LETTER FROM MEGAN Participants, Families and Support Staff, It has been a busy year at Pathways to Opportunity (PTO). We currently have 55 individuals enrolled! We have 5 groups per day and have added brand new classes this quarter such as Mini-Golf, Finance Committee and Intro to Comedy & Improv. We continue to seek out new opportunities and are working to improve current options like our art to sell program and retail training. We are thrilled to have had our Choir perform at the Italian Festival on October 28th. We have several collaborations we are currently working on with community partners. I will be providing further updates in the upcoming newsletters regarding these exciting new options. Goodwill s Festival of Trees is around the corner and look forward to our annual performances from our participants on December 1st. We hope you all can come out to this wonderful event between November 27 th through December 2 nd. From all your Pathways to Opportunity staff, we wish you and your family a Happy Thanksgiving! THANKSGIVING DAY GAME By: Kailyn Supplies: CORN TO COPIA Fake corn, empty cornucopia, blindfold How to Play: This game requires two players per team. Give one player on each team a large empty fake cornucopia and blindfold them and have them stand on one side of the room. Have the other player stand about ten feet away and give them a bucket full of plastic or stuffed corns (we used little Indian corns like these ones). To play, the first player must hike (football style) the corn to their teammate who must catch three, blindfolded. Or if that s too tough, catch one. Players can talk to each other to help direct their teammate. Page 6

RECIPE By: Hope Pumpkin Roll INGREDIENTS INSTRUCTIONS CAKE: 1/4 cup powdered sugar (to sprinkle on towel) 3/4 cup all-purpose flour 1/2 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon ground cinnamon 1/2 teaspoon ground cloves 1/4 teaspoon salt 3 large eggs 1 cup granulated sugar 2/3 cup LIBBY'S 100% Pure Pumpkin 1 cup walnuts, chopped (optional) FILLING: 1 pkg. (8 oz.) cream cheese, at room temperature 1 cup powdered sugar, sifted 6 tablespoons butter or margarine, softened 1 teaspoon vanilla extract Powdered sugar (optional for decoration) FOR CAKE: PREHEAT oven to 375 F. Grease 15 x 10-inch jelly-roll pan; line with wax paper. Grease and flour paper. Sprinkle a thin, cotton kitchen towel with powdered sugar. COMBINE flour, baking powder, baking soda, cinnamon, cloves and salt in small bowl. Beat eggs and granulated sugar in large mixer bowl until thick. Beat in pumpkin. Stir in flour mixture. Spread evenly into prepared pan. Sprinkle with nuts. BAKE for 13 to 15 minutes or until top of cake springs back when touched. (If using a dark-colored pan, begin checking for doneness at 11 minutes.) Immediately loosen and turn cake onto prepared towel. Carefully peel off paper. Roll up cake and towel together, starting with narrow end. Cool on wire rack. FOR FILLING: BEAT cream cheese, 1 cup powdered sugar, butter and vanilla extract in small mixer bowl until smooth. Carefully unroll cake. Spread cream cheese mixture over cake. Reroll cake. Wrap in plastic wrap and refrigerate at least one hour. Sprinkle with powdered sugar before serving, if desired. COOKING TIP: Be sure to put enough powdered sugar on the towel when rolling up the cake so it will not stick. Page 11

Recipe By: Kimberly The Great Pumpkin Pie Recipe SUGARED CRANBERRIES 1 cup (120g) fresh cranberries 1 2 cups (400g) granulated sugar 1 cup (240ml) water PUMPKIN PIE Homemade pie crust (full recipe makes 2 crusts: 1 for bottom, 1 for leaf decor) one 15oz can (about 2 cups; 450g) pumpkin puree 2 3 large eggs 1 and 1/4 cups (250g) packed light or dark brown sugar (I prefer dark here) 1 Tablespoon (8g) cornstarch 1/2 teaspoon salt 1 and 1/2 teaspoons ground cinnamon 1/2 teaspoon ground ginger 3 1/4 teaspoon ground or freshly grated nutmeg 3 1/8 teaspoon ground cloves 3 1/8 teaspoon fresh ground pepper 1 cup (240ml) heavy cream 1/4 cup (60ml) milk (I use 1% - any is fine) egg wash: 1 large egg beaten with 1 Tablespoon milk Directions: For the cranberries: Place fresh cranberries in a large bowl; set aside. In a medium saucepan, bring 1 cup of sugar and the water to a boil and whisk until the sugar is dissolved. Remove pan from the heat and allow cooling for 5 minutes. Pour sugar syrup over the cranberries and stir. Let the cranberries sit at room temperature or in the refrigerator for 6 hours or overnight (ideal). You'll notice the sugar syrup is quite thick after this amount of time. Drain the cranberries from the syrup and pour 1 cup of sugar on top. Toss the cranberries, coating them all the way around. Pour the sugared cranberries on a parchment paper or silicone baking mat-lined baking sheet and let them dry for at least 2 hours. Make the pie crust through step 5 according to my directions, tips, and pictures. Or use store-bought. For the pumpkin pie filling: Whisk the pumpkin, 3 eggs, and brown sugar together until combined. Add the cornstarch, salt, cinnamon, ginger, nutmeg, cloves, pepper, cream, and milk. Vigorously whisk until everything is combined. Filling will be a little thick. Preheat oven to 375 F (190 C). Roll out the chilled pie crust: Remove 1 disc of pie dough from the refrigerator. On a lightly floured work surface, roll the dough out into a 12-inch circle. Make sure to turn the dough about a quarter turn after every few rolls. Carefully place the dough into a 9-inch pie dish. Tuck it in with your fingers, making sure it is smooth. With a small and sharp knife, trim the extra overhang of crust and discard. Crimp the edges with your fingers, if desired. Brush edges lightly with egg wash mixture. Using pie weights, pre-bake the crust for 10 minutes. Pour pumpkin pie filling into the warm pre-baked crust. Only fill the crust about 3/4 of the way up. (Use extra to make mini pies with leftover pie dough scraps if you'd like.) Bake the pie until the center is almost set, about 55-60 minutes give or take. A small part of the center will be wobbly - that's ok. After 25 minutes of baking, be sure to cover the edges of the crust with aluminum foil or use a pie crust shield to prevent the edges from getting too brown. Check for doneness at minute 50, and then 55, and then 60, etc. Once done, transfer the pie to a wire rack and allow to cool completely for at least 3 hours. Decorate with sugared cranberries and pie crust leaves. You'll definitely have leftover cranberries - they're tasty for snacking. Serve pie with whipped cream if desired. Cover leftovers tightly and store in the refrigerator for up to 3 days.
