INTRODUCTION By Tony Springall Press and Publicity Officer, CAMRA Berkshire South East On behalf of everyone involved I would like to welcome you to the 12th Ascot Racecourse Beer Festival held in association with the Berkshire South East branch of the Campaign for Real Ale (CAMRA). The festival has grown significantly from its first event in 2007 (thanks to the efforts of the late Colin Langham) when 6,500 pints were sold from 56 casks of beer and 7 ciders to now stocking in excess of 200 casks and 40 ciders. The festival would not take place without a huge team effort and whilst it would be insidious to pick and choose names, special mention must be made of Mike Smith who stepped in as Festival Organiser on that very first festival and has carried the torch ever since. This year is a special one for the branch as one of our local breweries, Siren Craft in Finchampstead was awarded the ultimate accolade at this years Great British Beer Festival by having their Broken Dream Breakfast Stout named as the Supreme Champion Beer of Britain. This award is the pinnacle for any brewer and extra special as the brewery was only founded in 2012, a terrific achievement in such a short time. Pride of place at the bar will be Maggs Magnificent Mild from the West Berkshire Brewery in Yattendon who were voted by you as the Beer of the Festival last year. Whilst over at the Bar you will find Crazy Dave s Berkshire Medium, our current festival cider champion. FESTIVAL SPECIALS We are extremely pleased to offer you a number of beers which have been brewed especially for the festival. If you would like to find out more information about joining the Campaign, please come and talk to us at the CAMRA bar or visit camra.org.uk CAMRA Beer Festival Volunteers REAL ALE Real ale is a fresh, natural product brewed using traditional ingredients and left to mature in the cask from which it is served in the pub, through a process called secondary fermentation. It is this process which makes real ale unique amongst beers and develops the wonderful tastes and aromas which processed beers can never provide. It is served without the addition of extraneous carbon dioxide and is also known as cask-conditioned or naturally-conditioned beer. The fundamental distinction between real ale and other beer is that live yeast is present in the container from which it is served, although it settles at the bottom and is not poured into your glass. Real ale is a very diverse product and with more than 1,600 breweries across the UK there is a beer out there to suit everyone s palate. Here is an explanation of the most common beer styles: MILD Mild is one of the most traditional beer styles and is enjoying a revival in today s real ale market. Usually dark brown/black in colour, due to the use of well-roasted malts or barley, it is less hopped than bitters and often has a chocolatey character with nutty and burnt flavours. Milds tend to have an Alcohol by Volume (ABV) content in the 3% to 3.5% range. STANDARD BITTER Bitters are highly-hopped ales. Standard bitters or session bitters fall in the ABV range of 3% to 4% and generally have a lighter colour. BEST BITTER Bitters that are over 4% ABV. The most common style of real ale found today with great variance in colour and taste within the style. STRONG BITTER Bitters that are over 4.6% ABV and best sampled with appreciation rather than to quench a thirst. GOLDEN ALE Pale, Amber, Gold or Straw coloured ales that are hoppy and refreshing. This style has become very popular in recent years as brewers seek to entice lager drinkers and a younger clientele. STOUT/PORTER Porters are dark, hoppy beers made with the addition of roasted barley and tending to have a slight sweetness. This style originated in London around 1730 and by the end of the 18th Century was the most popular beer style in England. Stouts are a stronger version of Porter, originally called Extra Porter or Stout Porter. They are usually dark, heavy and well-hopped with a creamy head and dry grainy taste from the dark roasted barley malt used in the mash. SPECIALITY ALE This beer style captures the flair of the brewer as he has experimented to bring out a new unique flavour and aroma. Beers in this category may include the addition of wheat, oats or other natural products to provide something out of the ordinary to the beer drinker. 5

COPPER/RUBY ALE Beers made with some more highly roasted malts to give a red or copper colour to the beer. Usually not as well-hopped as a bitter and often only available in the autumn. OLD ALE Typically black or dark brown, but can be paler. Old Ales are full bodied with a malty richness. Fermentation characters such as fruity estery flavours should contribute to the flavour profile but considerable variation can occur within the style. Usually between 4.3% and 6% ABV. CASK LAGER Beers brewed with lager malts and topfermented. Refreshing with a soft bitterness from traditional continental lager hops. Usually very pale, with an ABV between 4% and 5%. SOUR BEER Intentionally brewed with a high level of acidity to give a tart or sour taste. Commonly produced with the introduction of a naturally occurring strain of wild yeast during fermentation or by barrel-aging in a wooden cask. An acquired taste and rapidly becoming more fashionable. WHEAT BEER Malted or unmalted wheat added to the grist imparting a clean, subtle flavour. The higher protein content often produces a large, longer lasting head with a hazy appearance. Signature characteristics are the fruit-like esters, aroma and flavour compounds produced during fermentation. If you would like to join the Ascot Racecourse postal and e-mail mailing list for information on forthcoming events, please write your name, address and e-mail below: 6 CIDER AND PERRY Real cider and perry are long- established traditional drinks which are produced naturally from apples (for cider) or pears (for perry) and are neither carbonated nor pasteurised. has undergone a massive revival in recent years although it is unfortunate that many of the most well-known ciders in the UK are cold, fizzy keg products which have been produced artificially rather than naturally. More people are now discovering for themselves how deliciously mellow, aromatic and intoxicating the flavours of naturally produced real cider or perry can be. To make real cider, the apples are washed and checked for rot or mould. The apples are then crushed in a machine called a scratter which chops them up into small pieces called pulp. The pulp is placed in layers on a press. If a traditional screw or hydraulic press is used, the pulp is wrapped in fine mesh cloth parcels called cheeses. The apple juice is then extracted and natural yeasts in the juice start the fermentation. Several months later you have real cider. In order to maintain consistency and suit different palates, the producer will often blend ciders made from different apple varieties. Perry is made in exactly the same way. Beers and ciders may also have used sulphites in the brewing/production process in very small quantities. RESPONSIBLE DRINKING Ascot Racecourse encourages responsible drinking. New controversial Government alcohol guidelines came into effect in January 2016. The alcohol limit for men has been lowered to be the same as for women. The UK s Chief Medical Officer (CMO) guideline for both men and women is that: You are safest not to drink regularly more than 14 units per week. If you do drink as much as 14 units week it is best to spread this evenly across the week. As a guide: n One pint of standard beer (3.5% volume) = 2 units n One pint of regular cider (5% volume) = 2.8 units n One pint of premium beer or lager (5% volume) = 2.8 units n One pint of standard lager (4% volume) = 2.3 units We want you to enjoy yourself, but please drink responsibly and remember: DON T DRINK AND DRIVE. 9

BAR 1 Andwell Ruddy Darter Andwell, Hampshire Copper / Ruby Ale 4.6% Named after a dragon fly found in local rivers. Malted rye creates its characteristic ruby glow. Flavours and aromas derive from a combination of English hops. Billericay Grasshopper (Green-Hopped) Billericay, Essex Golden Ale 4.1% Brewed with freshly harvested green Goldings hops. This annual special uses the fresh hops to give spicy aromas to the final beer, which has intense bitterness. BAR 1 BAR 1 XT Animal - Hop Kitty Long Crendon, Buckinghamshire Golden Ale 3.9% Packed with Citra and Cascade hops. Lightly toasted malts give a hint of sweetness. Big Mango and Lychee zest from a generous Citra third round of dry-hopping. Ascot Brewing Dark Horse Camberley, Surrey Stout / Porter 4.5% Smooth porter with deep chestnut colour delivering subtle hop notes followed by coffee malt flavour then rich chocolate at the finish.
