tear off a sheet of aluminum foil long enough to wrap the asparagus. Place the rinsed asparagus on the foil and dot lightly with butter. Wrap to make ends meet, and seal making one large foil packet, leaving room inside for heat to circulate. Bake 30 to 35 minutes or until asparagus is crisp yet tender. Open foil, season with salt and pepper. Sauce: Saute garlic in the oil until fragrant. Add white wine and boil until almost dry. Add the cream and bring to a boil; reduce by 50%. Add parmesan cheese and simmer until the sauce has the consistency of thin custard. Did you know? ENTRÉE: Amber Maple Glazed Salmon 355 ml Amber Ale style Beer 3 tbsp. maple syrup 1/4 tsp. fresh ground black pepper large pinch kosher salt Open two beer, one for you and one for the salmon. In a sauce pot, combine Ale, maple syrup, and pepper. Bring to a boil then reduce heat to medium. Simmer for 10 to 15 minutes until the mixture has reduced by 3/4 and becomes thick. Preheat oven to 425 F. Place the salmon on an oil-sprayed or lined baking sheet and sprinkle with salt. With a glazing brush or the back of a spoon, evenly spread half of the glaze on the salmon. Place in the oven and roast for 6 minutes. Brush the remaining glaze on the salmon and return to the oven, roasting until the salmon flakes easily with a fork. DESSERT: Rum-Spiked Grilled Pineapple 1/4 cup packed brown sugar 1/4 cup dark rum 1 tsp. cinnamon ½ tsp. allspice 1 pineapple, peeled, cored and sliced lengthwise into 12 wedges 1 tbsp. butter 2 tbsp. sweetened flaked coconut, toasted 3 cups vanilla ice cream Combine sugar, rum and spices in a microwave-safe bowl. Microwave on high for 30 seconds, or until sugar dissolves. Brush rum mixture evenly over pineapple wedges. Melt butter in a pan over mediumhigh heat. Add pineapple to the pan and grill for 3 minutes on each side. Sprinkle with coconut and serve with ice cream. Did you know?
