4 INTRODUCTION The word matcha ( 抹茶 ) in Japanese is made up of the character for "grinding" and the character for "tea". It is quite literally, ground tea. But white mulberry matcha is so much more! It is a delightful hot beverage, foamy like a cappuccino with a rich green color and pronounced vegetal flavor reminiscent of alfalfa sprouts. It is perfect for people wanting a powder to add to smoothies, baked goods or other recipes. Matcha is most commonly often ground Camellia sinensis but in Japan, white mulberry matcha is also popular. Our White Mulberry Matcha finely ground. 6 Matcha Tea Latte Total Time: 30 minutes Yield: 1 cup of latte ¾ cups of milk of your choice ¼ cup boiling water 1 tsp. White Mulberry Matcha powder ½ tsp. of cinnamon or honey to taste 1. Take enough water to a boil for one cup of serving latte. 2. Whisk 1 tsp. of matcha with 1/4 cup boiling water 3. When Matcha powder is dissolved into water, mix in the 3/4 cup milk. 4. Add a pinch of cinnamon and sweeten to taste with honey if desired. One glass of Matcha is the equivalent of 10 glasses of green tea in terms of its nutritional value and antioxidant content 6

7 Matcha Mint Iced Tea Total Time: 20 minutes Yield: 2 glasses of iced tea 2 cups of filtered water 2 cups crushed ice 2 tsp. White Mulberry Matcha powder 1 middle size lime slice 5-6 fresh mint leaves Honey or cane sugar to taste. 1. Shake together the water and matcha until there are no lumps using a cocktail shaker (or a large jar with a non-leaky lid). 2. Add crushed ice, mint leaves, cane sugar and lime juice. Shake it some more. 3. Add honey or cane sugar if desired. 4. Garnish with extra mint leaves and wedges of lime if desired. To the bottom of a tall glass stir warm water and matcha until blended. 2. Add ice cubes to glass and slowly add sparkling water. 3. Stir until blended and squeeze lime wedge on top. 4. 12 Meringue Matcha Cookies with Dark Chocolate Total Time: 1h 45 min Yield: cookies 2 egg whites of room temperature 1/8 tsp. cream of tartar ½ tsp. White Mulberry Matcha powder 1/2 tsp. vanilla extract ½ cup sugar 2 ounces finely chopped dark chocolate 1 pinch salt 1. Preheat oven to 200 F 2. Whisk egg whites, cream of tartar, and salt with a mixer on medium speed until blended. 3. Add the sugar, 1 tbsp. a time. Continue to mix on high speed until stiff, glossy peaks form. Mix in matcha and vanilla, and then fold in the chocolate. 4. Spoon the meringue mixture onto the parchment lined sheets (10-12 per sheet). Bake in the preheated oven for 1 hour, turn off the oven and open the door, and let the cookies cool on the baking sheets. The most powerful catechin found in Matcha tea is EGCG, which is believed to be a potent anti-carcinogen. 12

13 Matcha Donuts Total Time: 45 minutes Yield: 6 donuts 1 egg 1. Preheat oven to 425 F. 3/4 cup cake flour 2. Add flour, sugar, baking powder, salt, and 1 tbsp. White Mulberry Matcha powder matcha in a large bowl and whisk to combine. 1/2 tsp. baking powder 3. Add an egg, milk, melted butter and honey to 2 tbsp. sugar the mixing bowl, and whisk until incorporated. 1/4 tsp. salt 4. 15 Matcha Tea Tiramisu Total Time: 2h 15 min Yield: 10 mini cups Matcha Syrup 3/4 cup water 1 tbsp. White Mulberry Matcha powder ½ cup sugar Matcha Sponge Cake 4 eggs 7 tbsp. sugar 3/4 cup flour 2 tbsp. White Mulberry Matcha Matcha Cream 2 egg yolks 1 tbsp. sugar 2/3 cup mascarpone cheese 1/2 cup heavy cream 1 tbsp. rum 1 tbsp. White Mulberry Matcha 1. Making the matcha syrup- bring water and sugar to a boil. Simmer for 3 minutes and remove from heat. 2. Let the mixture cool, and then sift in the matcha. Whisk well. 3. Making matcha sponge cake, preheat oven to 350 F. Separate eggs. In a mixing bowl, whisk on low speed, the egg whites for 1 minute. Slowly add the sugar, turn speed to high. Mix until the stiff peaks form and the egg whites look shiny. 4. Add the egg yolks and fold to mix. Sift in matcha and flour to the egg mixture and beat to incorporate. Pour the mixture onto the sheet tray in oven and spread evenly. Bake for 10 minutes. 5. Making matcha cream, bring a small pot of water to a simmer. Put the egg yolks, sugar, and rum in a steel bowl that will sit on top of the pot. 6. Continuously whisk ingredients together for about 5 minutes. When the batter is lifted, it should fall in ribbons or smooth sheets that will hold their shape shortly before falling into the batter. Cool for 5 minutes. 7. In another bowl, whip the heavy cream until soft peaks form. Combine the whipped heavy cream and the egg mixture. Fold together. 8. Sift in the matcha and mix well, fold in the mascarpone cheese 9. In a small glass put in a piece of the sponge cake. Spoon on the matcha syrup over the sponge cake, making sure the sponge cake gets soaked with the syrup. Put the matcha cream on top. Lay on another piece of sponge cake. Pour on matcha syrup to the top-level sponge cake. Add the final layer of matcha cream and dust with matcha. 17 Oreo Cheesecake with Matcha Total Time: 1h 10 min Yield: 1 cheesecake, 8 slices 2 cups cream cheese 2 ½ cups Oreo crumbles 1 cup milk 1 tbsp. White Mulberry Matcha powder 1 cup brown sugar 4 tbsp., melted unsalted butter ¼ cup water 2 ¼ tsp, unflavored gelatin 1 ¼ cup heavy cream 1. Preheat oven to 325 F. 2. Combine 1 tbsp. sugar, butter and Oreo crumbles until moist and press into springform pan to create the crust. Bake 10 minutes, then cool. 3. Whip heavy cream until stiff peaks form. Whisk together cream cheese until fluffy and gradually add rest of sugar. 4. Heat the milk until it is hot and add matcha. Let milk cool then slowly stream into cream cheese mixture, while whisking. 5. Stir water and gelatin until blended. Fold whipped cream into cream cheese mix until combined, then fold in gelatin. 6. 18 Matcha Mousse Pie Total Time: 15 min + 1 overnight preparation time Yield: 1 pie, 8 slices 2 Cups graham crushed cracker 1/2 cup melted butter 1 tbsp. White Mulberry Matcha powder 1 ¼ cup sugar 6 tbsp. lime juice 2 ½ cups of heavy cream 1 unflavored envelope gelatin 1 ½ lime of zest 1 ½ oz. white chocolate shavings 10 oz. white chocolate, chopped 3 packages light cream cheese 1. Mix crackers, melted butter and ¼ cup sugar and press into the bottom and side of a springform pan. 2. Over medium heat, whisk gelatin and ½ cup heavy cream into key lime juice and simmer. Remove from heat. 3. Add chopped white chocolate and stir until smooth, then cool. 4. Cream together remaining sugar, cream cheese, ½ tbsp. matcha and lime zest using an electric mixer until smooth. Beat in cooled chocolate slowly. 5. In a separate bowl beat in remaining heavy cream and matcha until thick and stiff peaks have formed. Fold into white chocolate mix and pour into crust. Cover and freeze mixture overnight. 6. Transfer to pie plate and garnish with white chocolate shavings. L-Theanine in Matcha creates alpha waves, which lead to a state of relaxed alertness. 18

19 Cookies with Matcha Total Time: 30 minutes Yield: 36 cookies 5 ½ cups flour 1. Preheat oven to 350 F. 2 tbsp. White Mulberry Matcha powder 2. In a large mixing bowl cream together butter, ¾ cup sugar sugar, water and matcha. Add vanilla extract 1 tsp. vanilla extract and eggs, one at a time. Slowly add in flour to 1 ½ cup melted butter wet mixture until combined. ¾ cup powdered sugar 3. Chill cookie dough for 10 minutes. 4. Scoop cookie dough out in rounded teaspoons onto non-stick baking sheet. 5. Bake minutes or until cookies are set. Remove to baking rack to cool. 6. 20 Matcha Biscuits Total Time: 45 minutes Yield: 12 biscuits 2 cups flour 1 tbsp. White Mulberry Matcha powder 1 cup buttermilk 4tsp.baking powder 1/4tsp.baking soda 3/4 tsp. salt 4 tbsp. cold butter 1. Preheat oven to 450 F. 2. Combine flour, baking soda, salt and baking powder in a large mixing bowl. Rub butter into flour mix with your fingers until the mix looks crumbly. 3. Create a well in the middle of the mixture and pour in buttermilk then stir until dough comes together. 4. Turn the dough out onto a cool floured surface and sprinkle flour on top of dough. Fold dough about 5 times on itself and press into a 1-inch thick disk. 5. Using a 2-inch cutter, cut biscuits and place on baking sheet. Bake minutes or until biscuits are golden green-brown. Garnish if desired. Matcha is rich in catechin polyphenols - compounds with high antioxidant activity. 21 Cheesecake with Matcha Tea Total Time: 45 minutes Yield: 1 cheesecake 6 slices 2 packages cream cheese 1 tbsp. White Mulberry Matcha powder 2 eggs 2 tsp. vanilla extract 1 9-inch prepared graham cracker piecrust 1. Preheat oven to 350 F. 2. Soften cream cheese and using an electric mixer, mix cream cheese and sugar until well-blended and smooth in a large bowl. 3. Add the eggs, matcha, and vanilla extract and beat until well-blended. 4. Pour batter into piecrust and bake for minutes. Let it cool for 1-2 hours at room temperature and refrigerate for at least 3 hours. 22 Matcha Pound Cake Total Time: 1h 20 min Yield: 2 loafs 1 cup melted butter 1 tbsp. White Mulberry Matcha powder 2 Eggs ¾ cup powdered sugar 2/3 cup cake flour ¼ cup melted white chocolate 1 tsp. Baking powder 1. Preheat oven to 350 F 2. Combine cake flour, baking powder and matcha powder, sieve together and set aside. 3. Cream butter with half portion of sugar until light and pale, then add in the remaining sugar and mix well. 4. Drizzle in beaten egg a little at a time and beat until fluffy. 5. Fold in the sieved flour in batches until incorporated, then add warm melted white chocolate. Fold in until combined. 6. Pour the batter into the prepared pan and smooth the top with spatula. Bake for minutes or until a skewer inserted into the center of the loaf comes out clean. 23 Matcha Tea & Chocolate Macaroons Total Time: 1h 50 min Yield: 16 macarons Macaroon Shells 2 tsp. White Mulberry Matcha powder 12/3 cup confectioners sugar 3 egg whites Pinch of salt ¼ cup granulated white sugar 1 cup finely ground almonds Chocolate Filling 6 oz. white chocolate chopped (or use chips, roughly 1 cup) 5 tbsp. Heavy cream Making The Filling 1. Heat heavy cream in a small pan until it is just about to simmer. Pour over chopped white chocolate (in a bowl) and let that sit for 1 min 2. Then mix until you have a nice creamy consistency. Let it cool until okay to touch 3. Fill a piping bag and place into the refrigerator until ready to pipe White Mulberry Matcha Tea promotes healthy gut bacteria - ensuring proper digestion. 1. Line 2 baking sheets with parchment paper or silicon mat and get a pastry bag with a 1/2 inch plain tip prepared. 2. In a food processor pulse almond flour, matcha powder and powdered sugar until mixed and fluffy 3. In the bowl of your stand mixer, beat egg whites with the whisk attachment on medium low for 2 mins, gradually adding in the sugar. 4. Increase speed to 7 to whip for another 3 minutes and then at 8-10 for another 4 minutes. You should be getting a stiff meringue that you can make soft peaks with. Try not to over beat. 5. Fold the dry ingredients in 2 batches with a rubber spatula and make smooth sweeps to the bottom of the bowl. You do want to deflate the meringue and after about folding it should look glossy and when you drop some from your spatula to the batter, it takes about 10 secs for it to mold back into the mix. Don't over mix or it will a runny and watery mess! 6. Fill your pastry bag and pipe batter onto the prepared baking sheets in 3.5cm circles, spaced 1" apart. 7. Rap the baking sheet a few times about 1 inch above the counter top to flatten the macarons and to get rid of bubbles. Let them rest at room temp for 45-60mins. The tops should be dry and nothing should stick to your finger if you poke them. 8. Preheat your oven to 310 F. Bake for mins each pan separately and rotating pans halfway. You can check they are done by lifting one macaron you can sacrifice. If the feet comes off, leave it in longer. You always want to overbake than under bake. 9. Let cool completely before removing them from the paper. Line up similar sized ones and pipe the chilled filling onto 1 shell. Sandwich together. 10. Let them sit in the refrigerator in a sealed container for at least 1 day before serving. 23

24 Matcha Swiss Roll Total Time: 45 minutes Yield: 4 slices 3 egg yolks and whites 1. Preheat oven to 450 F. 2 tsp. White Mulberry Matcha powder 2. Beat the egg yolks and 1/2 the sugar until thick 1/4 cup fine sugar and pale. In another bowl, beat the egg whites 1/2 cup cake flour with the remaining sugar until stiff. Fold the 2 tbsp. melted butter egg yolk mixture into the egg white. 1/2 cups whipping cream 3. Fold in the flour mixture and melted butter. 1 tbsp. crystalized sugar Pour the batter into the prepared pan and bake 2/3 cup semisweet melted chocolate for 10 minutes. 4. Remove from the oven and let it cool for 10 minutes. 5. Making the filling, whip the cream with sugar until creamy and thick. Add melted chocolate and whip until incorporated. Keep in the refrigerator to chill. 6. Transfer the cake to parchment paper. Spread an even layer of filling onto the cake. Roll the cake up from the long end. Once it is firmly rolled up, wrap it up with the parchment paper and refrigerate it for at least 1 hour before serving. 25 Matcha Tea Steamed Cake Total Time: 25 min Yield: 4 steamed cakes 1 egg 1. Whisk together egg, honey 1 tsp. White Mulberry Matcha powder and yoghurt. Add the sugar 1 tbsp. honey and mix thoroughly. 3 tbsp. plain regular yogurt 2. Sift the flour and baking 1 ½ tbsp. sugar powder together and into the 1 tsp. baking powder egg mixture. 3. Sift the matcha powder and 1/2 cup baking flour fold until powder is well incorporated into the batter. 4. Place empty ramekins in the pan and pour water into the frying pan to halfway up the exterior of the ramekins, cover the pan with the lid, and bring water to a boil. Place cupcake liner inside. 5. Pour the batter evenly into cupcake liners. 6. When the water starts to boil, place the ramekins inside the pan. 7. Cover with the lid and steam over medium-low heat for minutes. 26 Matcha Pancakes Total Time: 30 min Yield: 6 pancakes 1/2 cup flour 1. Whisk together the flour, sugar, baking 2 tsp. White Mulberry Matcha powder powder, matcha and salt in a bowl. 3 tbsp. sugar 2. In another bowl combine sour cream, milk, 1 tsp. salt eggs, vanilla extract. 1/2 cup sour cream 3. Add the wet ingredients to the dry ones and 2 tsp. baking powder mix only until combined. 3/4 cup milk 4. Grease pan/skillet. 2 eggs 5. Pour the pancake batter into the skillet and 1 tsp. vanilla extract cook until bubbles appear on top and the bottom turns a light brown color. 6. Serve warm with your choice of toppings. 28 Lemon Matcha Mousse Total Time: 30 minutes Yield: 6 servings 4 juiced lemons 1 cup heavy cream 3 tsp. White Mulberry Matcha powder 2 tsp. lemon zest 3 large eggs 1 1/2cup sugar 1/8 tsp. kosher salt 1/2 lemon curd 2 pinches of salt mint or matcha powder for garnish 1. In heat-proof bowl whisk 3 whole eggs plus 3 egg yolks with 1 cup sugar, lemon juice, a pinch of salt, matcha and lemon zest. 2. Place bowl over a pot of simmering water and stir constantly until mixture thickens, about10 minutes. Remove from heat and set aside to cool, refrigerate for 2 hours 3. Take 1/2 of the remaining egg whites and a pinch of salt and whisk on high, then add 2 tbsp. sugar and beat until stiff peaks form. Fold egg white mixture into lemon mixture with a spatula 4. Whisk heavy cream on high speak until peaks form and fold in the lemon curd before pouring into a deep soufflé dish. 5. Garnish with mint or matcha powder, chill and serve cold. Dr. Oz revealed on his show that white mulberry leaves are also great for fighting cholesterol, boosting the immune system and weight loss. 28

29 Panna Cotta Total Time: 15 min + 2 h resting time Yield: 3 servings 1 cup milk 1. Place matcha, milk, water and sugar in a 1/3 cup water saucepan over low heat until sugar is 2 tsp. White Mulberry Matcha powder dissolved. 1/2 cup sugar 2. Whisk gelatin into milk mixture until 4 tsp. gelatin powder dissolved. 3. Pour into glass ramekins and refrigerate until set, about 2 hours. Garnish with berries if desired. In China, White Mulberry leaves are considered a blood tonic and are used to treat a variety of ailments such as fatigue, anemia, and insomnia. 29

30 Matcha Cream Total Time: 10 min + 2 h resting time Yield: 1 cup of cream 1 cup vanilla yoghurt ¼ cup whipping cream 2 tsp. White Mulberry Matcha powder 2 ½ cups confectioners sugar 1. Line a sieve or colander with cheesecloth and set over a bowl, leaving at least 1/2 inch clearance from the bottom. 2. Spoon in yogurt, cover and let drain in the refrigerator for at least 2 hours. 3. Whip cream in a small bowl until soft peaks form. Add sugar and continue whipping until firm peaks form. 4. Fold in drained yogurt, along with matcha. Bring sugar and water to a boil over medium 1 juiced lime high heat, then reduce heat and allow mixture 1 tsp. White Mulberry Matcha powder to simmer until sugar is fully dissolved. 1/4 cup corn syrup Remove from heat to cool completely 1 cup sugar 2. In a food processor, combine lime juice and 1 cup water strawberries to puree. 1 tbsp. pureed ginger 3. When syrup has cooled, add to strawberry puree along with corn syrup and stir well. 4. Place in air tight container and freeze for at least 2 hours prior to serving Matcha, which literally means finely powdered tea, is made from young leaves and is strictly harvested from organic plantations. 32

How to brew a matcha with White Mulberry Tea What you will need: A matcha bowl (called a Chawan), a bamboo whisk (called a Chasen), hot water about 175 F (80 C), and White Mulberry Matcha powder from Immortalitea. There are actual two styles of traditional matcha preparations in Japan. But, most Westerners are more familiar with what is called Usucha. So, that s what I ll describe here. Step 1: Pre-warm your matcha bowl by pouring about ½ cup of near boiling water in the bowl. Swish the water around the bowl and discard the water. Carefully dry the bowl. Step 2: Scoop about 1 tsp of White Mulberry Matcha powder into your bowl. Matcha tends to clump up in the pouch so traditionally one should sift the matcha. Honestly, I m usually too lazy to do this step, so I just dry whisk the matcha once it is in the bowl. But if you re a purest then grab a fine mesh sifter and sift the powder into the bowl. Step 3: Pour about 2 Tbs. of hot (175 F) water on the matcha powder in your bowl. Whisk slowly at this point to create a thin paste. Make sure you gather up all the powder so there are not loose clumps in the bowl. Step 4: Add another ½ cup of hot water to the bowl. Step 5: This is the trickiest part of brewing a traditional matcha. Whisk the contents of your bowl in a rapid w motion. Do not let the tips of the bamboo whisk touch the bottom of the bowl. The whisk should be suspended slightly above the bottom of the bowl. Your goal here is to create nicely uniform froth. The bubbles should be small, uniform in size and evenly distributed. Step 6: Groom your froth by lifting the whisk almost out of the liquid and move it very gently through the surface of the froth to break up any large bubbles. 33

34 How to brew a lazy matcha with White Mulberry Tea You will need the same things as for regular Matcha Step 1: Scoop about 1 rounded tsp of white mulberry matcha into your cup. Step 2: Moisten the powder with about 2 tbs. of hot water and blend it with a spoon until you have a thin paste. Step 3: Add 6 8 ounces of either hot water or hot milk. Step 4: Add sugar as desired.
