2 Chicken Spicy Pecan Popcorn Chicken with Creamy Ranch Chunks of chicken breasts dredged in flour, eggs, and dipped into a coating of whole-wheat breadcrumbs, ground pecans, and chili powder, then baked in the oven and served with a homemade ranch dressing dip of buttermilk, mayo, and seasonings. Chicken Cordon Bleu Burger Ground chicken seasoned with thyme and chives, formed into patties stuffed in the middle with chopped ham and Swiss cheese, then grilled and served on a hamburger bun with baby spinach and a Dijon-Herb Mayonnaise. Ginger Chicken with Citrus Juices A flavor-packed Indian dish of chunks of chicken breasts braised in pineapple, orange, and lemon juices with caramelized onions, Serrano peppers, ginger, cilantro, and finished with some finely-chopped red bell pepper and garam masala. Tuscan Stuffed Chicken Breasts Butterflied chicken breasts layered with a thin egg omelet, Parmesan cheese, spinach, and toasted pine nuts, rolled up, coated with olive oil, rosemary, sage, and garlic, and roasted in the oven with white wine. Negima Yakitori (Chicken and Scallion Skewers) Japanese-style kabobs of chunks of chicken thighs (or breasts) and green onion on bamboo skewers, dipped in Tare Sauce rice wine, mirin, soy sauce, and sugar and broiled to a glaze in the oven. Chicken with Artichokes and Mushrooms Pan-seared chicken breasts, sliced mushrooms and artichoke hearts braised in white wine and chicken stock with shallots and tarragon, and finished with a dollop of Greek yogurt, lemon juice and parsley. Chicken Marengo Pan-seared chicken breasts in a tomato, red wine, and demi-glace sauce with chunks of Portobello mushrooms, shallots, garlic, and thyme. Sweet Curry and Cornflake Chicken Fingers Chicken tenders marinated in orange juice concentrate, then breaded with ground corn flakes, ground coconut, mild curry powder, sugar, and garlic, and baked in the oven until golden. Green Chicken Masala Chunks of chicken breasts in an herb curry with coconut milk, cilantro, mint, onion, garlic, jalapeno, lemon juice, and Indian spices.

3 Chicken Tinga Tacos Shredded chicken thighs braised in the oven with a pureed sauce of tomatoes, chipotle peppers in smoky adobo sauce, chicken stock, onion, and garlic, tossed with cilantro and scallions, and served in corn or flour tortillas with crumbled Cotija cheese. Herb-Grilled Chicken with Pepperoni Sauce Chicken breasts coated with thyme, parsley, and garlic oil, then grilled and served with a Top Chef prize pepperoni sauce nitrite-free pepperoni braised and pureed in an intense, thick tomato and chicken stock sauce with onions, garlic, fennel seed, and crushed red pepper flakes. Thai Chicken and Watermelon Salad Chicken breasts coated in minced lemongrass and grilled, then diced into cubes and tossed in a salad with cubes of watermelon, chopped cilantro and mint, and a refreshing dressing of chile peppers, garlic, brown sugar, lime juice, and fish sauce. This is a fresh item which cannot be frozen and should be eaten within 3-4 days. Grilled Chicken Sandwich with Smoky Bell Pepper Pesto Chicken breasts lightly seasoned and grilled, then piled onto Kaiser rolls with a pesto of pureed roasted red bell peppers, chipotle peppers in adobo, garlic, almonds, oregano, and olive oil, with slices of goat cheddar cheese and baby arugula. Chicken Parmesan Meatloaf A free-form meatloaf of ground chicken, Parmesan cheese, sautéed onions, garlic, breadcrumbs, milk, tomato paste, egg, and herbs, coated with marinara sauce and topped lightly with Parmesan and mozzarella cheeses and baked until golden. Diced Chicken with Yogurt and Red Bell Peppers An Indian dish of diced chicken breast marinated with garlic, ginger, and vinegar, then pan-seared with cumin seeds, finely-chopped red bell peppers and onions, braised in Greek yogurt with cilantro and dry-roasted ground cumin, and sprinkled with garam masala. Malaysian Chicken Kabobs Chunks of chicken breasts marinated in oyster sauce, soy sauce, ketchup, brown sugar, garlic, ginger, shallots, and Sriracha, then threaded onto skewers with diced pineapple, red bell pepper, and red onion, and either broiled in the oven or left for you to grill.

4 Turkey Roasted Zucchini and Turkey Noodle-less Lasagna Layers of thinly-sliced roasted zucchini, a meat sauce of ground turkey, crushed tomatoes, onion, carrots, garlic, herbs, and white wine, and ricotta cheese filling with herbs, garlic, Parmesan cheese, and egg, topped with more Parmesan and mozzarella cheese and baked in the oven. Rosemary Turkey Meatballs in Red Pepper Sauce Meatballs of ground turkey, breadcrumbs, rosemary, onion, garlic, and Parmesan cheese, baked in the oven and served with a pureed sauce of roasted red peppers, sautéed shallots, garlic, chicken stock, rosemary, and parsley. Moroccan-Spiced Turkey Patties Ground turkey mixed with dried currants, tomato paste, garlic, ground ginger, cumin and cinnamon, formed into patties and pan-seared, then served with a cool sauce of plain yogurt, lemon juice, parsley, garlic, cumin, and cayenne. Southwestern Turkey Meatloaf Ground turkey mixed with sautéed onions, mild poblano peppers, and garlic, ancho ketchup (ketchup seasoned with smoky, mild ancho chili powder, cumin, ground mustard, oregano, and brown sugar), cilantro, queso blanco (crumbly Mexican cheese), breadcrumbs, egg, milk, and Worcestershire sauce, then formed into an oval, covered with more ancho ketchup, and baked until caramelized. Sweet-and-Sour Meatballs Ground turkey and pork mixed together with shredded carrot, scallions, ginger, Chinese five-spice, chopped pineapple, breadcrumbs, and egg, formed into meatballs and baked in the oven, then served coated in a sweet and sour sauce of pineapple juice, rice vinegar, soy sauce, ketchup, brown sugar, cornstarch, and crushed red pepper, speckled with sautéed, finely-diced red bell peppers and pineapple. Ground Turkey with Cardamom (Illaichi Keema) An Indian dish of ground turkey cooked together with ground green and black (smoked) cardamom pods, cloves, cinnamon, garlic, ginger, onions, tomatoes in a yogurt sauce with minced serrano peppers and garam masala. Beef Italian Potpies Ground beef cooked into a marinara sauce with onions, carrots, red bell peppers, and zucchini, poured into a casserole and topped with a fluffy Parmesanrosemary biscuit topping.

5 Chicken Fried Steak and Biscuits Cube steaks dredged in seasoned flour and egg, fried until crispy, and served on White Cheddar and Chive Cream Biscuits. Cuban-Style Ropa Vieja Strips of flank steak braised until tender with sliced onions, red bell peppers, Cubanelle peppers, crushed tomatoes, white wine, beef stock, cumin, thyme, oregano, garlic, green olives, capers, vinegar, and cilantro. NY Strip Steak with Oven-Roasted Tomato Salsa NY strip steaks coated with ground allspice, coriander, dry mustard, and sugar, then pan-seared and served with a salsa of slow-roasted tomatoes tossed with balsamic vinegar, thyme, and parsley. Chilean Corn and Meat Pie (Pastel de Choclo) Ground beef sautéed with onions, garlic, raisins, sliced black olives, tomato paste, oregano, paprika, and cumin, then poured into a casserole, topped with slices of hard-boiled eggs, and a crust of pureed fresh corn, basil, masa harina (fine corn meal), cornstarch, milk, and sugar, then baked into a delicious pie. Braised Meatballs in Red Wine Gravy Meatballs of ground beef, breadcrumbs, onions, eggs, milk, parsley, and summer savory, baked in the oven, then coated in flour and browned in a pan and served in a beautiful pan gravy of red wine, tomato paste, beef stock, butter, flour, and parsley. Lemon and Garlic-Marinated Flat Iron Steak Tender, flavorful flat iron steaks marinated with minced garlic, scallions, bay leaves, lemon slices, and olive oil, then grilled and sliced. Beef Enchiladas with Red Chile Sauce Ground beef with onions, garlic and spices and mixed with cilantro, jalapenos, and cheese and tucked into corn tortillas, topped with red chile tomato sauce and cheese and baked until golden. Natchitoches Meat Pies A Louisiana classic of flaky pastry crusts filled with a sautéed mixture of ground beef, ground pork, onion, green bell pepper, garlic, thyme, ground cloves, cayenne pepper, flour and chicken stock, folded over into half moon-shaped pies and baked in the oven. Grilled Ribeye with Roasted Garlic Chipotle Mayonnaise Grilled ribeye steaks served with a cold sauce of roasted garlic, mayo, chipotle peppers in smoky adobo sauce, and lemon juice. The sauce should not be frozen and should be eaten within one week.

6 Mini Honey-Mustard Meatloaves Ground beef mixed together with shredded white cheddar cheese, shredded zucchini, minced shallots, breadcrumbs, egg, and Worcestershire sauce, then formed into individual mini-meatloaves, brushed with a honey-mustard and ketchup mixture, sprinkled with a little more white cheddar and baked in the oven. Cowboy Steak and Whiskey Butter Ribeye steaks coated in chile powder, chipotle chile powder, smoked paprika, and sugar, then grilled and topped with a pat of whiskey butter butter flavored with good bourbon, minced shallots, Dijon mustard, Worcestershire sauce, and parsley. Steak Parmesan Beef cube steaks dredged in flour, eggs, and Italian breadcrumbs, Parmesan cheese, and herbs, then pan-fried, topped with mozzarella and Parmesan cheeses, and served with marinara sauce. Pork Lemon-Oregano Pork Tenderloin Stuffed with Spinach, Feta and Pine Nuts Pork tenderloin marinated in lemon juice, olive oil, oregano, crushed fennel seeds, red pepper flakes, and garlic, then butterflied open and filled with spinach, feta cheese and pine nuts, rolled up, pan-roasted and sliced to serve. Crunchy Pork Kimchi Burgers Ground pork mixed with finely-chopped kimchi (Korean pickled cabbage), ginger, garlic, and scallions, formed into patties, dredged in flour, dipped in eggs, and coated with Panko breadcrumbs, then pan-fried, and served with mayo seasoned with sesame oil, soy sauce, and toasted sesame seeds on burger buns. Pork Chops with Port-Blackberry Sauce Pan-seared, thin-cut pork loin chops with a snappy pan sauce of port wine, blackberry juice, balsamic vinegar, chicken stock, shallots, thyme, butter, and studded with fresh blackberries. Pork Tinga Tacos Cubed pork shoulder braised slowly in a sauce with crushed tomatoes, onions, a little chorizo sausage, garlic, diced red potatoes, smoky chipotle peppers in adobo sauce, marjoram and thyme, and served in corn or flour tortillas with sliced avocado and crumbled queso fresco (Mexican white cheese). Thai-Style Pork Spareribs Pork spareribs marinated in a puree of cilantro, shallots, scallions, ginger, garlic, soy sauce, fish sauce, and sugar, then roasted in the oven until tender.

7 Asian Noodles with Pork A Singaporean dish of ground pork sautéed with shallots, garlic, Chinese black bean sauce, brown sugar, crushed red pepper, soy sauce, rice vinegar, and fish sauce, then tossed together with pieces of broccolini, Chinese noodles, and a sauce of chicken stock, oyster sauce, rice vinegar, sesame oil, and chile-garlic sauce. Pork Chops with Tomato Chutney Pan-seared pork loin chops with a sweet-and-sour chutney of chopped tomatoes, onion, golden raisins, mustard seeds, cider vinegar, and brown sugar. Grilled Citrus-Mojo Pork Tenderloin with Creamy Cilantro-Lime Sauce Pork tenderloin marinated in a citrus mojo of pureed sautéed onion and garlic, lemon and orange juices, and white vinegar, then seasoned with a dry rub of cumin, garlic powder, onion powder, salt and pepper, grilled, sliced, and served with more of the citrus mojo and a creamy sauce of pureed jalapenos, garlic, ginger, onion, lime juice, mayo and cilantro. Sweet-and-Sour Pork Shoulder with Pineapple Pork shoulder roast coated in paprika, onion powder, garlic powder, and Sriracha (Asian spicy chile-garlic sauce), then roasted slowly with pieces of pineapple, brown sugar, and cider vinegar. Other Meats Lamb Chops with Goat Cheese Sauce Pan-seared lamb loin chops with a pan gravy of white wine, chicken stock, goat cheese, and rosemary. Greek-American Lamb Gyros Ground lamb pureed with onion, garlic, bacon, and oregano, formed into a loaf and baked in the oven, then sliced thinly and browned under the broiler, and served in pita bread with sliced tomatoes, onions, and a sauce of Greek yogurt, mayo, garlic, lemon, mint and parsley. Yogurt-Braised Meatballs (Gushtaaba Kari) Indian meatballs of ground lamb seasoned with ground ginger, fennel, and black cardamom, then formed into large meatballs and braised in a sauce of yogurt, onions, spices, and finished with a sprinkling of chopped mint. Lamb Shawarma Thinly-sliced leg of lamb marinated in cumin, nutmeg, allspice, cinnamon, cloves, cardamom, garlic, lemon juice, cider vinegar, and olive oil, then pan-seared with sliced onions, and served with a sauce of tahini, mayo, water, garlic, and lemon juice.

8 Ground Lamb with Spinach and Coconut Milk (Saag Gosht) An Indian dish of ground lamb sautéed with onions, garlic, ginger, Serrano peppers, black cardamom pods, cinnamon, cumin, coriander, fenugreek, garam masala, then braised with chopped spinach and cilantro in coconut milk. Gorgonzola and Sun-Dried Tomato Bison Burger Ground buffalo mixed together with finely-chopped sun-dried tomatoes, garlic, and Gorgonzola cheese (or feta), then formed into patties, grilled, and served on buns with lettuce and tomatoes. Buffalo Steak with Grilled Tomato Vinaigrette Grilled grass-fed buffalo steaks with a pureed sauce of grilled plum tomatoes, olive oil, red wine vinegar, molasses, garlic, and cumin. Seafood Sea Scallop Surf and Turf Pan-seared sea scallops served with thick, meaty slices of whole cauliflower heads roasted in the oven, and drizzled with a pan sauce of lemon juice, white wine, stock, shallots, capers, finely-chopped sun-dried tomatoes, parsley, and toasted pine nuts. This is a complete meal with no additional side dishes. Grilled Salmon with Green Goddess Sauce Grilled salmon served with a cold, herb sauce of pureed parsley, chives, tarragon, mayo, buttermilk, garlic, lemon juice, and anchovies. The sauce should not be frozen and should be eaten within one week. Prosciutto-Wrapped Halibut with Asparagus Sauce Halibut filets wrapped in prosciutto and pan-seared, then served with sautéed asparagus tips and a sauce of pureed, blanched asparagus, baby spinach, scallions, lemon and butter. Sautéed Shrimp with Creamy Grit Cakes Pan-seared shrimp with country ham bits, pan-roasted corn, diced red bell pepper and Vidalia onion, asparagus slivers, and Cajun cream sauce with panseared cakes of creamy cheese grits. This is a complete meal with no additional sides. Wild Salmon Burgers with Lemon Dill Yogurt Finely chopped fresh, wild salmon mixed together with minced shallots, dill, parsley, lemon zest, fresh breadcrumbs, and egg, formed into patties and panseared, then served on whole wheat burger buns with a dollop of Greek yogurt seasoned with lemon juice, dill, parsley, garlic, and cayenne.

9 Lemon Parmesan-Crusted Sole Delicate sole filets dredged in flour, dipped in egg, and breaded in finely-ground panko breadcrumbs, parmesan cheese, lemon zest, basil, parsley, and seasonings, and baked in the oven. Scallops with Cherry-Tarragon Sauce Pan-seared sea scallops with a sauce of chopped fresh cherries, shallots, white wine, chicken stock, and tarragon. Swordfish Puttanesca Pan-seared swordfish steaks with a tomato sauce flavored with green olives, capers, garlic, anchovies, red pepper flakes, lemon juice and parsley. Grilled Chile-Lime Shrimp Shrimp marinated in lime juice, soy sauce, honey, olive oil, garlic, jalapeno, chile powder, and cilantro and grilled. Shrimp and Corn with Basil Shrimp seared in a little butter along with fresh corn-off-the-cob, basil, scallions, crushed red pepper, and lemon juice. Crab-Meat-Stuffed Sole Sole filets filled with a mixture of lump crab meat, mayo, Dijon mustard, finely diced red bell pepper, and parsley, then rolled up and baked in the oven and served with lemon wedges. Zucchini-Wrapped Halibut with Pesto Halibut filets wrapped with thinly-sliced zucchini smeared with basil pesto, and pan-seared in olive oil. Grilled Salmon with Basil-Lemon Butter Grilled salmon filets topped with a pat of complex butter seasoned with chopped, fresh basil, lemon zest and juice. Shrimp and Sausage Red Rice White rice cooked together with shrimp, sliced Andouille sausage, tomatoes, onion, celery, green bell pepper, garlic, thyme and crushed red pepper. Pasta Calamari Bolognese Rings of fresh squid braised slowly until tender with shallots, carrots, celery, garlic, white wine, crushed tomatoes, and herbs, and served over pasta.

10 Cheese Tortellini with Grilled Vegetables Cheese-filled tortellini pastas and grilled zucchini, red bell pepper, asparagus, and yellow squash tossed together in a lemon-olive oil dressing with basil, scallions, feta cheese, and toasted pine nuts. This is a complete meal with no additional side dish. Herbed Fazzoletti with Asparagus and Buffalo Mozzarella 3-inch squares of sheet pasta in a delicate herb pesto of pureed parsley, chives, tarragon, chervil, lemon juice, and olive oil, with sautéed asparagus, toasted pine nuts, and cubes of fresh buffalo mozzarella cheese. Strozzapreti with Lamb Ragu Strozzapreti pasta with a thick sauce of ground lamb, tomatoes, chicken stock, onion, fennel, garlic, harissa (Tunisian red pepper sauce), paprika, fennel seed, cumin, crushed red pepper, and finished by folding in a handful of cherry tomatoes, scallions, and mint, and topped with Pecorino-Romano cheese. Garden-Greens Pasta Salad Spiral gemelli pastas tossed with blanched asparagus, peas, baby arugula, sliced radishes, and chives, and coated with a sauce of goat cheese, lemon juice, olive oil, a little cream, and chopped pepperoncini. Vegetarian Summer Garden Enchiladas Corn tortillas stuffed with sautéed red onion, red bell pepper, poblano peppers, zucchini, corn, black beans, garlic, cilantro, and Monterey Jack and cheddar cheeses, then coated in homemade red chile sauce and topped with cheese and baked in the oven.
