If you love fresh seafood, you ll adore Rech. Awarded 1-Michelin star in the 2018 Michelin Guide to Hong Kong & Macau, Rech by Alain Ducasse is the first international outpost of one of Paris s most famous seafood restaurant. Rech Paris, was founded in 1925 by Adrien Rech and reborn by Alain Ducasse in An authentically French seafood experience, Rech by Alain Ducasse showcases the finest seasonal fish and oysters with the Chef s personal interpretation and contemporary cuisine. The History of Rech In Paris, Rech is one of the city s most celebrated seafood restaurants. It was created in 1925 by Adrien Rech, who arrived in Paris from Alsace. He first opened a grocery store that soon became a stylish café-restaurant where customers came to enjoy oysters from all around France, with seafood stalls, abundant with fresh shellfish just outside. Very quickly the reputation of the restaurant grew all around Paris; and an institution was born. The restaurant was reborn, thanks to Alain Ducasse who took it over in The Design of Rech by Alain Ducasse Marie Deroudilhe, who revamped the Parisian restaurant in 2012, has designed the Hong Kong outpost, which features signature elements from Rech Paris, with inspiration from the seaside. The key design elements of Marie s light and airy décor are reminiscent of the sea - the inside of a seashell, a piece of floating wood, drifting clouds, the shimmering sunlight on the surface of the water and waves - interpreted in a special way in Hong Kong. The special lamps at Rech by Alain Ducasse are hand-crafted in Paris by French designer Céline Wright from 3,000 delicate small pieces of rice paper. They resemble floating clouds in natural daylight and glowing Chinese lanterns at night time. Rech by Alain Ducasse at InterContinental Hong Kong brings the very best elements of Rech Paris to its spectacular harbour view location. The two restaurants share signature fish paintings by French artist Jean-Pierre Guilleron, made from actual fish prints on natural paper using the ancient Gyotaku Japanese fish printing technique. Both Rech Paris and Rech in Hong Kong have bespoke Branca chairs by British designer Sam Hecht for Mattiazzi (Italy). Inspired by driftwood, polished by the sea, each Branca chair is made robotically from a solid piece of beech wood with no metal, glue or nails. The custom designed tableware by Belgian designer and ceramist Pieter Stockmans reflects seaside elements with his distinctive palette of deep cobalt blues. Each piece created by the artist is a unique and original item. Dinner plates by bespoke French porcelain manufacturer Pillivuyt showcase the fish artwork of Jean-Pierre Guilleron. One-of-a-kind over-sized natural rocks from the shores of Brittany adorn each table serving as a decorative item and also as a natural perch for the homemade seaweed bread. 20 THE CONCIERGE InterContinental Hong Kong THE CONCIERGE InterContinental Hong Kong 21

The Menu As per Alain Ducasse, To appreciate beautiful seafood is to appreciate its personality by knowing how to adapt the cooking process to reveal all the subtlety of flavours, unique to its own. An authentically French seafood experience, Rech showcases the best fish, shellfish and oysters from France with Chef Ducasse s personal interpretation and contemporary cuisine. It offers an unforgettable experience to enjoy the chef s exclusive know-how in preparing top quality fish and crustaceans. The menu is an invitation to dive into the big blue with inspired, passionate and creative dishes that change with the tides and the seasons, adapting to what the sea has to offer. From the freshest oysters from France to the signature Pan-seared large sole with half-salted butter and tiny potatoes, seafood is the key attraction. The restaurant s famous aged Camembert, followed by desserts like XL éclair, chocolate and Mr. Rech, made with chocolate from Alain Ducasse s manufacture in Paris, complete the experience. Executive Chef Stéphane Gortina, who has worked with Alain Ducasse for over 14 years at a diverse selection of his global restaurants (in Doha, St. Petersburg, Mauritius and Osaka, as well as Monte Carlo and Provence) and previously headed the SPOON kitchen, continues leading the kitchen. He has collaborated with Alain Ducasse on a menu that takes inspiration from the delectable seafood. Prior to the restaurant s 2017 opening Stéphane Gortina had an immersive experience at Rech Paris. He also visited one of Alain Ducasse s fish suppliers, the Jégo Brothers in the port town of Lorient in Brittany to source the top quality fish for Rech in Hong Kong. The Fish and Shellfish Most of the fish and shellfish at Rech comes from Europe - sourced in France (especially Brittany) from small, independent fishermen, strongly involved in the protection of natural resources. At Rech, only the best fish and shellfish are used, including species that are lesser known. The Jégo Brothers fish trade, established over 20 years ago in Etel, the ancient tuna port in the Morbihan, Brittany, provides Rech with extra fresh produce solely using fishing techniques respectful of the environment. Highly aware of the protection of marine balance, Giles Jégo rigorously keeps track of quotas, sizes, reproductive seasons and tidal movements, He explains, The fish selection comes primarily from what the sea bestows us day to day. The fish he selects for the Rech restaurants in Paris and Hong Kong are line-caught in small fishing boats whose outings are limited to three hours to enable them to bring the fish back to the quays in the light of dawn, still alive. Executive Chef Stéphane Gortina also buys fish from other small independent fish mongers in Brittany, who source the very best fish and shellfish while being protective of the environment. As per Stéphane, All of our fish is line-caught by fishermen using small boats This fish is fresher and of a better quality than fish that is caught by net on large fishing boats which stay out at sea and store the fish for longer before it even makes its way to the market. Rech Weekend Lunch Gather family and friends for the Weekend Lunch at Rech a 5-course set menu with a seafood starter, choice of appetiser, main course and dessert, plus Rech s famous Camembert. In addition, you can order a selection of fresh oysters from Brittany (à la carte). There are also wine-pairing options priced per person. The Children s Sunday Lunch Menu is a 3-course lunch menu with choices of starter, main course and dessert, plus free-flowing drinks. (Price: HK$288 per child under 12 years old). 26 MEET LOUIS BALEROS Chief Concierge Louis Baleros,Chief Concierge, has been with the hotel for 23 years. Louis Baleros is from a distinguished family of hoteliers, dating back to his grandfather and numerous relatives. His father was the first concierge of The Regent Hong Kong (now InterContinental Hong Kong) when the hotel opened in Louis began his hotel career at one of Hong Kong s landmark properties in It was definitely a family affair as his father Louis C. Baleros Sr., was then the Reception Manager. His older brother Anthony was Reservation Supervisor, another brother Tyrone was a Receptionist. His uncle was the Night Manager, and another cousin was the Mail & Information Supervisor. So, in fact, the Baleros clan held the Front Desk together for some time; and they all worked and learned together. Louis worked his way up to Assistant Chief Concierge and was later awarded membership to Les Clefs d Or Hong Kong and received his Golden Keys, the recognised symbol for the Concierge position. He then continued to work his way up to becoming Head Concierge. He later gained additional experience at a couple of other Hong Kong hotels, prior to joining InterContinental Hong Kong as Chief Concierge in May 1995 (when the hotel was The Regent Hong Kong). Since then has been doing an outstanding job of filling his Dad s original shoes and legacy of service! He served as the President of the Hong Kong Chapter of Les Clef D Or (the official international association of concierges) for six years from Louis and his team can assist you in making the most of your stay in Hong Kong, from sharing authentic and enriching In the Know experiences to recommending the best dining, shopping and entertainment options. A Baleros Tale Once a rather shy guest asked Louis to arrange a dinner on Valentine s Day. This guest had met a lovely lady during the course of his business day. As he was too timid to invite her out for dinner, he asked that Louis orchestrate the whole evening. Louis sent flowers, arranged the invitation, booked the restaurant, The Verandah, with a romantic table for two overlooking Repulse Bay and Rolls Royce limousine service. The result was such a fantastic success that the couple later got engaged, and then married. Naturally Louis ended up being the Best Man! Since then, Louis has played Cupid on numerous occasions. One couple from the USA decided to wed during Hong Kong s handover in They wanted to be the first foreign nationals with a marriage license issued by the new SAR government. Despite the three day public holiday, Louis was able to make the marriage arrangements for the first business day following the July 1st holiday. He even served as Best Man and had one of his assistant concierges act as the Maid of Honour! Then in 2002, Louis arranged yet another wedding for in-house guests and also acted again as Best Man! Give Louis the impossible to find, as he loves a challenge. One guest got home and realised that she had bought two left shoes from one of the many shoe shops in a nearby shopping mall. She had no receipt, nor did she recall the name of the shop, just that it was on the 2nd or 3rd floor of the mall. Louis managed to track down the shop and missing right shoe! Another guest contacted him, saying that the new pair of eyeglasses which he had purchased in Hong Kong had a broken temple. Once again, he had lost the receipt and could not recall the name of the shop. He just remembered that it was to the right of the hotel, a few blocks away, near a patch of trees! Once again, Louis played detective and managed to locate the optical shop. The shop then asked us to clarify with the guest if it was the right or left temple of the glasses which needed replacing. How s that for follow-up and attention to detail?! Another guest, impressed by the prevalent use of bamboo in Hong Kong on the city s endless construction sites, asked Louis to help him purchase and ship enough bamboo to fence his Texas ranch. Louis experienced one of his greatest challenges when, on Chinese New Year s Eve, a VIP guest from the Middle East requested a private after-hours shopping spree that very evening, at one of the city s popular electronic stores and also one of the largest CD/DVD stores. In Hong Kong, Chinese New Year is the most important holiday of the year and the only time of year when almost all stores are closed. On the Eve of Chinese New Year, shops normally close early so that employees can go home for family gatherings. Somehow Louis managed to persuade a few shops to stay open overnight especially for this VIP guest. 50 THE CONCIERGE InterContinental Hong Kong THE CONCIERGE InterContinental Hong Kong 51

Q&A WITH LOUIS BALEROS Chief Concierge When did you decide to become a concierge and how did you start? I started working in one of Hong Kong s landmark hotels in 1975 as a Receptionist. (My father and uncles also worked in the same hotel). After 5 years, I was transferred to the mail and information desk where I worked my way up to become a supervisor. In 1982 the hotel decided to upgrade its services by offering Concierge Services. They hired a Concierge from the UK as Head Concierge. On his first day at work, I was so impressed with his uniform, as he wore a long black coat with a pair of cross keys on his lapel, that is when, I made the decision to become Chief Concierge. I also learned that the job of a Concierge is not just about giving information but taking it to the next level by taking over the guests tasks and completing them. In 1982, I was accepted as a member of Les Clef d Or Hong Kong. In 1985 under the guidance of my father Louis C. Baleros, who was President of Les Clefs d Or Hong Kong (and also the first Concierge at our hotel when it opened in 1980 as The Regent Hong Kong), the Hong Kong Chapter was accepted as the first Asian country to become a member of Les Clef d Or Worldwide. I followed in my father s footsteps and became the President of Les Clefs d Or Hong Kong from 1995 until What makes membership in that organisation so special to you? The Concierge is the go-to person if a hotel guest has a problem or a challenge. He is known to be a jackof-all-trades and can handle all kind of duties - as the Concierge has his fingers on the pulse of his city. From mail and messages, recommendations and reservations, travel and meeting planning, personal shopping and professional communications, the Concierge can direct guests to any location, to any product at any time of day or night. On rare occasions when guests requests cannot be fulfilled single-handedly, Les Clefs d Or Concierges have the necessary back-up - a never-ending network of acquaintances, friends and colleagues from around the world to see to it that guests requests are met. As a hotel Concierge what does your job entail? The Concierge has dedicated many years of hard work and training to the profession. He/she must be pleasant BIRD GARDEN and welcoming, have positive energy and a great attitude and be motivated by a genuine desire to serve. The Concierge must be prudent, patient and kind and must also be self-confident, tenacious, persistent adaptable, ingenious, disciplined and flexible. He/she must remain calm in a hectic environment. Time management is key, as well as networking within the community, building relationships and having extensive local knowledge. He/She must always display integrity. Discretion is the hallmark of a great Concierge. What do you enjoy most about being a concierge? I most enjoy meeting guests from all parts of the world and assisting them with different challenges every day. When I complete a task, I then have total job satisfaction. How would you spend your ideal day off? Hong Kong is a fast paced city and the old normally has to make way for the new. Therefore I like to spend my day off exploring district after district to keep up-to-date with what s new and get a feel of the changing trends. If a guest is only in town for 24 hours, what would you recommend for a perfect one-day itinerary? MORNING: A ten-minute taxi ride from the hotel is the Jade Market. Here you will find a vast assortment of Chinese Jade and semi-precious carvings, trinkets and souvenirs. Don t forget to negotiate and take cash (US or HK dollars), as most of the stalls do not take credit cards. Alternatively stroll down Canton Road with its designer shops and visit the Harbour City Shopping Centre which runs the length of Canton Road. When you reach Haiphong Road, you ll find authentic Dai Pai Dong (local food stalls). Haiphong Road then intersects with Nathan Road, the main street in Kowloon, renowned for its neon-lit signs. AFTERNOON: After lunch, take a taxi to the Bird Garden and get a real taste of Hong Kong by walking through the various market streets on your way back to the hotel. Bird Garden is a traditional Chinese garden with stores selling pet birds - often priced by how well they sing. Next, visit the Flower Market, which sells flowers from around the world. On Tung Choi Street you then come to the fascinating Gold Fish Market, selling all types of sea creatures, even jelly fish. Finally you ll reach Dundas Street which has food shops which give it a distinctive and welcoming smell. Try the Bor Lor Bao (Pineapple Bun). Then turn left onto Nathan Road and you re on the road leading back to the hotel. EVENING: Relax with a 45-minute pre-dinner cruise on board Aqua Luna, an authentic Chinese junk. The cruise departs from the Kowloon Public Pier, just a 10-minute walk from the hotel. It s a fabulous way to view Victoria Harbour and the amazing skyline, especially at night. Afterwards, go to Aqua Spirit in the sleek One Peking building for cocktails. Go down one floor for dinner at Aqua or its sister restaurant, Hutong, which has a stunning ambiance, for Northern Chinese cuisine. After dinner, take a taxi to another Hong Kong institution, the Temple Street Night Market where you can haggle for souvenirs, have your fortune told and hear Chinese opera singers. CHINESE NEW YEAR THE GOLDFISH MARKET When a guest asks for a dinner reservation, what makes you decide on one place vs another? Hong Kong has over 14,000 restaurants offering all kinds of cuisine. Therefore I will normally try to find out what type of cuisine the guests are craving and ask if they are celebrating an occasion. I will also ask if they prefer something local or a gourmet restaurant. Then we would offer a choice of three restaurants and explain the restaurants decor and ambiance, so they can then make the selection. What would you recommend for a family day out? If guests are travelling with young children, I would suggest visiting one of the theme parks in Hong Kong or taking Ngong Ping 360, a spectacular cable car up to Po Lin Monastery to see the Big Buddha and the 10,000 Buddha temple. Photos courtesy of the Hong Kong Tourism Board Les Clefs d Or Concierges has the necessary back-up: a never-ending network of acquaintances, friends and colleagues from around the world to see to it that guests requests are met. 52 THE CONCIERGE InterContinental Hong Kong THE CONCIERGE InterContinental Hong Kong 53

Favourite place for dumplings: When locals talk about Dumplings, the majority will automatically think of Din Tai Fung, a restaurant originating in Taiwan that specialises in Xiao Long Bao (steamed pork dumplings). This restaurant does not accept reservations; and there is always a queue outside the entrance in all its locations in Hong Kong. The closest one to InterContinental Hong Kong is on Canton Road in the Silvercord Centre, about a 15-minute walk from the hotel. Best spa experience: To be honest, I am not a spa type of person, however I am happy to share what I have learned from speaking to my business contacts and friends. One thing many of them have in common is that they go to Flawless, an urban spa located on the 4th Floor, of Sea Bird House at Wyndham Street in Central on Hong Kong Island. This is where many locals go to pamper themselves after a long and stressful day or week at work with a facial, manicure/pedicure or body massage. Under-the-radar museum: I personally like the Hong Kong Heritage Museum at 1 Man Lam Road, Shatin in the New Territories. It showcases the diverse treasures of our local heritage and reminds me of what Hong Kong used to be when I was growing up. It also has visiting exhibitions. Water activities: Aqua Luna is an authentic Chinese junk with red sails. It offers short cruises around Victoria Harbour. Personally I recommend one of the evening cocktails cruises at twilight or during the nightly Symphony of Lights show which takes place every evening at 8:00pm. The junk is also available for private charter. Aqua Luna has recently launched a second authentic Chinese Junk with stunning sails featuring a Blue & White Chinese pattern. THE INSIDER GUIDE TO HONG KONG BY LOUIS BALEROS Chief Concierge CHI LIN NUNNERY SHEUNG WAN DISTRICT Best new restaurant: For new Chinese restaurants, I suggest QI Nine Dragon, a Sichuan Restaurant located on the top floor of a new commercial building that is within 10 minutes from InterContinental Hong Kong. It opened in last quarter of 2016 and is recommended in 2018 Michelin Guide to Hong Kong & Macau. Its sister restaurant, located in Wanchai on Hong Kong Island, was also awarded 1-Michelin star. Unlike many Chinese restaurants, this restaurant has a modern décor with wood carvings and paintings. It also offers a bird eye s view of Victoria Harbour and has an open rooftop bar for after-dinner drinks. The menu has spicy and non-spicy dishes. No meal there is complete without the Braised Mandarin Fish Fillet in Chili Oil Soup. Meanwhile last year our hotel launched Rech by Alain Ducasse. It is the first international outpost of Paris s most famous seafood restaurant and now has 1-Michelin star. Dining at Rech is an authentically French seafood experience with the best seasonal fish, shellfish and oysters from France with the chef s personal interpretation and contemporary French cuisine. It also has the most spectacular views of Victoria Harbour and the Hong Kong skyline.. Emerging neighborhood: Whenever I m in the vicinity of Hollywood Road or Soho on Hong Kong Island, I do not hesitate to spend a little more time to walk down to Po Hing Fong and its surrounding area in the Sheung Wan District to explore the creativity of the tiny shops and businesses showcasing art, fashion and design and the charming small cafés created by young entrepreneurs. Toughest dinner reservation: No doubt, it has to be the 3-Michelin star restaurants in Hong Kong. Best cocktail spot: I suggest SEVVA on the 25th Floor of the Prince s Building in Central Hong Kong Island. This stylish restaurant / bar lounge has a rooftop bar with bird s eye views of some of Hong Kong s most iconic skyscraper office blocks including the Bank of China Building and HSBC Bank building. The clientele here is usually an eclectic blend of hip & trendy and young banker types - sipping cocktails and taking in the ambiance after office hours, making this a great place to not only take in the city views, but also people watch. Urban escape I like to go to Chi Lin Nunnery located at 5 Chi Lin Drive, Diamond Hill in Kowloon. It showcases elegant Chinese wooden architecture, treasured Buddhist relics and is surrounded by soul-soothing lotus ponds. Next door, there is Nan Ling Garden, a public park built in the style of the Tang Dynasty. It is located at 60 Fung Tak Road, Diamond Hill, Kowloon. Shopping spree Ocean Terminal / Harbour City, on Canton Road, just a 10-minute walk from our hotel, is the biggest shopping mall in Hong Kong. It houses approximately 450 shops and 60 food and beverage outlets offering everything you can think of. Along Canton Road, you will find flagship boutiques of all the top international fashion brands. Inside the shopping centre there are hundreds of shops, selling everything from men s and women s fashions and accessories to sporting goods. There is even one floor just filled with designer children s boutiques. If you are looking for a more local market experience, I suggest checking out the Jade Market, which is a daytime market chocker-block with stalls selling reasonably priced jade and other semi-precious stone jewellery and knick-knacks. Close-by is the Temple Street Night Market which runs from 6:00pm until close to midnight good for souvenir shopping and also getting some local colour and flavours at the Dai Pai Dong food stalls and local eateries. The Ladies Market in Mongkok is also a fun place to find souvenirs and to hone in on your bargaining skills. If you are looking for designer factory outlets, Horizon Plaza in the Ap Lei Chau area of Aberdeen on Hong Kong Island is the place. It is one massive industrial building filled with designer outlets for clothing, furniture and all types of goods. 54 THE CONCIERGE InterContinental Hong Kong THE CONCIERGE InterContinental Hong Kong 55

If you are into art and antiques, a stroll down Hollywood Road on Hong Kong Island is a must. It is also fun to explore the surrounding area around Wellington Street, Aberdeen Street and the little shops on the side streets off the Mid-Levels Escalator and inside PMQ (the restored Police Married Quarters), which is home to an eclectic mix of shops showcasing local designs and a selection of eateries. You can also check out the art galleries in the Pedder Building in Central. I highly recommend chartering a helicopter for a 45-minute flight-seeing trip to get a bird s eye view of Hong Kong Island, Kowloon and the outer islands. Locals secret For an enjoyable local dining experience outside the city, I suggest the Sai Kung waterfront seafood market and restaurants, where Hong Kong locals go for a casual fresh seafood meal. Plan a single extraordinary day in Hong Kong For one extraordinary no expense spared day, I would highly recommend that you explore Hong Kong by Air, Land and Sea in one day. Start by chartering a helicopter for a 45-minute flight-seeing trip to get a bird s eye view of Hong Kong Island, Kowloon and the outlying islands. Then hire our hotel s classic Rolls Royce Phantom VI for a drive to The Verandah, a classic colonial style restaurant at the Repulse Bay Complex, for lunch. Then in the early evening you can charter a boat for a private cruise to Aberdeen (on the south side of Hong Kong Island) or to Lamma Island for a fresh Chinese seafood dinner. Complete your day with after-dinner drinks in InterContinental Hong Kong s Lobby Lounge, which offers the city s most magnificent panoramic views of Victoria Harbour and the dazzling Hong Kong Island skyline. 56 THE CONCIERGE InterContinental Hong Kong THE CONCIERGE InterContinental Hong Kong 57

Hollywood Road & the Cat Street Market TEMPLE STREET If you prefer to purchase unique objects on your shopping trips, you will not be disappointed with a trip to Hollywood Road and Cat Street in the Sheung Wan area of Hong Kong Island. On the map, Cat Street is identified as Upper Lascar Row, just off Hollywood Road, but locals and insiders know this antiquing area as the Cat Street Market. You can find antique dealers with special objects with a bit of patina and history,as well as rare and irreplaceable antiques, adjacent to street vendors with replicas of ancient Chinese coins, jade figurines and trinkets,. Replicas are prevalent at the Cat Street Market, so make sure to be clear on what you re buying. A CURATED GUIDE TO HONG KONG S QUIRKY & COLOURFUL SHOPPING STREETS & MARKETS Shopping and ambling through the winding roads of any city you visit is practically your vacation tradition at this point, and your usual finds are anything but average. Goldfish Market If you know and love the art and tradition of feng shui, you owe yourself a trip to the northern end of Tung Choi Street in the Mong Kok area, known as the Goldfish Market because of the dozens of shops selling both common and rare fish. If you ve never seen hundreds of live fish (from common goldfish to much rarer varieties) hanging in bags from shop windows and stalls, then you are in for a memorable treat. Besides actually buying fish there, this stretch of road is something of a common pilgrimage for followers of feng shui, since to them, goldfish are thought to be good luck. Still, even the most experienced off-the-beaten-path shoppers are sure to find something that surprises and delights them while wandering the quirky, offbeat shopping streets of Hong Kong. Bring your cash and credit cards, take in the one-of-a-kind ambiance, and take home some truly unique treasures from Hong Kong with our recommendations made especially for our guests. Tai Yuen Street Are you shopping for gifts for the kids or the young-atheart loved ones in your life? Do yourself a favour and start at Toy Street. Tai Yuen Street, which stretches north and south between Johnston Road and Queens Road East in the Wan Chai neighborhood of Hong Kong. While most of the fabulous finds here are inexpensive playthings and homages to internationally popular nostalgic characters, you can also find pricey vintage collectibles as well, including a wide selection of antique tin toys. Temple Street Night Market Find something quirky that you never even knew you needed at the notorious Temple Street Night Market. After the sun sets, make your way over to Temple Street, near where it crosses Jordan Road in the Yau Ma Tei district. It is named Temple Street as this road leads to for the Tin Hau Temple, there you ll find a wide variety of weird and wonderful trinkets and souvenirs. The after-dark ambiance is just as memorable as the souvenirs you ll find there. Temple Street also has an area with Dai Pai Dong food stalls where you can sit outside and enjoy a very local meal. Jade Market Jade has been long associated with long life and good health in Chinese culture, making it a prized material for good-luck charms. The Jade Market Hong Kong on Kansu Street in Kowloon is a collection of hundreds of stands selling all kinds of jade, pearls, semi-precious stones, in all forms, shapes and sizes. This is an ideal place to find unique Hong Kong gifts, knick knacks and mementos to take home. Stanley Market Stanley Market is one of the must-go places when visiting Hong Kong. Here you ll find an interesting array of little shops selling silk garments, sportswear, art, Chinese costume jewellery, embroidered linens and tablecloths and souvenirs. While a bit touristy, Stanley Market offers a wide range of souvenir shopping, but also a nice selection of affordable Asian paintings and prints. The area also includes a waterfront promenade with an array of restaurants and bars overlooking the South China Sea, for a relaxing start or finish to a shopping spree. This popular historic street market is located on the city s serene south coast and is as popular with locals as it is with visitors. For a very scenic ride, take the Double Decker Bus to get there. You ll drive on curving mountainous roads past Deep Water Bay and Repulse Bay with skyscraper apartment blocks overlooking the seafront. 58 THE CONCIERGE InterContinental Hong Kong THE CONCIERGE InterContinental Hong Kong 59

EAT LIKE A LOCAL: QUINTESSENTIAL HONG KONG DISHES Hong Kong is renowned for its food and shopping. As one of the world s most significant financial centres, Hong Kong boasts a vastly international flavour, both literally and figuratively. Throughout the city, both in Kowloon and on Hong Kong Island, you ll find everything from Michelinstar to traditional restaurants, as well as tea houses and trendy international eateries. Hong Kong s culinary history is largely from the Cantonese traditions of China. Global hybridisation of local favourites has merely increased their delectability and variety. Firsttime visitors thus need only to know whether they prefer straightforward or globally-infused renditions of traditional Chinese cuisine. Thus, presentation of the classic Chinese barbecue, seafood, noodles and rice, pork, chicken (including feet), eggs, and tofu ranges from the simplest preparation through the most ingenious, creative fusions. In the historically traditional tea-house, where yum cha (drink tea) is guzzled in massive quantities throughout the day, dim sum is quite often its partner. Dim sum is a buffet collection of bite-sized dishes that often comprise an entire meal due to the infinite variety of sweet and savoury comestibles. Hongkongers do love their sweets too, so you ll find local dessert shops around town. Honeymoon Desserts and Hui Lau Shan Healthy Desserts are both very popular ones frequented by locals. Some of the favourite desserts are Dau Fu Fa, a soft bean curd served with clear syrup or sweetened sugar; Tong Yuen, small round white dumplings filled with a variation of sweet pastes such as black sesame, peanut or red beans; and Milk Pudding, a creamy treat using only egg whites, milk and sugar, Sweet red or green bean soup is slow-cooked to create a thick, creamy texture. Black Sesame Sweet Soup is a hot sticky soup, best enjoyed by adding Tong Yuen, which are glutinous rice flour balls. Fu Chuk Tong Sui is made with beancurd sheet, egg and gingko nuts.. Leung Fun grass jelly is said to have cooling properties, according to Chinese medicine. As in most large cities, many restaurants are open 24 hours a day, making it reasonably impossible for you to miss a wonderful meal anywhere in Hong Kong. A FOODIE S PARADISE Hong Kong is obsessed with food. By one estimate, the region is home to 14,000 restaurants more than 70 of which are Michelin-starred and they cater to every taste bud on any budget. In this international crossroads, you can find everything from Thai and Indian to Mexican and French fare. But why seek out the flavours of distant lands when home-grown culinary treasures are right here for the taking? Dining in the epicentre of Cantonese cuisine will change everything you ever thought you knew about Chinese food. Go Fish The fishing industry in this area is older than the Hong Kong we know today. Visit a waterfront village like Lei Yue Mun, Sam Shing Hui Seafood Market in Tuen Mun or Sai Kung s Seafood Street where you can select your pick from the day s catch which will be served up as a delicious, fresh seafood feast with a view. Sample classic street food like steamy noodle bowls, dumplings, fishballs, pineapple buns, stinky tofu, wok-roasted chestnuts, and offal. You can find street food at some of the popular night markets which include the Temple Street Market in the Yau Ma Tei/Jordan area, and the Ladies Market in Mongkok (which starts in the afternoon and runs until 11:00pm) Dim Sum If you leave Hong Kong without a proper dim sum experience, shame on you. Whether you choose to eat like a prince or a pauper, you can indulge in an endless parade of small dishes with big flavour. Some of the best among the region s countless dim sum places are in Central, Causeway Bay, Tsim Sha Tsui, and Sheung Wan. Our Concierge team recommends the hotel s 2-Michelin star Yan Toh Heen for haute dim sum. For a local experience, try Din Tai Fung in the Silvercord Shopping Centre on Canton Road. Trendy Booming business means gentrification, and that means demanding contemporary palates. Funky, innovative menus draw foodies and dare we say it? hipsters to up-and-coming locales in trendy up-and-coming neighbourhoods like Sai Ying Pun and Kennedy Town. Bottom line: no matter where in the city you are, you can t go wrong when you re up for a culinary adventure. 60 THE CONCIERGE InterContinental Hong Kong THE CONCIERGE InterContinental Hong Kong 61

HONG KONG S BEST SPOTS FOR THE ART BUFF Hong Kong s art scene is sizzling and getting hotter. And while it s too expensive for most artists to live here, art is big business for international collectors and curators. The city is surpassed only by New York and London in art market revenue, making it the undisputed art hub of Asia. That s great news for anyone who wants to enjoy and maybe invest in art of all kinds. We ve rounded up some of the best art destinations Hong Kong has to offer. Galleries The Central district has a concentration of exciting galleries to satisfy your art urge. The Pedder Building on Pedder Street, just off Queen s Road Central, is a good starting point, with several top galleries under one roof. From there, you can continue walking West to H Queen s (80 Queen s Road Central), the newest venue for galleries and exhibitions on Hong Kong s vibrant art and lifestyle scene. Then continue up to Wyndham Street and Hollywood Road, where you will find a sprinkling of galleries amidst trendy restaurants, bars and antique shops. Art Centres & Districts When it comes to pushing the art envelope, Para Site Art Space may be the pushiest. This quirky collective, run by independent artists, is known as ground zero for conceptual art exhibitions and educational projects. Emerging local artists and international sensations like Ai Wei Wei have had their moments here. (22/F Wing Wah Industrial Building, 677 King s Road, Quarry Bay) Hong Kong Art Centre is an incubator for contemporary art and culture. Along with visual arts, film, and video exhibitions, it hosts studios, public art projects, and art conferences. (2 Harbour Road, Wanchai) In Kowloon, check out Cattle Depot Artist Village. This thriving art community once a cluster of slaughterhouses was transformed by painters, sculptors, multimedia artists and others into a sprawling showcase for their work (63 Ma Tau Kok Rd, Ma Tau Kok). The village is home to approximately 20 art organisations, including Videotage, a Unesco-listed media art organisation that focuses on new media. Over the last few years the industrial pocket of Wong Chuk Hang, situated between Aberdeen and the southern beaches on Hong Kong Island, has become a thriving art district and hub of creativity, with galleries of all sizes hidden in industrial buildings. Since its creation in 2013, the South Island Cultural District (SICD). has experienced rapid growth and is now composed of 23 local and international contemporary art galleries, artist studios and non-commercial art spaces. It offers monthly cultural programmes with exhibitions ranging from emerging local artists to international icons. Thanks to the MTR South Island Line, this area is now accessible within seven minutes from the Admiralty Station. Hong Kong Art Week is a sprawling, 12-day event that envelops the city every fall with a varied slate of activities. Museums All eyes are on West Kowloon, where the waterfront Cultural District project is currently underway. The massive complex will be anchored by M+ Pavillion, a museum of visual culture set to open in Until then, the Cultural District Authority is mounting exhibitions in the smallerscale M+ Museum on the site. Festivals and Fairs Art Basel expanded to Hong Kong in 2010 and quickly assumed a prominent role in the region s burgeoning art scene. Held in March each year, the event draws global and regional collectors, with international and Asian exhibitors showcasing important 20th and 21st century works of art: paintings, sculptures, drawings, installations, photographs, film, video, digital art, and more by established and emerging artists. Art Central, held on the central harbourfront the same week as Art Basel, has grown a loyal following since it launched in Other opportunities to delve into art include the twiceannual Asia Contemporary Art Show, (also held in March and again in the fall); the Affordable Art Fair (in May) and Fine Art Asia (in early October). Hong Kong Art Week (usually held in November) is a sprawling, 12-day event that envelops the city every fall with a varied slate of activities. The Hong Kong Art Gallery Association, more than 50 member galleries strong, hosts an array of programmes that draw throngs of art aficionados and newcomers to the art scene. Highlights include exhibitions, painting demonstrations, walking tours, live performances, receptions, symposia, family art days, a Gallery Walk for Charity, wine tastings, and more. Auction Houses Both Christie s and Sotheby ss hold auctions in Hong Kong in the spring and fall. Please check with our Concierge for upcoming dates. In addition, other international and regional high-end auction houses are riding the wave, with the major players racking up multi-billions in sales across numerous categories. At Christie s Asian 20th Century and Contemporary Art sale last fall, a work by Zao Wou- Ki set a new world record for an oil painting by any Asian artist. Christie s also saw robust competition at its inaugural Impressionist sale thanks in part to several works by Monet. Sotheby s Hong Kong recently had brisk sales in rare Chinese ceramics, Ming furniture, and iconic Western works featuring Andy Warhol s Mao and an acrylic by Jean-Michel Basquiat. The local auction landscape also includes niche houses like China Guardian, specialising in Chinese paintings, calligraphy, and furniture, and Tiancheng International, which also focuses on Chinese paintings as well as contemporary Chinese art and jewellery. 62 THE CONCIERGE InterContinental Hong Kong THE CONCIERGE InterContinental Hong Kong 63

DISCOVER THE CITY S CHINESE HERITAGE Hong Kong: where 2,000+ years of Chinese culture and history are packed into a 426 sq. mile area, permeating the lives of over 7 million residents. How can one possibly explore the heritage of a region whose roots dates back to the Qin dynasty? Start by stepping outside. You ll see a tableau crackling with kinetic energy, vibrant colours, a cacophony of sounds, and piquant aromas. If you want to discover the Chinese pulse of Hong Kong, we recommend taking a multi-sensory approach. See Ancient Chinese heritage is on display year-round at Hong Kong s many festivals. Each has its own customs, so depending on when in the lunar calendar you re here, you might encounter a dragon boat race, a display of lovely lanterns, or outdoor performances to entertain wandering ghosts. You may also notice a proliferation of symbolic foods like tong yuen (a sweet soup with balls of sticky rice) and moon cakes. The grandest festival of them all is Chinese New Year, when colourful parades wend through the streets to welcome the New Year the age-old way with gigantic unicorn and dragon puppets, lion dancers, drummers, acrobatics, floats, eye-popping costumes, and a spectacular fireworks display. Taste For a mouthful of Chinese heritage, skip the upscale fusion scene and hit the streets. You ll find traditional Cantonese flavours served up in modest restaurants, food carts and market stalls everywhere. Travel back to pre-colonial days with authentic preparations of abalone, goose web, or sea cucumber. Then visit a Chinese Medicine shop where herbal folk medicine has been brewed, dispensed, and consumed for over 100 years. Hear Chinese opera is a centuries-old touchstone of Chinese culture. Every aspect is steeped in symbolism and ritual from the nuanced delivery of spoken or sung text and use of traditional instruments to the makeup, costumes and hair. Master performers are skilled in highly specialized styles of singing, movement, speech and facial gestures. Although the plots are based on myths and history, you don t have to understand the language or know Chinese culture to be captivated by the spectacle of this extraordinary ancient art form. Feel Most locals practice some elements of Buddhism, Taoism, and Confucianism, and many look to deities for guidance and fortune. Hundreds of temples and shrines in and around the city some breathtakingly gorgeous, some quite modest are a testament to the living spirit of ancient Chinese religions. Feel the transcendent power of ritual and spiritualism in sacred spaces like Chi Lin Nunnery; the Wong Tai Sin Temple, where worshippers pray to a fourth-century Taoist priest or the Seven Sisters Temple, where couples seek love and fertility. Smell Incense, so integral to Chinese culture, has been used for thousands of years to purify spaces, as an offering to the gods and ancestors, in medicine, and even as an art form. An aromatic lesson in Chinese history awaits you in temples, homes, and businesses everywhere. Or take an olfactory tour back in time at a Hong Kong spice emporium. Redolent of orange peel, Sichuan peppercorn and chili, it s like a bouquet of China that s been passed down for hundreds of generations. 64 THE CONCIERGE InterContinental Hong Kong THE CONCIERGE InterContinental Hong Kong 65

THE OTHER SIDE OF HONG KONG: THREE ISLAND WEEKEND GETAWAYS It s hard to imagine that just a few miles from the frenzy of Hong Kong s skyscrapers and 7 million inhabitants are idyllic places that seem frozen in time. But this is exactly what you ll find in many of Hong Kong s Outlying Islands. Over 260 islands are scattered around Hong Kong. Because transportation to these islands remained inconvenient until relatively recently, development came late, and many remain virtually untouched by the modern age. A visit to Hong Kong can be exhilarating and exciting; a weekend getaway to the Outlying Islands can be a welcome contrast, providing rest and respite from the boisterous city. Lantau Island This is Hong Kong s largest Island, and it has a little bit of everything, even Disneyland. That s right, Hong Kong Disneyland is on Lantau Island at Penny s Bay, and it attracts millions of visitors each year. Other popular places include the Tian Tan Big Buddha and Po Lin Monastery. The beautifully ornate monastery was founded in 1906, and the spectacular 34-meter Buddha statue was completed in Near the monastery, experience Ngong Ping 360, which includes the Cable Car that offers breathtaking views of the lush forest and pristine coastline and the Ngong Ping village. Lantau Island also has some of the best hiking trails in the environs of Hong Kong. Take the Tung Chung to Tai O (coastal route) or the Ngong Ping to Lantau Peak (uphill route) for arresting panoramas of the sea and island. Lamma Island A favourite place of expats, Lamma Island offers a multicultural experience with great food, beaches and hiking. Check out Cave Kamikaze (on the Lamma Island Family Trail on the east shore of Sok Kwu Wan shoreline), a base for Japan s kamikaze team during World War II. Speedboats destined for suicide missions against Allied ships were hidden there. For some downtime, visit Hung Shing Yeh Beach (on the Lamma Island Family Trail on Hung Shing Ye shoreline) for powdery sand, crystal-clear water and lots of sunshine. Although fishing isn t the dominant industry it once was, Lamma Fisherfolk s Village (on the Lamma Family Island Family Trail on the south shore of Sok Kwu Wan Bay) is maintained by local fishermen and gives a glimpse into the past. Visitors can try their hand at angling, catching fish, hauling in nets and weaving rope. The island is less than five miles in length, and a walk along the Lamma Island Family Trail (from Yung Shue Wan to Sok Kwu Wan, or vice-versa) will give you a good view of the island. Try the Ling Kok Shan Hiking Trail for a trip back in time you ll see rustic old villages along the sea on this scenic hike. No visit to Lamma Island is complete without stopping for lunch or dinner at one of the local seafood restaurants, located near the ferry pier. Peng Chau Go back a half a century and live on island time for a day while you enjoy fresh seafood, rustic temples and scenic hiking. Be sure to climb Finger Hill (in the southeastern part of the island on the Peng Chau Family Trail), the best place on the island for a panoramic view. From there, you can see the impressive Tsing Ma Bridge and Hong Kong Disneyland on Lantau Island. Be sure to stick around to see the gorgeous sunset. Traces of Peng Chau s former days can be seen in the ruins of the Lime Kiln Factory (2, Nam Wan Shan Ting Tsuen) and Match Factory, remnants from a bygone era. Visit the impressive Lung Mo Temple (15 Chin Yan Street, Tung Wan and touch the dragon bed for good luck). Hike the Peng Yu Path to take in the island s forest and seaside scenery. Stop at Old Fisherman s Rock and enjoy the remote beach, which you might just have all to yourself. TRANSFORM YOUR SMILE! Lazer bleaching 3D imaging Fine porcelain crowns in one day.
