WELCOME Welcome to the Tillery Valley 2016/17 Chilled Cycle Brochure This brochure provides details of our chilled cycles. Together with the supplementary products detailed in the appendices, it provides you with a comprehensive range of products from which to plan your patient menus. Our philosophy is to use only the freshest of ingredients from a range of sustainable, traceable and, where possible, local suppliers to consistently deliver you wholesome, tasty meals through our tried and tested recipes. The wide variety of multi-portion and single dishes available have been carefully designed and produced by our team of highly skilled, motivated and experienced catering and technical specialists, ensuring that you always receive high quality, balanced, nourishing meals. All our products have been specially developed to work successfully in an array of regeneration situations helping you deliver reliable results every mealtime. OUR DIETARY CODES BALANCED ICE BC ENERGY DENSE ED Our balanced choice dishes provide lower salt, total fat and added sugar content to help protect and promote health for nutritionally well patients. These dishes are also suitable for patients with diabetes as they meet the healthy eating recommendations given by the Diabetes UK national guidance (2011). The nutritional targets met by the balanced choice dishes are sourced from the British Dietetic Association Nutrition and Hydration Digest: improving outcomes through food and beverage services (2012). Chilled and Frozen Ready Range criteria (Per TVF recommended serving portion) Entrée 15g total fat, 5g saturated fat and 1.5g salt Starch & Vegetables contain no added fat or salt Dessert (served without an accompaniment) 5g total fat, 2g saturated fat, 15g added sugar and 0.4g salt Simply Serve, Vive! & Vive Petite! criteria Main Meal 15g total fat, 5g saturated fat and 1.5g salt Dessert 5g total fat, 2g saturated fat, 15g added sugar and 0.4g salt VEGETARIAN V Items coded as suitable for vegetarians are coded for ovo-lacto vegetarians. They contain no animal or fish flesh or other animal products such as lard, gelatine and animal-based rennet, but may contain egg, milk and cheese products. Please note that Tillery Valley uses vegetarian cheese, made with non-animal rennet. Our energy dense dishes provide more calories; they are designed for nutritionally vulnerable patients. If these dishes are used in conjunction with a nourishing soup and a dessert with an accompaniment (custard, ice cream or cream) they should provide at least 800kcals from the three course meal. This nutritional target for an energy dense meal meets the standards set by the British Dietetic Association Nutrition and Hydration Digest: improving outcomes through food and beverage services (2012). Chilled and Frozen Ready Range criteria Soup 100kcal Entrée 300kcals (with the allowance of a 10% tolerance 270kcals). Average Contribution of Starch & Vegetables ~ 150kcals. OUR DIETARY CODES SOFT S GLUTEN FREE GF Easily eaten and able to be mashed with the back of a fork. Please note that TVF soft coding is not a clinical code. As per the legislation for the labelling of gluten free foods (2012) TVF products are coded Gluten Free if they have a gluten content of <20ppm. We provide a large selection of products that are in line with the NPSA Dysphagia Diet Food Texture Descriptors (2012) if you require complementary solutions for dysphagic patients and residents. We provide a range of dishes in the four different consistencies as per the Descriptors: Texture B = Thin Puree Texture C = Thick Puree Texture D = Pre-mashed Texture E = Fork mashable Changes have been made to dishes based upon customer feedback. These are highlighted on the cycles via the following icons: IMPROVED RECIPE We have made improvements to our existing product recipes increasing their suitability for specific dietary requirements. NEW PRODUCT Based on customer suggestions a range of new products have been developed for 2016/2017. NEW NAME We have updated the names for some of our dishes to better reflect the nature of the product helping customers to make an informed choice. SUSTAINABLE The following TVF products contain fish from demonstrably sustainable sources. NEW PACK SIZE New pack sizes for certain desserts have been introduced with the aim to improve product performance and compatibility with accompaniments. chilledcycle 5

CHILLED PRODUCTION CYCLES This information sheet is to help guide you through how the Tillery Valley two week chilled cycle system works. The cycle runs over 14 menu days, using 10 production days. Each cycle links to specific menu days as shown at the top right of the cycle pages. For reference, the table below provides a summary of how the 2 week cycle relates to your menu planning where M = Monday, T = Tuesday etc and the numbers indicate the production cycle.
