Dear Club Members: Since the last communication from the Member & Manager s Reception in October, there are a few updates. At the last Member & Manager s reception, I recapped several projects and improvements that have either been completed or are scheduled to be done shortly. I would like to take this opportunity to repeat this list, especially for the members who were not present: New Updates The AC system in the Indoor Pool has been replaced and is operational as well as the AC system at the Conservatory men s grille/locker room area. We are happy to share this update. Yacht Harbor Village HOA also has a big project underway of painting the exterior of the condo building. The Fitness center at the main club was painted last month, along with the Aerobics studio. The Terrace at the Conservatory has ended lunch and bar service in the restaurant due to lack of business. Moving forward, the plan is to provide a monthly themed dining event at this location beginning in 2019. The Conservatory Turn will continue to offer breakfast and lunch service on the patio and Men s Grille room. 2

Updates previously communicated: The company (Cat 5) hired by the Phase 1 HOA is preparing to begin the roof replacement toward the end of October. This will be one of several projects the HOA will be undertaking that will greatly improve the exterior of the club. Donna Gialone has accepted the position as the Lead Fitness Instructor for Hammock Beach. Please congratulate Donna on her new role. A more detailed description of Donna s credentials and experience is included in this edition of the Hammock Living newsletter. The culinary staff will be launching new Breakfast, Lunch and Dinner menus in November for the Atlantic Grille, which will coincide with new elements being added, such as placemats, different china and glassware to freshen the experience. The new menus are designed to expedite service and staff is being trained on the Forbes standards which together will improve service, wait times and enhance the overall dining experience. The Resort was invited to the Hotel Collection program from American Express for 2019. This is an exclusive community of hotels and resorts that meet the criteria and expectations of American Express elite card members, i.e. Gold, Platinum and Centurion. The Resort once again ranked among the top 30 resorts in Florida coming in at #16 on the 2018 Conde Nast Traveler Readers Choice Awards. Hammock Beach was previously ranked in 2017 at #28. Congratulations to Donna Gialone in her new position as Lead Fitness Trainer/ Instructor Donna Gialone is a native of Charleston, South Carolina. She received an undergraduate degree in Business Administration from Columbia Southern University in 1996 and a graduate degree in Nutrition Education from Kaplan University in 2013. Donna joined the U.S. Navy in 1980 where she served in various administrative assignments. In 2008 she was the first African American woman to be promoted to the rank of Chief Warrant Officer-5. She retired from the U.S. Navy in 2010 after 30-years of service and started working as a Group Fitness Instructor, Personal Trainer, Spin Instructor and Nutrition Educator at Hammock Beach Resort. She is a Certified Personal Trainer and Group Fitness Instructor through National Academy of Sports Medicine. She specializes in strength, high intensity interval training, and endurance training programs, wellness coaching, and spinning (indoor cycling). Donna is an avid runner and regularly competes in half-marathons throughout the country. She is also a member of Christ Tabernacle Missionary Baptist Church in Jacksonville, FL. Donna specializes in positive body image. Her philosophy is love and embrace your body, it s the most amazing thing you will ever own. 4

Make a full turn behind the ball, and then keep that right shoulder passive so your upper body doesn t spin out. With the club dropping to the inside, you can swing out to the ball, which lets your arms release and square the clubface. 5

Making Strides Against Breast Cancer On October 10 th, the HBLGA (Hammock Beach Ladies Golf Association) organized its 4 th Annual Play for Pink fundraiser on behalf of Making Strides Against Breast Cancer, a local organization affiliated with the American Cancer Society. Once, again this benefit was dedicated to those who have lost the fight and to those still fighting. Last year the HBLGA broke all records raising over $41,000. We anticipate breaking this record. We could not have done this without the generous donations of numerous local businesses that gave in so many ways. Generous donations at the Auction were also provided by many members. Also, the Club and many of its employees donated private lessons, spa treatments, and Private Chef dinners. While some gave another special gift - their time, assisting us with the many challenges that accompany an event like this. One other very important supporter was our Hammock Beach Family, 150 ladies and their guests attended the luncheon in support of this great cause. We could not have done this without them. The HBLGA has again been joined by the MGA in support of this great cause. This year the MGA s Play for Pink event, spearheaded by Rob Effner far exceeded our expectations. The success of this event has grown every year, we cannot thank the men of the MGA enough for their generosity and support. The HBLGA s golf event was highlighted by a Red Mustang donated by Palm Coast Ford for a Hole in One on the 8 th Hole, unfortunately no-one won it, but it was fun trying. The ladies had a great turnout, carts were decorated, and players dressed up in creative outfits, there was Pink everywhere! The final figure raised will be announced at the next Member Manager. 10

Tennis Stroke of the Month 3 rd Wednesday of the Month at 10am Come to the Tennis Center and increase your Tennis skills by learning a new stroke! For a Better Net Game, Master the Continental Grip by Gene Paul Lascano, Director of Tennis One of the most difficult techniques to master in tennis is the use of the continental grip. Mostly associated with serve, the continental grip is also used with volleys, overheads and in some cases, even the bottom hand for players that use a 2-handed backhand. When players volley in particular, they are more accustomed to using their forehand groundstroke grip as they find it more comfortable. One of the biggest issues with doing so however is that the strings of the racquet will face directly forward (photo 1) and most volleys will be hit downward rather than out into the opposing court. Even if a player has managed to put their shot into play, the result is usually a very short volley which can be attacked. Another drawback of not using a continental grip on the volley is that it can make dealing with lower balls a challenge. A primary advantage of using the continental grip is that it can be used for both forehand and backhand volleys. Often times, players that use a forehand groundstroke grip on their volleys have to constantly adjust their grip when switching between forehand and backhand volleys. During a rapid exchange, they simply don t have the time to make the quick changes in grip. To find the proper grip for volleys, you want to familiarize yourself with the bevels or edges of the racquet handle. For a right-handed player, placing your index knuckle around the top-right bevel of your handle will get you into the continental grip (photo 2). By default, the continental grip will force players to lead with the bottom edge of the racquet (photo 3) while volleying which will send the ball much deeper in the court. Players can also generate backspin on their volleys due to the nature of the open racquet face which will help keep balls low on their opponents. The switch to the continental grip may not feel stable at first, but if you re looking to develop your net game, it s important to take the time to become familiar with it. Happy hitting! 11

November Recipe by Chef Kevin Luque, Executive Chef Turducken Main Ingredients 1 cup kosher salt 1 cup brown sugar 1 gallon water 18- to 21-pound turkey, skin intact and boned except for drumsticks Turkey Seasoning, recipe follows Cornbread Stuffing, recipe follows 3- to 4-pound duck, boned 3- to 4-pound chicken, boned Paprika Turkey Seasoning 1/2 cup salt 1/4 cup black pepper 1/4 cup garlic powder 1/8 cup poultry seasoning 1/8 cup dries sage Cornbread: 1 cup self rising cornmeal 1/2 cup self-rising flour 3/4 cup buttermilk 2 eggs 2 tablespoons vegetable oil Cornbread Stuffing: 7 slices white bread, dried in warm oven Cornbread 1 sleeve saltine crackers 2 cups chopped celery 1 large onion, chopped 8 tablespoons butter 5 cups chicken stock 1 teaspoon salt 1/2 teaspoon freshly ground black pepper 1 teaspoon dried sage 1 tablespoon poultry seasoning 14

Directions To make the brine: Mix salt and sugar with the water. Brine is ready when the mixture is completely dissolved. If the water is heated to quicken the process, make sure it is cooled to room temperature before placing meat in. Let the 3 birds sit in brine in the refrigerator overnight. 1. Preheat roaster to 500 degrees F. 2. Lay turkey skin side down on a flat surface. Dust turkey with House Seasoning and add 1/4-inch layer of cornbread dressing. Lay duck skin side down on top of dressing. Dust duck with House Seasoning and add 1/4-inch layer of dressing. Repeat with the chicken. 3. Begin trussing up the turkey at the neck. Insert metal skewer about 1/2-inch from the edge and up through the other side. Run butcher s twine between skin and skewer and tighten to draw both sides together. Continue down to legs. With every other skewer, draw together the duck and chicken skin. Tie together turkey legs to resemble standard turkey. Dust turkey skin with paprika. 4. Roast turducken for 15 minutes. Then turn the roaster down to 225 degrees F to finish, approximately 3 hours. Remove turducken from roaster once the internal temperature in the chicken reaches 155 degrees F. Let rest for at least 20 minutes before carving. 5. Cut across the middle of the breast completely through. Plate thin slices containing turkey, duck and chicken. Turkey Seasoning: 1. Mix ingredients together and store in an airtight container for up to 6 months. Stuffing: 1. Preheat oven to 350 degrees F. 2. To make the cornbread, combine all ingredients and pour into a greased shallow baking dish. Bake for approximately 20 to 25 minutes. Remove from oven and let cool. 3. To make the dressing, crumble dried white bread slices, cornbread and crackers. Mix together and set aside. Saute chopped celery and onion in butter until transparent, approximately 5 to 10 minutes. Pour over corn bread mixture. Add stock, mix well and add salt, pepper, sage, and poultry seasoning. Follow instructions above to stuff birds. 15

Foods to Avoid By Donna M Gialone, Lead Fitness Trainer/Instructor I m a true advocate for clean eating and believe that it is incumbent upon us to be vigilant when choosing what we eat. Take a look at the ingredient list of your high-fiber cereal or snack bar. I can guarantee that you ll probably see an ingredient called cellulose. Cellulose is a code word for wood pulp. It s used by food manufacturer s to increase the volume of their products and add fiber, so it looks like you re getting more bang for the buck when in reality you re left with a mouthful of wood pulp. White Rice Skip the refined grains and go for whole grains. Refined grains put you at a 17% higher risk of diabetes if you consume five or more servings of white rice per week. Gourmet Frozen Vegetables For some an 8-ounce packet of peas in an herbed butter sauce sounds good, but why buy that when you can make your own? Just cook the peas, use a little olive oil and sprinkle on some herbs that you already have on hand. Energy or Protein Bars These calorie-laden bars are usually displayed at the checkout counter because they depend on impulse buyers who grab them, thinking they are more wholesome than a candy bar. Don t be fooled, they have a higher fat and sugar content than a regular candy bar. If you need a boost, grab a piece of fruit, yogurt, or a small handful of nuts. Powered Iced Tea Mixes Powdered and gourmet iced teas are really a rip-off! It s much cheaper to make your own iced tea from real tea bags. Most mixes and prepared drinks are loaded with high fructose corn syrup and other sugars. Bottled Water Bottled water is a bad investment for so many reasons. It s expensive compared to what s coming out of the tap, its cost to the environment is high (it takes a lot of fossil fuel to produce and ship all those bottles), and it s not even better for your health. Smoked and Cured Meat Pass on all cured meats in any form these deli favorites have been linked to cancer, high blood pressure, and migraines. Blueberries Be skeptical when buying cereals, muffins, granola bars, and sauces that contain blueberries. Most blueberry-flavored items on grocery store shelves do not have a single berry, just artificial blueberry flavor. Buy your own berries and add them to your cereal for a real health boost. Multi-Grain Bread This is junk food masquerading in a healthy disguise. Check the ingredient list to make sure whole wheat is the first, and main, ingredient otherwise, you re just getting a few grains mixed into regular white bread. 25

Multi-Purpose Use of the Spinning Studio We have heard your concerns and are pleased to announce we have found a solution to assist with some of our fitness class demand. Beginning in November, we will be utilizing the front room of the Member Lounge at the Lodge to store the spinning bikes. This will provide alternate space in the Spinning Studio to expand the Yoga, Pilates and other class offerings and alleviate some of the compaction we experience during the upcoming Winter months. Staff will roll the bikes back and forth from the Member Lounge to the Spinning Studio to facilitate Spin Classes, when necessary. When this process begins, please enter through the bag drop/circle entry to access the Member Lounge. The card rooms, library will still be available and the computer will be moved to the room adjacent to the library. We will continue to monitor our Fitness Classes and make any adjustments as needed. 26
