1 CHARLESTON S BAR Charleston s prides itself on its high standards of quality food products and dedicated employees. Those same high standards of freshness and consistency of food products are emphasized just as strongly when it comes to Charleston s bar. Our standard pour is 1½ oz. compared to the 1 ¼ oz. that our competitors pour. We use bottle mixers to ensure a consistent product every time. Charleston s bar is also known for its specialty drinks. We fresh squeeze our orange and grapefruit juices. Each Charleston s offers a Happy Hour in our bar (possible patio) area only. Your trainer will let you know the Happy Hour times and policies. RESPONSIBLE ALCOHOL BEVERAGE SERVICE Charleston s bar provides alcoholic beverages for our guests, which compliments their meal and thus the entire dining experience. We care about our guests, especially when it comes to serving alcoholic beverages. Together we have a joint responsibility to ensure their enjoyment and safe return to our restaurant. We ask that you: Maintain a high level of awareness about guests who may be drinking excessively (Inform a manager after a guest has ordered their fourth alcoholic beverage) Bring ALL potential problems to management s attention immediately. Do not unlawfully serve any person under the age of 21 or any person who is visibly intoxicated. Any person who appears to be under 30 years of age is required to present a valid photo identification to verify that he or she is 21 years of age or older. In the absence of authentic identification or in case of doubt, bring it to your manager s attention. Wine on ice topped with sprite and garnished with lime squeeze. Wine on ice topped with soda and garnished with a lemon twist. A cocktail with a little dry vermouth. Cherry speared together with an orange. A fruit or accessory to enhance a drink. Any one liquor mixed with a soda. Notice to guest to order last drink of the evening. (Given by management only) A cocktail with no ice. Any liquor served without ice or a mix (straight liquor). 7 BAR GARNISHES Bar garnishes include a variety of fruits and accessories. The purpose of a garnish is to enhance the appearance and/or taste of a cocktail. Always check garnishes for quality before placing them into a cocktail. The bartender is responsible for cutting garnishes. GARNISH VOCABULARY Cherry A stemmed red maraschino cherry. Place the cherry directly into the cocktail. (ex. Rob Roy, Manhattan) Orange Flag A stemmed red maraschino cherry speared together with an orange and placed on the rim of the glass. (All Collins and Sours) Orange Slice A wedge of orange cut into 6 pieces. Oranges are placed on the rim of the glass (ex. Screwdriver) Lemon Wedge - A triangular segment of lemon. Placed on the rim of the glass. (ex. Long Island Tea) Lemon Twist - A slice of lemon rind 2 inches long, and 1/2" wide. Twist the rind over the drink and then run it around the rim of the glass (rind side down) and drop it in. (ex. Martini) Lime Squeeze A lime cut in half and then cut into quarters. Squeeze the lime into the cocktail and drop it in. (ex. Cuba Libre) Lime Wheel - A round cut slice of lime with a slit that fits on the rim of the glass. (ex. Frozen Margarita) Olives - Pitted queen size olives. Two olives are speared together and placed in the cocktail. (ex. Martini) Onions - Small, white marinated onions. Three onions are speared together and placed in the cocktail. (ex. Gibson) Salt Rim - A thin rim of salt around the rim of the glass. The glass rim is dipped into lime juice and then into salt. (ex. Margarita) Sugar Rim- A thin rim of sugar around the rim of the glass. The glass is dipped into lime juice and then into sugar. (ex. Lemon Drop, Strawberry Frozen Rita.) Perfect Margarita Garnish- Two queen olives speared together with a lime squeeze in the middle.

9 SPECIALTY DRINKS PER RITA Perfect Margarita Azul Reposado, Grand Marnier, Cointreau, and rita mix served in a shaker tin with a salted frozen cocktail glass. Garnished with olive, lime, and olive. BELLINI Peach Bellini - Champagne, Rum, Peach Schnapps, Peach Mix, and Grenadine. A delicious frozen drink served in a frosted pint glass. MERCHANDISING HINTS 1. If you have any questions, look them up or ask someone! 2. When a guest orders a martini, ask them: (a) Gin or Vodka? Up-sell! (b) Up or On the Rocks? (c) Olive or Twist? 3. Remember that any combination of Gin or Vodka (clear liquor) and Soda or Tonic (Clear Mix) will be garnished with a lime squeeze unless otherwise specified. 4. Remember that all Sours and Collins are garnished with an orange flag. 5. Always serve a fresh frozen glass with each beer ordered. 6. Remember the only frozen drink we serve is a Peach Bellini (other options vary by location). If a guest orders a frozen drink like a Pina Colada or Strawberry Daiquiri suggest this. 7. Learn the coffee drinks, they re great for after dinner instead of regular coffee and they will boost the check. 8. If a guest orders a Hi- ball, such as Scotch and Water, ask them if they would like a particular brand or suggest one, for instance: Would you like Chivas or Johnny Walker Black?
