Category: Breads Cuisine: Czech Servings: 5 Source: St. Louis Post Dispatch Food & Recipes Rating: Excellent Cooking Time: 20 minutes 1 1/4 c. lukewarm milk 1/4 c. sugar 2 pkgs yeast 1/2 c. margarine 1 c. lukewarm milk 1/2 tsp. salt 2 egg yolks 1 whole egg 5-6 c. flour 1/2 tsp. grated lemon rind cheese filling, topping or thick jam 1. Dissolve sugar and yeast in 1 1/4 cups lukewarm milk. Let stand until yeast rises to the top of the liquid. 2. Beat together margarine and eggs, add yeast and other 1 cup lukewarm milk. 3. Sift salt and lemon rind with flour. Add to other ingredients slowly, beating well after each addition. Beat very well. Dough should be very soft. Do not add too much flour. 4. Let rise until double in bulk. 5. Drop the dough by teaspoons onto floured surface. Flatten and tip with 1 teaspoon of filling. Fold dough up around the filling and twist to secure, sealing dges well. Lay on buttered cookie sheets, sealed edges down. Let rise for 15 minutes. 6. Make an indentation into the top of each and fill with 1 tablespoon crumb, with prune,apricot or poppy seed topping, cheese filling or any very thick jam. Brush edges with melted margarine. 7. Bake for minutes at 400 degrees. Makes about 5 dozen. Crumb topping: 1 stick margarine 1 1/2 cups flour 1 1/2 cups brown sugar 1/4 to 1/8 tsp cinnamon Cream margarine and flour well. Add brown sugar and cinnamon and mixt until the mixture forms soft crumbs. Use as topping for Kolacky I like an apple filling. Cook several cut up apples until soft and then mash them up. Also, you can just use some cream cheese, softened and "mashed" as a filling. After they're done baking, drizzle a mixture of powdered sugar and milk over pasteries. (add enough milk to powdered sugar till it's slightly thicken)

Spray or grease 8x4 or 9x5 inch loaf pan Cut each roll into quarters and toss randomly into greased pan. Bake at 375 for 20 to 28 minutes or until top is golden brown. Immediately remove from pan. Microwave icing on High for 10 seconds. Drizzle icing over pull apart loaf. Serve warm.

(1/2 stick) margarine 1/2 c. warm water ( degrees F) 2 packages or cakes of active dry or compressed yeast 1 egg 2 1/2 c. flour Scald milk; stir in sugar, salt and margarine; cool to lukewarm. Measure warm water into large bowl. Sprinkle or crumble in yeast; stir until dissolved. Add lukewarm milk mixture, egg and 2 cups flour; beat until smooth. Stir in enough remaining flour to make a soft dough. Cover; let rise in warm place, free from draft, until double in bulk, about 30 minutes. Punch down and shape into 2 dozen rolls. Place on greased baking sheet, cake pans or in muffin cups. Cover and let rise in warm place, free from draft, until doubled in bulk, about 30 minutes. Bake in hot oven degrees F. about 15 minutes The Milk Mixture: Heat milk in a small saucepan until it is scalded; that is until small bubbles form around the edge of the pan. Remove it from the heat and stir in sugar, salt and margarine until dissolved. Then let it cool to lukewarm. To test, drop a few drops on the inside of your wrist. They should feel neither warm nor cold.

(1 stick) margarine 1/2 c. warm water 2 pkgs yeasts 2 eggs 5 1/2 c. flour 1/4 c. chopped citron 1/4 c. chopped almonds 1/4 c. raisins (cut up) melted margarine 1 egg 1 tbs. water 1/4 c. whole blanched almonds Scald milk; stir in sugar, salt and margarine. Cool to lukewarm. Measure warm water ( degrees F) into large warm bowl. Sprinkle or crumble in yeast; stir until dissolved. Stir in luke warm milk mixture, 2 eggs; and 3 cups flour. Beat until smooth. Stir in enough additional flour to make a soft dough. Turn out onto lightly floured board. Knead until smooth and elastic, about 10 minutes. Place in greased bowl, turning to grease top. Cover; let rise in warm place, free from draft until double in bulk, about 50 minutes. Punch down. Turn out onto lightly floured board. Knead in citron, raisins and chopped almonds until well distributed. Divide into flur equal pieces. Set two aside. Divide one piece into 3 equal strips about 14 inches long. Place the 3 strips on a large greased baking sheet; form into a braid. Brush top of braid with melted margarine. Divide 2/3 of the second piece into 3 equal strips about 12 inches long. Form into a second braid and place on top of first braid. Brush tip with melted margarine. With remaining dough from second piece make a third braid about 10 inches long and place on top of second braid. Form second bread with reserved dough. Cover; let rise in warm place, free from draft, until double in bulk, about 1 hour. Beat 1 egg and 1 tablespoon of water together until well blended. Brush braided loaves with egg mixture. Decorate with whole blanched almonds. Bake in moderate oven, 375 degrees about 40 minutes; loaves will be well browned.

6 Hoska Makes 2 Loaves Ingredients 1/2 cup warm water 2 pkgs yeasts 3/4 cup milk 3/4 cup sugar 1/2 tsp. salt 1/2 cup (1 stick) margarine / butter 2 eggs ~5 1/2 cup flour 1/4 cup chopped citron 1/4 cup chopped almonds 1/4 cup raisins (cut up) melted margarine toothpicks 1 egg 1 tbs. water 1/4 c. whole blanched almonds Directions Stage 1 - Make the Dough 1. Preheat oven to 350 degrees F. (Used for ambient heat to allow dough to rise) 2. Measure warm water ( degrees F) into pyrex measuring cup. (Typically the hottest water out of the tap is perfect.) 3. Stir yeast into warm water until dissolved. Add a pinch of sugar into the yeast water. Wait for the yeast to activate (it will start bubbling and expanding - takes about 10 minutes). 4. Scald milk in small saucepan then stir sugar, salt and margarine into it. Cool to lukewarm. 5. In a large warm bowl, stir luke-warm milk mixture into yeast water. 6. Add 2 eggs and 3 cups flour and beat until smooth. 7. Stir in enough additional flour to make a soft dough. Turn out onto lightly floured board. 8. Knead until smooth and elastic, about 10 minutes. 9. Place in greased bowl, turning to grease top. 10. Cover and let rise in warm place, free from draft until double in bulk (about 50 minutes) - put on back of stove top and cover with towel. The ambient heat from the oven is perfect for rising. Stage 2 - Prep the citron, raisins, and almonds (during 1st rise) 11. Chop the citron, raisins, and almonds (¼ cup each). 12. Blanch the almonds. Stage 3 - Braiding the Loaves (after 1st rise) 13. Punch dough down and turn out onto lightly floured board. 14. Knead in citron, raisins and chopped almonds until well distributed. 15. Divide into four equal pieces and set two aside. Once done with the first loaf, repeat directions for the second. 16. Divide the first piece into 3 equal strips about 14 inches long. 17. Braid the strips and place on greased baking sheet.

7 18. (Brush each braid with melted margarine and secure them together with toothpicks.) 19. Divide 2/3 of the second piece into 3 equal strips about 12 inches long and braid. Place braid on top of first. 20. With remaining dough from second piece make a third braid about 10 inches long and place on top of second braid. 21. Cover the braided loaves and let rise in warm place, free from draft, until double in bulk (about 1 hour). Stage 4 - Decorate Loaves (after 2nd rise) 22. Beat 1 egg and 1 tablespoon of water together until well blended. Brush braided loaves with egg mixture. 23. Decorate loaves with whole blanched almonds. 24. Bake in oven at 375 F for about 35 minutes (loaves will be well browned). NOTE: half-way through the baking cycle I put a loose sheet of aluminum foil resting on the top of the loaf to prevent it from getting too burnt or browned)

Quaker Enriched Yellow Corn Meal 1 c. all purpose flour 2-4 tbs. sugar (optional) 4 tsp. baking powder 1/2 tsp. salt (optional) 1 c. milk 1 egg, beaten Heat oven to 400 degrees. (In 8 or 9 inch square baking pan or 10 inch ovenproof skillet, melt shortening in oven; tilt pan to coat bottom evenly.)* Combine dry ingredients. Add oil (or melted shortening), milk and egg; mix just until blended. Pour into pan. Bake 20 to 25 minutes or until golden brown and wooden toothpick comes out clean. Makes 9 to 10 servings I usually just use cooking oil and I don't mess with melting the shortening in the oven bit. I just spray the pan or skillet with cooking spray. You can also use muffin tins or corn stick pans - baking time for these is 15 to 20 minutes or until goden brown.

Bake until wooden pick inserted in center comes out clean, 65 to 70 minutes. 3. Cool slightly. Loosen sides of loaf from pan; remove from pan. Cool completely before slicing. 4. To store, wrap and refrigerate no longer than 1 week.

Spray bottoms only of muffin tins. You can use 4-6-oz custard cups or 8 large muffin cups. (I use the regular 12 muffin tins) Beat egg in large bowl; stir in milk and oil. Stir in remaining ingredients except chocolate chips just until flour is moistened; fold in chocolate chips. Fill cups 3/4 full. (If using custard cups - place them on a cookie sheet) Bake until golden brown. Custard cups about 25 minutes; muffin cups about 20 minutes. Immediately remove from cups If using self rising flour; omit baking powder and salt. High Altitude directions (3500 to 6500 ft). Heat oven to 425. Decrease brown sugar to 1/4 cup. Bake custard cups about 25 minutes and muffin cups 15 to 20 minutes.

Cut in 6 tablespoons butter until mixture resembles coarse cornmeal. Make a well in the center and pour in buttermilk. (if you don't have buttermilk - use regular milk and add a tablespoon of lemon juice to "sour" the milk) Mix until dough clings together and is a bit sticky. Do NOT overmix. (you can add extras like cut up apples,currants, ginger, orange, almond flavoring, cinnamon, apricots, fresh blueberries, cranberries or chocolate chips) Turn out dough onto a floured surface and shape into a 6-8 inch round - about 1 1/2 inches thick. Quickly cut into pie wedges or use a round biscuit cutter to cut circles. The secret of tender scones is a minimum of handling. Place on ungreased cookie sheet being sure the sides of scones don't touch each other. Brush with egg for a shiny, beautiful brown scone. Bake at 425 degrees for 10 to 20 minutes or until lightly brown.

Mix flour and salt together in medium size bowl. Beat egg and milk together. Slowly pour into the flour and salt mixure and stir. Cube and brown 2 slices of bread in melted butter or margarine. Add browned bread cubes to dough and mix together. Dough should be a little tacky to the touch. Drop a tablespoon at a time into the boiling (salted) water. Cover and boil for 20 minutes. Drain and put in dish. Cover dumplings with melted butter or margarine.

Grease round pan, 9x1 1/2" Prepare Streusel topping; reserve. Mix remaining ingredients; beat 30 seconds. Spread in pan; sprinkle with streusel topping. Bake 18 to 23 minutes or until golden brown. Top with glaze. Serve warm. 8 servings. Streusel Topping: Mix 1/3 cup packed brown sugar and 1/2 tsp ground cinnamon until crumbly. Glaze: 1 cup powder sugar 1 to 2 tbs milk. Mix. Shouldn't be too runny This recipe is from the Reduced Fat Bisquick but I use regular bisquick and it's just fine.

Gradually add dry ingredients mixing well after each addition. Form into small balls and roll into granulated sugar - covering entire ball with sugar. Place on ungreased cookie sheet. Bake at 350 degree oven for 12 to 15 minutes or until tops are slightly rounded, crackly and lightly browned. Remove from cookie sheet. Cool completely on wire rack. Store in airtight container.

Kellogg's Rice Krispies Cereal Melt margarine in large saucepan over low heat. Add marshmallows and stir until melted and well blended. Remove from heat. Add Rice Krispies cereal. Stir until well coated. Press mixture evenly into greased 13x8x2 inch pan. Cool completely. Yield: 24 squares, 2x2" 4908 You can also do this in the micowave. I use a large glass bowl (pyrex mixing bowl). Melt the margarine and marshmallows, stirring occasionally. Then add in cereal and put into pan.

Don't let cake cool too long in pan - or it might not come out real easy. I've made that mistake and the cake fell apart trying to get it out. :(

In large bowl with mixer at medium speed, beat margarine and peanet butter until smooth. Beat in sugar until blended, then eggs and vanilla. Add flour mixture. Beat until well blended. If necessary, chill dough. Shape into 1 inch balls. Place 2 inches apart on ungreased cookie sheets. Flatten slightly and decorate with candy cherries or flatten with fork dipped in colored sugars. Bake in 350 degree oven for 12 minutes or until lightly browned. Remove cookie sheets. Cool on rack.

Remove from cookie sheets and cool If you want to make pan cookies - spread dough into greased 15 1/2 x 10 1/2 x 1 inch baking pan. Bake 20 to 25 minutes. Cool completely. Cut into 2" squares. Makes about 35 squares.

Grease and flour 2-9" round baking pans. In large mixer bowl, beat sugar, margarine (butter), eggs and vanilla extract until light and fluffy, about 5 minutes. Add flour, water, cocoa, baking soda and salt. Beat until blended and smooth. Pour into prepared pans. Bake 28 to 33 minutes until wooden toothpick inserted into center comes out clean. Cool 5 minutes; remove from pans. Cool completely. Fill and frost with favorite frosting.
